It’s turned into a stormy weekend. I think some hot chocolate is in order.
This coming week is going to be FUN. My in-laws are coming to town…and, lucky for me, that is a great thing! I’m planning a menu, but I doubt will be sticking to it.

I’m seriously menu planning challenged, so I can offer nothing more than the typical spaghetti and hamburgers. Sigh…your menu looks great, though! I’d like to try both the lasagna and quesadillas you have listed. DH refuses to eat soup (sigh.), so I’ll have to find something else to try.
I have no side dish ideas this week …

Ok, got the menu together finally.
Mon- Pesto or Mac n’ Cheese then go grocery shopping
Tue- Zucchini potato Frittata
Wed- Baked Tilapia and salad
Thu- Quinoa Chard Pilaf
Fri- Eggplant Cannelloni
Sat- Pumpkin Gnocchi
Sun- Turkey, 60 sec. brussels sprouts, whole-wheat rolls, and Pumpkin pie! Oh ya!
I froze a lot of pumpkin in the fall and still haven’t used it…

I’m travelling for work for a part of this week, so there isn’t much of a meal plan… And I’m trying really hard to not think about the fact that my family will be eating hotdogs, happy meals, or dino nuggets while I’m away.
