Life has been busier than normal work-wise. I’ve still gotten meals on the table, but not as many as I’d like. Hoping things calm down a bit this week, although I’m not holding my breath!

We’ve also been busy. I won’t be able to go to the supermarket till Thursday morning, so the meals for the beginning of the week are going to be pretty basic

I’m on a strict “No dairy” diet now thanks to my 3-week old little guy with some tummy troubles. I had to revisit your soy challenge posts, Jane! I love my dairy products (and a lot of my freezer stash has butter/cheese in it!!). SO, I’m adopting a (mostly) vegan diet (I’m halfway there already!). So far, so good!
Sunday: Pasta, meatballs and Braised celery
Monday: Engine 2 vegetable lasagna from freezer
Tuesday: Beef soup from freezer with Rustic white bread (goodLife Eats) and Vegan green bean casserole
Wednesday: Dinner at church
Thursday: Chicken Pot Pie (maybe extras for the freezer??) with stuffed baked potatoes

Lunch/Snacks/Extras:
– Sweet and salty roasted chickpeas
– Roasted butternut squash, kale, tomatoes (all with mustard vinaigrette) for salads and wraps
– English muffins…big hit last week!
I just started back on dairy a week or two ago after it triggered morning sickness the first 32 weeks of this pregnancy. I starting subbing coconut milk in place of regular milk for pancakes, smoothies, waffles, etc. (Also the soy free “butter” if a recipe called for it.)
I was also dairy free while nursing baby #1. Lots of soups/sandwiches, salads, and plain pasta. Hang in there!
oh goodness, good luck, bonnie! as if taking care of a newborn isn’t enough, now you have to think so hard about what you eat! you’re a good momma. ๐ hang in there!!!
The things we do for our kids! I’m treating it like a culinary challenge. I have several vegan friends/family who are mentoring me – so I’m not out there by myself. I definitely feel a lot healthier gorging on veggies and legumes! ๐

Our very favorite quinoa recipe is from a 2008 Bon Appetit magazine, and I’ve made is several times. Here’s the recipe:
Quinoa w/ Black Beans
1 T veg oil
2 c onion, chop
1 c red bell pepper, chop
1 cup quinoa, rinse & drain
2 t chili powder
1/2 t cumin
1/2 t salt
1-1/2 c chicken stock
1 15-oz can black beans, rinse & drain
1/4 cup fresh cilatro + extra for garnish
Heat oil in med saucepan over med-hi heat. Add onion & bell pepper & cook until softened. Stir in next 4 ingredients. Add stock; bring to a boil. Cover & reduce heat to med-low & simmer about 14 min; quinoa should be almost tender. Add beans & cilantro & cook uncovered until liquid is fully absorbed, about 3 more minutes.

True confession – Trader Joe’s has little kids’ carts and I basically make anna push all our groceries around AND out to the car. i feel like a slave driver. BUt Owen can sit up now, so I think I’m going to be sticking him in the car finally!
Sat – BBQ chicken pizza
Sun – tortelloni w/ veggies
Mon – BLTs, cold pasta salad
Tues – burgers (local beef/homemade buns), leftover pasta salad
Wed – spaghetti w/ meatballs & green salad
Thurs – twice baked potatoes w/ bacon & cheese & green salad
Fri – homemade pizza
mmmmm…I haven’t made BBQ chicken pizza in a while and that sounds good – thanks for the reminder!

Not cooking this week or early next week……..away on business trip.
So instead of a menu, I thought I’d give an update on our use of cloth napkins. We weren’t so good at using them daily so I purchased 8 more napkins to ensure we always had some available. I started folding 4 of them up and placing them in a napkin holder (made for paper napkins) on the counter……this helps keep them visible and accessable.
I can report we have been consistent with cloth napkins for dinner and weekend breakfasts…….still need to work on lunchs, snacks, and week day breakfast. But, we made progress with a litlle more focus!

Monday- Cobb Salad
Tuesday- Small Salads with Napoli style pizza
Wednesday- BBQ pork loin, small salad, and steamed broccoli
Thursday- eat out
Friday- leftovers
Saturday- Chicken wrapped asparagus and salad
