Summer is officially over for the Maynard family. I can’t believe our little Cate starts 1st grade tomorrow!
To celebrate the end of summer, we spent yesterday in Santa Cruz, complete with some wetsuit shopping (Nate walked away happy!) and a few hours at the beach (the girls walked away happy!). It was a perfectly fun day spent with some great friends…despite the cloudy, sometimes drizzly, constantly chilly, super windy, completely un-summery weather. Gotta love the Northern California beach scene! 😉

These menus all look so impressive. Here are my ideas for the week, focusing on using up stuff in the fridge/pantry.
In no particular order:
-thai salmon with sweet potatoes or butternut squash and something green (sugar snap peas?) x 2
-black bean burritos with butternut squash and/or chicken x 2
-spinach and feta quiche (finally perfected the recipe)
-Sunday is always homemade pizza night
-out or maybe crepes for fri/sat

Terribly busy week this week, so I tried to keep the meal plan fairly simple: Marinated Chicken (didn’t do it last week), Eggs and Grits (didn’t do this one last week either, oops!), Potato Cheese Soup, Chicken Salad or Quesadillas (depends on mood), Pizza (maybe frozen, maybe pickup), Hamburger Noodles
A strange week ahead. Combination of odd work hours, my husband’s friend in town (staying with us), and vacation. Strange week calls for an easy menu. Pre-made carrot ginger soup, ginger fried rice, and broiled chicken breasts marinated in sofrito sauce.

Yum! Great plans this week to check out – I did an italian bread salad yesterday. Found an Ina Garten recipe online that uses lots of different veggies – delicious!! Here goes:

Sun – Homemade pizza, spinach salad, & cut up veggies; zucchini choc chip cookies for after dinner treat!

So I am trying something new this week that will hopefully keep me on the meal plan track and squash those after work I don’t feel like cooking blues. Yesterday I did all the prep and pre-cooking for the week. So here’s what were are having.
Sunday: Italian sausage and potato roast, greenbeans. This was okay. I think if I make it again, I’ll use smoked turkey sausage instead of the Italian sausage. The Italian sausage was just too greasy, and honestly, I don’t really like the taste of it.

This time of year, it’s still so hot that no one in this house (me) wants to cook or eat anything. I read through the comments for meal ideas, but the only thing I really want to eat is ice cream.
