Week 167 Menu…and Happy Easter!

This morning I asked Anna (2) if she’d like some cereal, to which she replied, “No, thank you. Not today.” Could this be the reason?

This week I’m going to try to utilize the leftover ham I am certain we will have at the end of today.

MONDAY:
Lentil Soup

TUESDAY:
– Western Omelettes (ham, cheese, bell peppers, onions)

WEDNESDAY:
Stuffed Shells

THURSDAY:
– Leftovers

FRIDAY:
– Breakfast for dinner

SATURDAY:
– Eat out

SUNDAY:
Lime & Honey Glazed Salmon

  1. We are lucky enough to have Grandma and Grandpa in from Cleveland visiting us for Easter! The weather is cooperating so we’re having a great time!

    Sunday: Surf ‘n Turf, Popovers, Baked Potatoes, & Fruit Salad
    Monday: Homemade egg rolls and fried rice
    Tuesday: Cantina Laredo with the inlaws
    Wednesday: Pulled Pork (ala Crock Pot)
    Thursday: Spinach pizza with homemade crust
    Friday: Leftovers
    Saturday: Out!

    Monday: Brisket leftovers
    Tuesday: Brisket leftovers (there are only two of us)
    Wednesday: Sticky chicken/rice side/mixed veggies
    Thursday: Blueberry pancakes/sausage
    Friday: Lemon butter chicken breast/garlic butter orzo/green beans
    Saturday: Blueberry pancakes/sausage

  5. Hehehe, our 1 year old did the same thing. Never seen the baby so hyper.

    Hope you had a great Easter.

    My menu is pretty similar because grandma is in town I didn’t get to make most of it last week.

    Mon- Curry Rice
    Tues – Lasagne
    Wed – Ramen(those hard boiled eggs taste great in Japanese ramen)
    Thu – TAco soup or Taco rice
    Fri – use whatever is left in the fridge
    Sat – TV party for the weekend…7 layer dip! oh and Grandma comes back from touring the country…woo hoo!

    W: Turkey tacos
    Th: Fish with quinoa and salad

    Su: ?

    Tues.- Book Club Night (hub and kiddo on their own)
    Wed.- Turkey Sandwiches and Tossed Salad
    Thurs.- Steak (on the grill, 1st time this year!), macaroni salad, sliced cucumbers
    Fri.- Fend For Yourself
    Sat.- Out?

    Tuesday: I’ll be gone until dinnertime so we’re having Hamburger Helper since the hubby can make that!
    Wednesday: Pork Steaks, roasted potatoes, biscuits, fruit
    Thursday: Biscuits n Gravy, eggs
    Friday: Pulled Chicken Sandwiches, homemade fries
    Saturday: Leftovers!

    We probably won’t get to all of this but I have a lot of it in the freezer so I just pull out what we need.

    Friday: Date Night – eat out
    Saturday : Leftovers if we have any, OR Asparagus, Lemon, and Goat Cheese Pasta

    Crazy week, as the rugrat and I are headed out of town.

    Monday- Risotto with chicken and asparagus
    Tuesday- SW Chicken Salad (check out my blog for recipe later in the week)
    Wednesday- Out of town
    Thursday- Still gone
    Friday- Chicken strips, baked potato, carrots and peppers
    Saturday- Speg. with salad and garlic bread
    Sunday- Steak, grilled asparagus, roasted red skinned potatoes with red peppers and onions

    Our weather has hit the 90’s already, so we’re planning a pretty summery menu this week.

    My favorites to eat with ham (besides cheese) are either asparagus or broccoli. Here is one simple casserole to help with ham leftovers:
    Ham ‘n Broccoli Bake
    * 1 1/2 cups chopped fresh broccoli
    * 4 slices cooked ham
    * 1/2 cup shredded cheddar cheese
    * 2 cups basic white sauce
    * 2 teaspoons dry mustard
    * 1/2 teaspoon salt
    * dash pepper
    * 1 tablespoon minced onion
    White Sauce
    * 2 tablespoons butter
    * 2 tablespoons flour
    * 1 cup milk
    * salt
    * white or black pepper
    Cook broccoli until almost tender; place in buttered casserole. Top with sliced ham. Make white sauce and add cheese to thickened sauce; cook over low heat until cheese has melted. Add remaining ingredients to the sauce; pour over ham and broccoli. Bake casserole at 400° for 20 to 25 minutes.
    Serves 4.

    Monday: Brown Rice & Lentil Casserole + Tomato & Avocado Salad (tomato wedges, diced avocado, diced red onion, fresh lime juice, olive oil, salt) + Fresh Fruit
    Tuesday: Pepperoni Pasta Bake + Steamed Vegetables + Fresh Fruit
    Wednesday: Slow Cooker Apricot Chicken + Brown Rice + Spinach Strawberry Salad (all inspired your photo of Easy Apricot Chicken — which I posted and attributed to your site…hope that’s okay)
    Thursday: Omelets + OJ + Toast + Fresh Fruit
