Week 273 Menu

Good Morning! Or afternoon or evening…whatever it is for you right now, I hope it’s good! And no matter the time of day, I’m pretty sure waffles are always welcome!

Life has been busier than normal work-wise. I’ve still gotten meals on the table, but not as many as I’d like. Hoping things calm down a bit this week, although I’m not holding my breath!

MONDAY:
– Enchiladas
Guacamole and chips

TUESDAY:
– Leftovers

WEDNESDAY:
Caprese paninis (didn’t get to them last week, but my basil arrives from the CSA this week, so it’s all good!)

THURSDAY:
Island Pork with Sticky Coconut Rice

FRIDAY:
– Eat out

SATURDAY:
– Breakfast for Dinner

SUNDAY:
Stuffed Peppers

    Really looking forward to dinners this week – sounds expensive but it all worked out so cheap!

    We’ve also been busy. I won’t be able to go to the supermarket till Thursday morning, so the meals for the beginning of the week are going to be pretty basic

    Monday: breakfast for dinner (waffles, bacon, smoothies, and fruit)
    Tuesday: penne with chicken and broccoli in garlic cream sauce
    Wednesday: salad tacos, churros (Pre-made from the freezer isle)
    Thursday: steak, fries, green salad
    Friday: broiled teriyaki chicken skewers, broccoli with garlic and soy
    Saturday: eat out

  3. I’m on a strict “No dairy” diet now thanks to my 3-week old little guy with some tummy troubles. I had to revisit your soy challenge posts, Jane! I love my dairy products (and a lot of my freezer stash has butter/cheese in it!!). SO, I’m adopting a (mostly) vegan diet (I’m halfway there already!). So far, so good!

    Sunday: Pasta, meatballs and Braised celery
    Monday: Engine 2 vegetable lasagna from freezer
    Tuesday: Beef soup from freezer with Rustic white bread (goodLife Eats) and Vegan green bean casserole
    Wednesday: Dinner at church
    Thursday: Chicken Pot Pie (maybe extras for the freezer??) with stuffed baked potatoes
    Friday: Leftovers
    Saturday: Out? Friends over?

    Lunch/Snacks/Extras:
       – Sweet and salty roasted chickpeas
       – Roasted butternut squash, kale, tomatoes (all with mustard vinaigrette) for salads and wraps
       – English muffins…big hit last week!

    • I just started back on dairy a week or two ago after it triggered morning sickness the first 32 weeks of this pregnancy. I starting subbing coconut milk in place of regular milk for pancakes, smoothies, waffles, etc. (Also the soy free “butter” if a recipe called for it.)
      I was also dairy free while nursing baby #1. Lots of soups/sandwiches, salads, and plain pasta. Hang in there!

      oh goodness, good luck, bonnie! as if taking care of a newborn isn’t enough, now you have to think so hard about what you eat! you’re a good momma. ๐Ÿ™‚ hang in there!!!

    • The things we do for our kids! I’m treating it like a culinary challenge. I have several vegan friends/family who are mentoring me – so I’m not out there by myself. I definitely feel a lot healthier gorging on veggies and legumes! ๐Ÿ™‚

    Mon: Leftover Lentil Soup w/ Apple-Bacon-Cheddar Paninis

    Tues: 4-Cheese (colby, swiss, sharp cheddar, parmesan) Wheat Mac n Cheese (I accumulated a lot of cheese from Easter Brunch & really need to use it up!) w/ Homemade Fish Sticks & Spinach Salad

    Wed: Taco Pizza w/ lettuce, tomatoes, avocados, cilantro

    Th: Chinese Noodles with snap peas & bell peppers; chicken & veg potstickers; & pineapple chunks

    Fri: Dinner Out

    Sat: Sis-in-law, her boyfriend, and my 2 neices are coming over for a BBQ. Grill turkey dogs & spicy sausages, cucumber-tomato pasta salad & spinach salad w/ bacon, red onion, & honey-mustard vinaigrette.

    Sun: Leftovers

    Weekly Dessert: Carrot Cake Whoopie Pies!

    This will be my 1st attempt at these whoopie pies, and I’m really excited! My 4-year-old son & I are going to make them together tomorrow! ๐Ÿ™‚

    I created the menu on Friday, so I switched Saturdayโ€™s and Sundayโ€™s. I hope to get to everything this week. Saturday we had Subway and pushed the meatloaf to Sunday.

    Sunday- Meatloaf, mashed potatoes, random veggie
    Monday- Orange Chicken, broccoli, and rice.
    Tuesday- Stew, rolls
    Wednesday- Pizza Quesadillas
    Thursday- Breakfast (freezer diving)
    Friday- Mystery Lunchbox
    Saturday- Apple chicken chili.

    I just noticed that I didnโ€™t have any form of spaghetti this week. I usually have it at least once a week. Oh weel, I’ll live ๐Ÿ™‚

    Friday: I’m going to U of I for “Mom’s Weekend”, will need to stock up for the rest of the family.
    Maybe I’ll make some chili before I go.

  13. Easy meals this week. Falling asleep on my feet today, and wondering how I’ll survive the sleep deprivation of another newborn in a few weeks. Just having an early-riser 3 year old does me in!

      oh goodness, nate and I were SO TIRED this time around when owen was born. just enjoy it now (even with the early-rise 3 year old) because it WILL get worse. ๐Ÿ˜‰ how’s that for encouragement….but THEN it gets better! for real! ๐Ÿ™‚

    Thursday: Apple Fritter Cakes with caramel syrup and eggs and berries

    last week ended up being a total bust. Of the six meals we had planned we only ate two or three since my husband ended up working late most nights and I have a hard time motivating myself/pulling dinner together when it’s just me and the kids. here’s hoping this week goes better

    Tuesday – Chinese Chicken Salad
    Wednesday – my son’s 4th birthday. dinner will be his choice
    Thursday – Turkey taco salad
    Friday – Big family dinner for those coming in from out of down for the birthday celebration. Artichoke crusted chicken, potato gratin, roasted sprouts

  40. I have not done a meal plan since before my son was born six weeks ago. In fact, until last week I hadn’t even cooked. I am glad to be back in the swing of things (well if I can figure out how to successfully shop with a toddler and infant)

    Monday: take out pizza for my daughters 3rd birthday, with an antipasto salad for the adults.

    Tuesday: Grilled Italian Chicken with Parma Rosa Sauce

    Wednesday: Fish and Chips (requested by my husband for his birthday)

    Thursday: Dinner Out with In-Laws for my husband’s birthday

    Friday: Pioneer Woman’s Sour Cream Noodle Bake

      I’m glad you haven’t done a meal plan or cooked for 6 weeks! but I’m also glad you’re back with your menu. good luck with the grocery shopping, I still haven’t figured it out! True confession – Trader Joe’s has little kids’ carts and I basically make anna push all our groceries around AND out to the car. i feel like a slave driver. BUt Owen can sit up now, so I think I’m going to be sticking him in the car finally!

    Not cooking this week or early next week……..away on business trip.

    So instead of a menu, I thought I’d give an update on our use of cloth napkins. We weren’t so good at using them daily so I purchased 8 more napkins to ensure we always had some available. I started folding 4 of them up and placing them in a napkin holder (made for paper napkins) on the counter……this helps keep them visible and accessable.

    I can report we have been consistent with cloth napkins for dinner and weekend breakfasts…….still need to work on lunchs, snacks, and week day breakfast. But, we made progress with a litlle more focus!

    Monday- Cobb Salad
    Tuesday- Small Salads with Napoli style pizza
    Wednesday- BBQ pork loin, small salad, and steamed broccoli
    Thursday- eat out
    Friday- leftovers
    Saturday- Chicken wrapped asparagus and salad
