Sweet Chex Mix

Ingredients
- - 1 small box Rice Chex
- - 2 cups shredded coconut
- - 1 cup sliced almonds
- - 1 cup light corn syrup
- - 1 cup sugar
- - 1½ cup butter
- - Dash salt
- - ½ teaspoon baking soda
- - 1 teaspoon vanilla
Instructions
- Mix together the rice chex, coconut, and almonds in a very large bowl. Set aside.
- Cook sugar, light corn syrup, salt and butter in a large microwave-safe bowl for 5 minutes on high power.
- Remove from the microwave, stir, then return to microwave and cook for 2 more minutes on high.
- Remove from microwave and stir in vanilla and baking soda. (Work carefully - the mixture will be HOT.)
- Pour mixture over dry ingredients and stir until well and evenly coated.

I love your comment, brenda! all of our party guests yesterday kept eating it uncontrollably and then feeling sick to their stomachs (thankfully they claimed that the pizza helped them feel better. hahaha) anyway, it is DANGEROUS stuff. glad you found it as equally irresistible as I do! 🙂
I am obsessed!!! With this stuff. My sister makes a hugenormous batch of it for Halloween every year. Pretty sure she got the recipe from you! Anyways, I eat the first batch every year and than she has to make another one. The one thing I truly cannot stop eating….ever
I made this too for Super Bowl Sunday, but the recipe I got from my friend was a little different. There was no salt or baking soda, and there was a box of Golden Grahams in the mix too! I think I gained 5 pounds just making it before I even ate any!
I don’t have access to karo – do you think it’ll work equally well with honey?

1 Cup Light Corn Syrup: choose one of the following
– 1 cup (240 ml) dark corn syrup
– 1 cup(240 ml) treacle
– 1 cup (240 ml) liquid glucose
– 1 cup (240 ml) honey
– 1 cup (200 grams) granulated white sugar (increase the liquid in the recipe by 1/4 cup (60 ml))

How far in advance can you make this? I’m looking at having a party on a Friday night, but will have to get everything ready on the Monday before! I thought this would be a perfect snack for the girls!
well…… it will probably last, I think it’s yummier closer to when you make it, just because the cereal is still a bit crispier, but that said, we usually eat this for days after we make it. 🙂 I would just seal it in some ziploc bags to keep it from getting stale and you should be good to go. 🙂

I was so excited when I found this recipe. I made it but I’m not sure it turned out right. Is it suppose to stay Gooey? And when I added the green M & M’s they melted on the rest of the mixture or they broke apart.
I was a little disappointed 🙁
sorry you were disappointed. I suppose it stays pretty gooey, but I think still delicious and always has been a big hit with people when I make it. I could see how the m&ms might melt- that sugar is SO hot when it comes out of the microwave. anyway, sorry it didn’t work out so well for you.
if you don’t like the gooeyness, maybe only pour 2/3 of the sugar mixture over the cereal mixture instead of all of it. that would be my suggestion.

After mixing I broiled mine on each side for about a minute and let cool in the fridge. No more gooey mix!! :]
Hey! Making this for a party, sunday, but wondering about how many cups is a small box.
We just bought the 12 (almost 13) oz box. I think thats the large size, but not sure.

I think that’s the size I always use – I probably should modify that in the recipe (that’s how it was originally written when I got it from a friend) – I’m sure you got the amount you need.
