Week 239 Menu

Summer is officially over for the Maynard family. I can’t believe our little Cate starts 1st grade tomorrow!

To celebrate the end of summer, we spent yesterday in Santa Cruz, complete with some wetsuit shopping (Nate walked away happy!) and a few hours at the beach (the girls walked away happy!). It was a perfectly fun day spent with some great friends…despite the cloudy, sometimes drizzly, constantly chilly, super windy, completely un-summery weather. Gotta love the Northern California beach scene! πŸ˜‰

    These menus all look so impressive. Here are my ideas for the week, focusing on using up stuff in the fridge/pantry.
    In no particular order:

    -thai salmon with sweet potatoes or butternut squash and something green (sugar snap peas?) x 2
    -black bean burritos with butternut squash and/or chicken x 2
    -spinach and feta quiche (finally perfected the recipe)
    -Sunday is always homemade pizza night
    -out or maybe crepes for fri/sat

    Back from vacation and boy does it feel good to be back in our kitchen! Though, this talk about summer ending is crazy. I could have sworn it just started!

    Saturday – Slow Cooker Coconut Chicken Curry with half chicken and half eggplant
    Sunday – potluck where we’re bringing bruschetta
    Monday – Macaroni and cheese with roasted broccoli
    Tuesday – corn on the cob and caprese quesadillas
    Wednesday – Pioneer Woman’s eggplant and tomato pizza

    2ndly: It’s 100 degrees in CA, so we try to keep it cool.

    It is almost back to school for this family. I have decided that this year I WILL NOT grocery shop on the weekends. This means better planning and salads with chicken (something easy) on Monday nights when I do go to the store. But that will be next week This week:

    Monday – date night with hubby
    Tuesday – lots of leftovers from Sun.

    A strange week ahead. Combination of odd work hours, my husband’s friend in town (staying with us), and vacation. Strange week calls for an easy menu. Pre-made carrot ginger soup, ginger fried rice, and broiled chicken breasts marinated in sofrito sauce.

    Yum! Great plans this week to check out – I did an italian bread salad yesterday. Found an Ina Garten recipe online that uses lots of different veggies – delicious!! Here goes:
    Sat – Costco roasted chicken, panzanella salad, & grapes; nectarine & blackberry crisp for dessert!
    Sun – Homemade pizza, spinach salad, & cut up veggies; zucchini choc chip cookies for after dinner treat!
    Mon – Mushroom spinach quiche, green salad, cut up fruit
    Tues – Summer Harvest veggie soup in crockpot using homemade broth made from costco chicken!
    Wed – haven’t figured it out yet; might do picnic dinner at the pool
    Thurs – Taco night
    Fri – dinner at Nana’s

    So I am trying something new this week that will hopefully keep me on the meal plan track and squash those after work I don’t feel like cooking blues. Yesterday I did all the prep and pre-cooking for the week. So here’s what were are having.

    Sunday: Italian sausage and potato roast, greenbeans. This was okay. I think if I make it again, I’ll use smoked turkey sausage instead of the Italian sausage. The Italian sausage was just too greasy, and honestly, I don’t really like the taste of it.

    Monday: White chicken chili (in the fridge), cornbread, salad (making a huge one to last for the week)

    Tuesday: Italian veggie pie (filling prepped and in the fridge), roasted brussel sprouts, salad

    Wednesday: Herb potato frittata, blueberry muffins, turkey sausage

    Thursday: leftovers

    Friday: leftovers (providing taco bar for a work lunch), something easy, or out

    Saturday: leftovers, something easy, or out

  47. This time of year, it’s still so hot that no one in this house (me) wants to cook or eat anything. I read through the comments for meal ideas, but the only thing I really want to eat is ice cream. Sooo, I decided that a blueberry swirl cheesecake would suffice as a dairy AND fruit serving – at least for one meal. You can click here for the recipe!

    I guess I have to make some other stuff too, so…
    Mon – Cheesecake
    Tues – out with friends
    Wed – Burgers (deciding what type)
    Thurs – Meatballs (with extra ground beef from burger)
