Week 168 Menu

Pistachios are officially on my list of ‘beautiful foods I love looking at when I cook’ (I’m an artist, I can’t help but be a little obsessed with what food looks like). Blueberries still take the top spot, but pistachios aren’t far behind.  Yesterday when I was cracking a bunch for a recipe, it was the first time I really looked at them. Of course there’s that vibrant green color I’ve always liked, but what I hadn’t really noticed before was the contrasting purple in the skins. I love it.

On to the menu. I have a couple duplicates from last week. We were able to draw out our ham leftovers longer than I anticipated (I even froze lentil soup AND ham in the end!).

MONDAY:
Stuffed Shells

TUESDAY:
– Homemade Veggie Burgers (new recipe for me that my mother-in-law shared with me…I can’t wait to try them, she says they’re irresistible! Rest assured I will share them with you…)

WEDNESDAY:
– Butternut Squash soup

THURSDAY:
– Leftovers

FRIDAY:
– Breakfast for dinner

SATURDAY:
– Eat out

SUNDAY:
Lime & Honey Glazed Salmon

    -Vegetable (not sure what combo yet) tarts with a side mixed greens salad

    -leftovers when we need to fill in the days

  6. With family in town last week, we didn’t do so well with following the menu. So, there are a few repeats this week!

    Sunday: Sausage paella & Oven Fries
    Monday: Pulled Pork (ala Crock Pot)
    Tuesday: Leftovers
    Wednesday: Homemade Ravioli from the Ravioli Party!
    Thursday: Chinese Beef Broccoli
    Friday: Leftovers
    Saturday: Out!

    Friday – either Tacos or take out pizza

    Hi Jane, I’ve been traveling like a fiend for work and really missing putting a menu on your site! I won’t be around this week either but in the spirit … and for nostalgia …. here is what (I hope) my family will be doing.

    Tues-Pigs-n-blankets, more green beans or carrots
    Weds-Pasta or pizza from freezer, salad
    Thurs- I’m home! Might be leftovers until I get my bearings (returning from Brussels)

    Okay, I’ve been following you for well over a year, but have never had my act together enough to post a menu. This week I get back to being organized!
    Monday-Chicken, Pesto, Feta, Mozarella Pizza (Homemade)w/ Mixed green salad (w/apples & apple balsamic vinaigrette)
    Tuesday-Chicken & snowpea stir-fry
    Weds- Bruschetta on fresh toasted baguette(my no meat attempt)
    Thurs-Homemade Fruit Crepes (rasp,strawb,blueb) w/Nutella!!
    Friday-Curry chicken (w fruit)& rice, w/ edamame
    Saturday-Baked Monterey chicken & potatoes

    Hiya. This is my first week of planned meals. Thank you Jane (and everyone who posts their menus), for the inspiration and motivation!

    Sunday – tamale pie & salad
    Monday – 16 bean soup (crock pot), garlic bread & salad
    Tuesday – grilled cheese & tomato roasted red pepper soup
    Wednesday – spicy sweet chicken thighs, quinoa, broccoli
    Thursday – leftovers
    Friday – tortellini, salad, roasted butternut squash

    Mon: Lemon chicken (Like what you’d get at an Asian restaurant) with brown rice and steamed carrots and cauliflower.
    Tues: Crockpot day, I’ll be checking out a slowcooker blog to decide what to make. I also have a roast to toss in as a back up plan.
    Wed: Hamburger or Beef Stroganoff with steamed broccoli
    Thurs: Taco night
    Fri: Leftovers, or homemade pizza night (if there’s no leftovers left after eating them for lunch).
    Sat: Eating out with friends
    Sun: Roasted whole chicken, undecided on the side dishes.

    To get more fruit in our diet I’ve been slicing fruit, usually apples or pears and putting it out as a side dish with dinner.

    Wednesday – Ground turkey tacos

    Friday – Steamed mussels from the freezer, poached salmon, salad, potato salad
    Saturday – pizza and a salad
    Sunday – Fritata with fresh vegetables

    T: Sweet & Sour Chicken Stirfry, brown rice
    Moving the next 2 days, don’t know how long it will take to find the kitchen. No sinks and countertops until sometime on Thursday. Maybe able to have leftovers in the microwave. At least the dogs eating habits won’t change.

    I’m not a fan of nuts, but pistachios are somehow okay with my mouth. Pine nuts and pistachios are the only nuts I’ll consume. Haha. I haven’t started planning a menu weekly, I really should though. Everyone says it will make life easier.
