Week 286 Menu

Good morning! It’s a cereal kind of morning around our house. And a black and white kind of morning. And a Cate-finally-poured-her-own-cereal-and-milk kind of morning. I like these kinds of mornings.

This week we leave for our annual East Coast trip! One week on Cape Cod, one week in New Jersey and I’m throwing SocialLuxe Lounge once again in New York City. We have a fun couple of weeks ahead of us! Of course, I have to survive this week first…so much to do! My menu is going to be very simple and BORING.

MONDAY:
– Frozen mac & cheese from Trader Joe’s
– Lots of veggies

TUESDAY:
– Spaghetti
– Salad

WEDNESDAY:
– Frozen chicken cordon bleu from grocery store
– Wild rice and a veggie

THURSDAY:
– Eat out (who am I kidding, I’ll be packing AND getting carpet installed in our apartment that day. Heaven help us…)

FRIDAY:
– Overpriced airplane food, most likely

SATURDAY:
Sweet Tomatoes Pizza in Sandwich, MA (our first night on the Cape tradition)

SUNDAY:
– Who knows? We’ll be in vacation mode!

    Picked up our all organic CSA bag and it had some goodies: Corn on the Cob (dubbed Andy’s Candy Corn), Sweet Onions, Peaches (dubbed: Chin Dripping Good), loaf of fresh 8 grain bread, Milk, and Bison (1 lb) all for $25 bucks!!!

    CSA Sunday: Bison Burgers (spicy black bean for me), Corn on the Cob, Cantaloupe (non csa add ons: Vegetarian Baked Beans and Fries (regular and sweet potato)

    Monday: Black Bean and Corn Burritos, Spanish Rice, and Pinto Beans

    Tuesday: Red Beans and Rice and Cornbread (our weekly staple)

    Wednesday: Swedish Meatballs w. noodles, and Big Salad (me just the big salad)

    Thursday: Spaghetti, Italian Green Beans, Cheese Texas Toast

    Friday: Calzones: Pepperoni for them and Veggie for me, and raw veggies and ranch, Fruit Salad

    Saturday: Chicken Parm Sandwiches (for mine I’ll use morningstar Italian Chicken love this vegetarian “meat”), Very Veggie Pasta Salad, Fruit Salad

    Have a wonderful vacation!!! I didn’t know you lived in a apartment I always thought it was a house πŸ™‚ We had carpet ripped out and hardwood floors installed in our house what a mess! Good Luck!!! Have a Safe Trip!!

    The only time I’ve been to Cape Cod is when my husband and I were dating. It was the first trip we ever took together and I get nostalgic every time I think about it. I’d love to go back but we live a lot further away now and it just hasn’t worked out. I hope you have a wonderful time!

    Haven’t posted in a while, but checking out all the yummilicious menus is always part of my Sunday ritual!

    Sun: TJ’s mini chicken tacos with salsa, guacamole and salad
    Mon: Veggie stirfry and edamame over quinoa and rice
    Tues: pasta bake with chicken sausage, broccoli and zucchini
    Wed: Gyoza salad
    Thur: leftovers
    Fri: pita pizzas (my current favorite way to use up leftover veggies
    Sat: My dear friend’s wedding! They’re getting a Vietnamese food truck to cater. =)

    Have a great vacation….eat a lobster roll in Cape Cod and get a giant gourmet cupcake from Cupcake Charlie’s!

    I’m finally not traveling on business for a couple of weeks and our oven died. Ugh! New one can’t be delivered until 7/23 so I need to make meals which don’t require baking (stove top burner still working well).

    Sunday: Shrimp boil with crusty bread
    Monday: Chicken Asian Salad
    Tuesday: Tuna sandwiches with celery and carrot sticks
    Wednesday: spaghetti and salad
    Thursday: omelets w fresh sliced tomatoes from the garden
    Friday: baked potatoes topped w vegetarian chili
    Saturday: Grilled Cheese & fruit

  7. I’m at the airport leaving for work. The 3-mo old and 3-yo will be home alone with Daddy! It’ll be a little rough on everyone. So the menu is pretty basic this week. I have to take some extra “equipment” to be away from baby for a couple days. Gonna be fun! πŸ™‚

    Monday: Leftover pizza
    Tuesday: BBQ turkey sandwiches
    Wednesday: Pancakes
    Thursday: Beef stroganoff over noodles and CSA peas
    Friday: Leftover turkey
    Saturday: Out.

  8. Just got my August Cooking Light magazine in the mail so I’ll be trying a few things from there this week.
    S- Pimento Cheese BLTs and Sweet Potato Fries
    M- Chicken Tostadas & Avocado Salsa with Chipolte Rice (CL)
    T- Grilled Vegetable Pizza and Herbed Mediterranean Salad (CL)- I’ve never tried making pizza on the grill before!
    W- Zuchini & Camarlized Onion Quiche with Salad (CL)
    Th- Spaghetti Squash with Meat Sauce
    F- Take Out
    S- Open Faced Sandwich with Mushroom and Fried Eggs (CL)

  9. Sunday – Grilled salmon and veggies, then off to our favorite Ice Cream joint to celebrate National Ice Cream Day!
    Monday – CSA Monday! We get our box of veggies today and I plan to make a version of this Farmer’s Market Skillet but with farro (since we already have it!).
    Tuesday – Foot truck night with friends. I’m going to pack veggie, bean, and cheese quesadillas for the kiddos, then buy something yummy there for Scott and myself.
    Wednesday – I’m having dinner out with friends, so I thought this super yummy tortellini salad for be the perfect make-a-head dinner for Scott and the kids.
    Thursday – Taco Thursday! (I’m assigning all the days a personality now!) I’d like to make some easy fish tacos and some of these delicious chipotle black bean and sweet potato tacos with lots of guac. Everyone loves guac!
    Friday – Homemade pizza Friday. I’m dying to try a fried egg pizza. Something about the yummy yolk and the warm pizza dough sounds so strange and enticing. I’m thinking about this one with pesto.
    Saturday – Grilled fish and pesto potatoes. With a fruit salad on the side.

    After you get pizza at Sweet Tomatoes you should head out to Sweet Caroline’s for ice cream. It’s the best ice cream in Sandwich. Just a couple miles heading south on Rt 130. It’s my family’s favorite!! Have a great trip.

    We leave tomorrow morning on a family road trip to tour some of the colleges my middle daughter is interested in. One thing for sure, I’m getting a cheesesteak when we’re in Philadelphia!

    Friday: Easiest ever baked mac & cheese with chicken apple sausage and peas(I’ll make it on Thursday night so I just have to bake it on Friday and I won’t be tempted to order in Friday night)
    Saturday: BBQ at a friend’s house – going to take over some homemade hummus and try out a recipe for Greek yogurt key lime pie πŸ˜‰

    We had a huge weekend planting around our addition and building a pergola and the last thing I felt like doing was cooking either day so middle son Jacob (15) made dinner last night and started the trend of each of the kids making dinner one night this week. So I’m off the hook for a lot of meals this week, which is fantastic!
    Sunday: Mashed yukon golds, parmesan roasted zucchini, and baked salmon in Jacob’s special sauce (soy, brown sugar and TONS of spices).
    Monday: Oriental chicken salad and kale & berry smoothies.
    Tuesday: 13-year-old Rachel is making dinner ”” she doesn’t know what yet.
    Wednesday: Leftovers.
    Thursday: 16-year-old Alex is making dinner ”” no clue what yet!
    Friday: Either spaghetti & turkey meatballs or lasagna roll-ups.
    Saturday: Out at husband’s high school reunion. Kids on their own ”” probably pizza!

    it’s been a few weeks since i’ve posted. but don’t worry, we’ve been eating. πŸ™‚ …and planning. just not blogging so much.
    anyway, i have last week’s menu (for ideas sake) and this week’s:

    chicken ramen with green beans
    ribs and baked beans and corn on the cob

    this week we have some black beans to use up:

    Sun: Grilled baguette slices w/ roasted garlic bulb & bruschetta along with grilled fries w/ yogurt-herb dip. For dessert, grilled fruit ice cream sundaes. (I was inspired by your last week’s crusty bread & roasted garlic…Thanks Jane!)

    I just found you while I was googling ways to make menu planning more efficient and less frustrating. I really like your site. Your menus seem so “real”, rather than being a bunch of meals that I could never hope to make (or get my kids to eat). So, I think I’ll stick around. This last week has been a little different. My 8 year old needed to create a menu for a week for a scouting requirement, anyway. But last Friday, when he threw a fit over something I had made for dinner (which was delicious, btw), and refused to even come the the table, and instead sat on the couch sulking at the rest of us, I decided this week, he was in charge of every meal. He would plan the menu, he would shop for needed ingredients, he would cook the meals, and delegate tasks that needed to be done in order to get meals on the table in a timely fashion. He was allowed to plan whatever he liked as long as he stayed within a budget that I had set for him, and had to meet the nutritional needs of the family. I, of course, have been supervising, but I think it’s been an eye opening experience for him. His dinner menu this week:

    Monday – Ground beef tacos, refried beans, and taco toppings (olives, lettuce, cheese, taco sauce)
    Tuesday – Cheeseburgers, canned pears, and burger toppings
    Wednesday – Chicken enchiladas, and canned pears
    Thursday – Cheeseburger macaroni, and apple slices
    Friday – Bean and cheese grilled burritos, and orange wedges
    Saturday – Easy Crock Pot Lasagna, and green beans
    Sunday – Chocolate pancakes, scrambled eggs, and orange juice

    He’s done a great job. I’m so proud of him!
