Kitchen Tips: Ripening Avocados

We’re having tacos tonight, complete with delicious guacamole.  But my avocados aren’t quite ready.  Close, but not quite.  Which brings us to today’s Kitchen Tip! How to speed up (and stop) the avocado ripening process!

First, tips for SPEEDING UP ripening:

  • Put your avocados in a brown paper bag.  The gases that ripen the avocado get stuck in the bag and help speed things up.  I clip the bag closed with a Chip Clip to “seal” it.
  • Store your avocados near bananas.  Bananas also let off those same gases that ripen the avocado, so they can help things along.
  • Today’s technique? Put the avocados in a brown paper bag WITH bananas.  I’m getting desperate.  I sure hope it works!  I’ll let you know tonight…

What if your avocados are perfectly ripe but you don’t need them for a few more days? Here’s how to STOP ripening.

  • Place avocados in the fridge.  That’s it.  Easy Peasy.
  • In case you are wondering, putting avocados in the fridge does not hurt or change them (unlike tomatoes, which should NEVER go in the fridge).

    I saw a sign in the grocery store once about how if you refrigerate tomatoes, the sugars convert or get affected or something scientific like that, which changes the texture of the tomatoes. it had a really good explanation that I should have written down! anyway, I’ve heard the same advice in several other places since then and have stopped refrigerating them…

    UNLESS I have some chopped/sliced tomatoes leftover from a meal (i.e. taco night!). once they’re cut you have to refrigerate or they’ll go bad. but the texture and taste really is not as good, so I try to cut up just what I need for any given meal.

  3. I hate it when the stores don’t have ripe avocados! Luckily we can speed up the process!

  4. Sweet tip. I hate how you can buy one ripe avocado from Safeway for $3, or a bag of four not-ripe avocados for $3.50. I usually go for the not-ripe ones, and the wait is always agonizing.

    Never knew that tomatoes shouldn’t be refrigerated. I guess I should go get them out!!

  5. I heard that putting avocados in a paper bag with apples will also ripen them faster… any truth to that?

    No banannas in the fridge, either. But then, you already knew that.

    The true way to stop an avocado from ripening is by wrapping it in tin foil and putting in the fridge. Most times it will last up to a month before the taste diminishes.
