Week 288 Menu

I’m having such a relaxing day enjoying time with family and exploring the marsh behind Nate’s grandmother’s home┬áthat I totally forgot it was Sunday and that I need to get a post up! Luckily I remembered before hopping in the car to head from Boston to New Jersey.

Another week of vacation lies ahead, as well as a few days in New York City for me. Between BlogHer, SocialLuxe Lounge and a bunch of meetings, I’ve got quite a week ahead of me. Needless to say, no menu planned for the week!

But I know you are still on the ball, so please share your menus and inspire one another!


  1. Sunday: Stuffed peppers (quinoa, assorted veggies)
    Monday: Beef stroganoff from freezer with red chard
    Tuesday:  Asian Lettuce Cups
    Wednesday: Balsamic chicken salads
    Thursday: Leftovers
    Friday: Individual pizzas
    Saturday: Out

    I made some Potato Leek soup for lunches this week.

    And, I also made someSoft Sourdough Pretzels……man oh man! My new favorite homemade treat!

    Saturday: Barbeque Shrimp and Loaded Mashed Potatoes and Green Beans
    Sunday: Lamb Tagine and Couscous and Salad

  6. Looks beautiful. So glad you are enjoying your time with family! We have a busy week, so trying to take advantage of large batch meals and leftovers.

    Sunday and Monday-Shredded beef enchiladas in homemade red chili sauce, quinoa with black beans and corn.
    Tuesday and Wednesday-Meatball-Veggie Soup, French Bread
    Thursday-Dinner out…running all over!
    Friday-Homemade Pizza, Green Salad

    Staying at family lake house this week with my parents, sister & her family.

    Sunday: grilled chicken, grilled asparagus, onions, & baby portabella’s, boiled potatoes

    Monday: Lasagna, Caesar salad, garlic bread

    Tuesday: Tacos with all the fixings

    Wednesday: Out

    Thursday: Chicken sausage cooked on a stick over a shore fire

    Friday: Nantucketers, celery & carrot sticks

    Saturday: Shrimp scampi & big tossed salad

    It is very nice to be back on the ball. The last two months where hectic.
    Sunday- Out (County Fair ends today)
    Monday- Ribeye Steaks, Mashed potatoes
    Tuesday- Crockpot Pasta Bake
    Thursday-Cornish Game Hen, Cheesy potatoes
    Friday-Grilled Chicken (Maybe BBQ), Corn Muffins
    Saturday- Out (Church supper)

    Sun: Dinner at mum’s

    Dinner: Chicken, corn on the cob, potato salad

    Wednesday: Lunch: Pizza
    Dinner: Steak, baked potato, salad

    Thursday: Lunch: Chicken nuggets and fries
    Dinner: Tacos, fruit

    Friday: sandwiches, chips, vegies
    Dinner: Pizza Salad

    Saturday: Lunch: Kids choice
    Dinner: TBD-

    Thursday: easy lite chicken lo mein

    Friday: out to eat!

    Wed: Garlic Shrimp w/ polenta & eggplant caponata

    Fri: Leftovers & Nutella Blondies for Book Club

    Sat: Eat Out

    Sun: BBQ Chicken w/ potato-pepper foil packets & cucumber-tomato salad

    I also made a large batch of white chocolate pudding & dark chocolate pudding to make layered dessert cups for the week. ­čÖé

  19. We were out of town last Friday through yesterday and I keep forgetting that today is Tuesday not Monday! We just grabbed a rotisserie chicken and a salad for dinner last night since we flew in yesterday afternoon but we’re all set for the rest of the week:
    Tuesday: ground turkey tacos
    Wednesday: One Pot Salmon, Rice, and Snap Peas (Real Simple Magazine)
    Thursday: Pasta with Tuna and Ricotta (Simply Recipes)
    Friday: Slow Cooker Thai Chicken Lettuce Wraps

    Monday – steak on grill, potatoes and broccoli
    Tuesday – cuban grilled chicken with black bean mango salsa, grilled veggies and salad
    Wednesday – pasta with sausage and salad
    Thursday – out at my brother’s house
    Friday – grilled scallops and veggies
    Saturday – sausage on the grill
    Sunday – mixed grill – lamb roast, spatchcock cornish hens, london broil with corn and salad
    then vacation monday- thursday!

    Wed – pan seared chicken breasts w/ pesto potatoes

    Saturday: Corn salsa and shrimp (spicy!) with rice and black beans

    Sunday: Salmon and squash

    Monday: Steak and mushrooms and grilled tomatoes/garlic

    Tuesday: Beet and cabbage coleslaw and pulled BBQ chicken sandwiches

    Wednesday: Tomato bread soup?

    Thursday: Check out new veggies!
