Week 199 Menu

This week we are going to talk Thanksgiving! That’s right, I’m actually thinking about it more than a week in advance! There are several recipes that I make each year that I’ve never blogged about or photographed, so my goal this week is to make a few of those recipes ahead of time to photograph for you and then stick in the freezer for the big day!

The Italian sausage explosion last week was hilarious! Six of us had some sort of Italian sausage something on our menus…all before we saw each other’s menus. I wonder what this week’s magic, random ingredient will be…

MONDAY:
– Leftovers – we’ve got a bunch we need to use up!

TUESDAY:
– Eating out Indian food with our friends

WEDNESDAY:
Cream of Mushroom Soup (Cate wants me to type in right now, “Cate likes mushrooms, so she will like this!” Cute girl.)

THURSDAY:
Stuffed Shells
– Salad and bread

FRIDAY:
– Paninis of some sort

SATURDAY:
– Leftovers

SUNDAY:
Pumpkin Pancakes

    After a failed attempt at pumpkin fudge this morning, I now have lots of Libby’s canned pumpkin to use in my cooking this week. So it’s pumpkin soup, risotto, muffins and bread for me!

    Your pumpkin pancakes do look good. I use a Martha Stewart recipe that works well too. LOVE them!!
    Friday– Mexican Chicken Lasagna
    Saturday– leftovers
    Sunday– Pork chops, sweet potatoes and rice
    Monday– Poached Tilapia and mac&cheese
    Tuesday– Meatloaf and mashed potatoes
    Wednesday– Chicken Alfredo
    Thursday– Breakfast, maybe Pumpkin Pancakes!

    Ok, this is too funny…I was part of that italian sausage explosion last week. Guess what? We are having pumpkin pancakes tonight! Looks like pumpkin is the front runner.
    Though the frigid weather is prompting 2 soup nights at our house.

    Mon: Baked Potato soup
    Tues: Sloppy Joes, fries, carrots
    Wed: Leftovers
    Thurs: Broccoli Cheese Soup in a bread bowl, salad

    sat: stuffed flank steak and roasted potatoes — just learned this recipe at a stonewall kitchen cooking class. can’t wait to test it out on the in-laws!

    M: Spaghetti & meatballs, salad & some kind of garlic bread
    T: Son’s 16th birthday: Flank steak with PW’s blue cheese sauce, garlic mashed potatoes, corn & homemade chocolate mousse birthday cake. I’m gonna need extra time on treadmill today!
    W: On the road to FLA for Thanksgiving break. Don’t know what I am cooking down there, yet.

    Monday – Chili and chive biscuits
    Tuesday – Chicken and Cheesy Rice (Emeril)
    Wednesday – Stuffed Shells
    Thursdy – Leftovers
    Friday – Leftovers or out(depending on what is left in the house πŸ™‚
    Saturday – We are all heading out of town for the next week!!

    I still can’t believe it’s already that time of year again!

    Sun: Parmesean crusted chicken breasts with kale and rustic bread with pesto
    Mon: Tilapia with a cherry reduction sauce, rice and salad
    Tue: Burgers with sweet potato fries
    Wed: Grilled skirt steak with crispy garlic potatos and salad
    Thr: Chicken milanese and arugula salad with almonds and grapes (and a midnight showing of Harry Potter!)
    Fri: Roasted cauliflower pasta
    Sat: Shredded chicken tostadas

  10. We aren’t having pumpkin pancakes this week, but we have them several times a month! So excited to stock up on pumpkin puree!

    Tuesday: Minestrone Soup from the freezer (Pioneer Woman)
    Wednesday: Zucchini Boats
    Thursday: Veggie quesadillas
    Friday: Pulled pork from freezer
    Saturday: Out.

    I am loving all of the other people I see enjoying the pumpkin pancakes! I started making them a few months ago and have fallen in LOVE with them! I have started adding chocolate chips to them as an added treat and my three-year-old son just cannot get enough of them which means I am making them just about every week now! Plus the leftovers make for a super easy breakfast the next morning. As for Thanksgiving, I always volunteer to do the sweet potatoes. I am yet to make the same recipe twice and I think this year I will be going with a recipe I found in the Food Network Magazine.

    Dinner this week:

    Monday: leftovers (quiche, pizza, it will look like a buffet)
    Tuesday: Pizza with friends
    Wednesday: Lasagna from the freezer, broccoli and bread
    Thursday: Slow Cooker Chili
    Friday: Pumpkin Chocolate Chip Waffles and fruit

    Saturday: I’m at my friend Sara’s holiday cookie baking party. Chili in the crockpot for my boys!

    I must say pumpkin pancakes do look yummy. I think I will squeeze that in as a menu item this week.

    Monday- pasta dish with sundried tomatoes, artichoke hearts, edamame beans with shaved paremsan chesse and cesar salad
    Tuesday- shrimp and rice with veggies
    Wednesday- chicken and couscous along with some broccoli
    Thursday- Chicken Noodle soup
    Friday- out with friends
    Saturday- out with family
    Sunday- ribs in the crockpot and sweet potato fries-

    Sunday evening would be great to have pumpkin pancakes!

    Thursday: Omelets and roasted garlic potatoes

    Friday: Roast Chicken, and Buckwheat Waldorf Stuffing

    Saturday: Chicken Salad Sandwiches

    I did not post last week but also had sausage – a Rachael Ray specialty – Italian sausage with chorizo and veggies in a broth over pasta – oh so yummy!!!!
    Sun – take out – craved a swiss burger and fries.
    Mon. Chicken and potato
    Tues. – meatball and tortellini soup and crusty bread
    Wed. – Chicken parm in the crock pot
    Thurs – Turkey breast from the grocery already cooked
    Fri – out or steak
    Sat – definitely out

    I was part of the italian sausage explosion last week so thinking I should adjust and make something ‘pumpkin’ so I keep up – but here’s the plan:
    Monday – chicken pot pie
    Tuesday – leftover pulled pork bbq from weekend, cole slaw
    Wednesday- leftover chicken pot pie (lots of evening activities this week!)
    Thursday – broiled tilapia with lemon pepper, cous cous & steamed broccoli
    Friday – pizza with friends
    Saturday – either lentil or pasta a fagioli soup
    Sunday – maybe apricot chicken?

    Monday: going out for mom’s birthday
    Tuesday: turkey paninis and candied yams (practice for next Thursday!)
    Wednesday: tacos, quesadillas, and Mexicali salad with jicama (kind of a Mexican smorgasbord because we’re having a meeting at our house)
    Thursday: spaghetti with veggies and a big salad to get rid of some CSA greens and veggies – might try to make some Bob Evans rolls I found on copycat. Unhealthy but taste SO GOOD
    Friday: burgers and fries
    Saturday: eat it and get it out of the fridge day (make room for Thanksgiving!)
    Sunday: Pizza?

    I don’t do leftovers much because whatever we don’t eat, I usually take to work for lunch. Plus my husband just does not eat leftovers. Spoiled πŸ™‚
