Week 261 Menu

This morning, French Toast. Mmmmmmm.

I am simply stunned at how fast the weeks go by. How am I planning another menu already? Here we go!

Cream of Mushroom Soup (didn’t get to it last week)

– Island Pork with Sticky Rice (this recipe is amazing…can’t wait to share it with you!)
– Veggies

Stuffed Winter Squash

– Leftovers

– Stir Fry
– Potstickers

– Eat out

– Tacos

    Tuesday – smoked mozzarella and chicken pasta

    Wednesday – gumbo & rice

    Thursday – fishcakes (from the Donal Skehan website – so divine)

    Friday – honey balsamic chicken drumsticks

    Weekend – no plan

    I am doing so badly on my menu lately. We have some possible major upheaval stuff going on and I keep forgetting ingredients and or changing my mond on what to make so this week looks a whole lot like last week!
    Friday– We finally had the Kobayashi Maru with pork So good!!!
    Saturday– We had Raley Gravy
    Sunday–Hubby will be gone so kids and I will probably have leftovers or hot dogs
    Monday– Chicken & Gnocchi Soup that has been planned FOREVER!
    Tuesday– Salmon and Mac
    Wednesday– Beef Taco Skillet
    Thursday– Chicken Ranch Tacos But since that would mean two Mexican style dishes in a row I foresee a change in the line-up…..sigh

  3. SUNDAY ~ Sweet Chili Salmon, steamed rice, green beans

    MONDAY ~ cheeseburger meatloaf, roasted zucchini and red onion

    TUESDAY ~ tuna shells (yes, we do eat this almost every week)

    WEDNESDAY- Matt has a business dinner, the kids and I will probably do pot stickers and quinoa and broccoli

    THURSDAY- crockpot goulash ( make ahead freezer meal!)

    FRIDAY-crock pot French dip, sweet potato fries

    SATURDAY- Matt’s grilled honey mustard chicken, green beans, potatoes

    SUNDAY- Dinner play-date at a friends home

    I’m a newbie! My first meal plan:

    Monday – meatball subs and roasted cauliflower

    Tuesday – three cheese chicken alfredo bake, broccoli

    Wednesday – blackened cod, rice, broccoli

    Thursday – black bean burritos

    Friday – eat out/take-out

    Saturday – pistachio crusted salmon, roasted potatoes, glazed carrots

    Sunday – butternut squash soup, multigrain garlic bread

  5. SUN- Beef Stew (stewing as we speak) and smoothies
    MON- Ravioli
    WED- Fancy Pizza Night- Caramelized onion & goat cheese pizza, and Cal-Italia pizza (which has fig & blue cheese)
    THURS- Quesadillas and fruit salad (or more leftovers)
    FRI- We’ll be testing a Valentine’s Day menu with friends.. Not sure what it’ll be yet!
    SAT- Making pasta from scratch with friends

    Tuesday: Chicken and pesto rice with peas
    Wednesday: Dinner out with church group
    Thursday: Italian Beef in the slow cooker with roasted corn
    Friday: My parents are in town to celebrate my mom’s and my birthday
    Saturday: Date night while parents are here!

    This weekend I’ve been trying to make as many freezer meals as I can before baby… Even though that’s still 3 months away, I’ve been trying to make at least small things that can be frozen and doubling all of our casseroles for the week…
    Sunday: Spicy Chicken Sausage, Mushroom and Goat Cheese Lasagna (doubling)
    Monday: Weekend leftovers
    Tuesday: Portobello Burgers, Squash and Veggies
    Wednesday: Flank Steak, Veggies
    Thursday: Deconstructed cabbage casserole (x2)
    Friday: Salmon, Lentils
    Saturday: Dinner with Friends

      you are SO SMART to do that…I didn’t do any of that and the only reason we had any meals in the freezer was thanks to other people who helped us out and I can’t tell you how GRATEFUL I’ve been to have those dinners in the freezer the last few months since owen was born. it’s been WONDERFUL. keep it up, you’ll be glad you did it

    I can’t wait see your pork recipe! I am always looking for new ideas with pork. My roast didn’t unfreeze so I am switching Sun with Mon.

    Sunday: Giada’s salmon cakes, garlic and herb tortellini and roasted white asparagus
    Monday: Grilled soy-garlic pork chops & chicken sausages, grilled zucchini and roasted red skins
    Tuesday: Turkey fried rice
    Wednesday: Leftovers or dinner out
    Thursday: Spinach wagon-wheel pasta with goat cheese and edamame
    Friday: Freezer food (spinach-artichoke pasta, homemade pizza rolls) for some/dinner at the high school basketball game for others. I predict after-game snacks too!
    Saturday: Giada’s meatball stew

    We love one pot meals in our house ”” we’ll be doing more of these and crockpot meals now that my daughter is on the seventh grade basketball team and games are on Tuesdays and Thursdays.

    Monday – Lasagna with Garlic bread (rolled over from last weeks menu)
    Tuesday – Leftovers (if not, then Breakfast – because we didn’t have it last week, thanks to plenty of leftovers)

    Thursday – Leftovers or fend for yourself
    Friday – Pizza
    Saturday – Field peas with Hashbrown Casserole

    Tues: Pork (not sure how), Rice, Veggies
    Wed: BBQ Burgers, Fries, Veggies

    aussie chicken (w/ bacon, mushrooms, and cheese… like outback steakhouse) with fries.

    One week each winter I love to have a “bake day”, which I’m doing Thursday. The kids and I pick baked goods to make or prep and freeze. This year we are making lemon bars, iced sugar cookies, & blondies, and freezing chocolate chip and brown sugar cookies doughs & pie crust.

    Wednesday: Leftovers
    Thursday: Orange Peel Chicken with green beans and brown rice
    Friday: Skillet Rosemary Chicken and salad
    Saturday: Monthly Potluck. My contribution is Shrimp, Feta, and herb mac and cheese (also from Annie’s Eats. I guess I’m a bit of a fangirl.)

  24. Alright… It is time I get things back in order and get back to menu planning for real! I have been slacking the past couple of weeks. Like a poster above, I need to get on the freezer meals since I’m due with baby #2 in April and time is running out quick πŸ™‚ here is the plan for this week:
    Sunday: Panera broccoli cheese soup and yummy bread rolls (Bridgeford frozen dough is defrosted and cooking now…. Smells amazing!!!) x2 to freeze, if we don’t eat it all
    Monday: Kahlua pork with macaroni sale and rice -Hawaii style x2 to freeze for the pork
    Tuesday: steak sandwiches with arugula, blue cheese, and a red onion/balsamic/ butterreduction sauce that I could drink from a cup it is so good.
    Wednesday: homemade Mac n cheese n salad x2 to freeze
    Thursday: mommy has book club so it’s Daddy dinner night… They will probably get fast food πŸ™‚
    Friday: dinner at a friends- we need to bring something
    Saturday: olive garden potato and sausage soup -zuppa Toscana x2 to freeze

    I think my hopes of actually getting 4 meals in the freezer might be a little lofty, but we will see how it goes.

    Last week was my first menu attempt and it went smashingly! I am excited to try again this week, here we go:

    Monday: Chicken Stir fry (my husbands favorite, he would eat this for every meal if he could)
    Tuesday: Trader Joes Orange Chicken w/ rice (racquetball night, we needed something quick and easy)
    Wednesday: Date night! Thai Food!

    I’ve been using a simplified meal planning process and do two weeks at a time and am amazed at how much more time I have each week. Here is my menu for the week:

    A few highlights – an incredible breakfast fritatta, Korean Bibimbap, North African Chicken, Beet Salad. YUM!

  44. My mother-in-law passed away very suddenly and unexpectedly over the weekend, so I’m doing super simple meals I can prep in advance, since we’ll have lots of family over.

      So sorry. You should rest and let your friends take care of you and your family at this sad time. Lasagna’s,trays of stuffed shells, and casseroles will probably arrive.

    • Thank you Kim. I tried to do the make-ahead stuff so I could send some over to my father-in-law and brother-in-law to store in the freezer, but we have also been getting meals from neighbors. Amazing how many people are willing to step in to love and support you in difficult times.

    Only changed on night on last weeks menu! It was super nice out so David wanted to grill steaks! This week I’m doing doubles of everything to get the freezer stocked back up!

    Th – ton jiru(miso base pork soup)
    F – ratatouille and penne( has anyone tried nutritional yeast as a cheese substitute? I’m wondering about the taste)

  48. Ok so….I did make a menu on Sunday. But didn’t get to the store until Monday. So I’m rearranging a few things on there and starting today. No biggie right.

    Mon- We ate Chicken Andouille, mac & cheese, steamed broccoli (total throw together meal after basketball practice)

    Tue- Smothered pork chops (we’ll see how this turns out…in my head it seems wonderful.), salad, roasted sweet potatoes

    Wed- BBQ chicken tacos with apple sauerkraut slaw and black beans

    Thu- Small group at church

    Fri- Leftovers

    Sat- EAT OUT!

    Sun – Chicken sausage wraps with sautéed bell peppers and onions (leftover mixture from the smothered pork chops.) and black beans. (I make huge batches in my pressure cooker and freeze in 1 to 2 cup portions for quick additions to any meal.)

    A little late in the week but thought I would share since I’m fully on board with menu planning this year. I have 4 kids 5 & under & one is a new baby so our lives are pretty hectic but if I plan to lose this baby weight & keep my family healthy I’m going to stay on track with menus & love your site.
