Week 290 Menu

Sometimes you just need a bowl of Frosted Flakes. Am I wrong? Nope, I’m not. 😉 (No, this sentence was not sponsored. I just really wanted Frosted Flakes for breakfast. Although, I’ll take a check if Kelloggs wants to send it.)

Here’s the plan for this week!

– Chicken Fried Steak, because I haven’t eaten it in ages and I just feel like it. Probably will use Ree’s recipe, but any pointers are welcome since I’ve NEVER made it.
– Mashed potatoes and green beans

Easy Peasy Bean Tacos

Spinach and Pancetta Stuffed Shells
– Salad

– Leftovers

– Eat out

– Playing by ear…

-Chicken Pot Pie (new recipe to try)
– Veggies of some sort

  1. Sunday: Slow cooker ribs and veggies
    Monday: Taco lettuce cups with all the fixins’ (requested by the 3-year old!)
    Tuesday: Chicken pot pie over quinoa
    Wednesday: Pancakes and smoothies
    Thursday: Veggie egg cups…encore from last week
    Friday: Leftovers
    Saturday: Out.

      I’m going to pulling up the slow cooker and using it on the days I have classes @ the college campus. It’s just easier to know dinner is cooking when your a mom and college student. College at 42 is hard. My brain just has too much going on 🙂

  2. Costco had 5 lbs of ricotta for $6, so I’m making two BIG lasagnas. One for dinner and lunches this week and one to freeze. I also need to use up some frozen Ono, so I’ll be grilling that for two meals. Greek Chicken Gyros are one of my easiest and most delicious meals…I make a simple yogurt sauce and serve inside Trader Joe’s Mediterranean flat bread. I only have to buy a few ingredients since I’m trying to clean out the pantry and freezer, but it should be a tasty week!

    Sunday-Hearty Meat Lasagna, homemade Caesar Salad, Garlic Bread
    Monday and Tuesday-Grilled Fish, Brown Rice, Steamed Veggies
    Wednesday-Greek Chicken Gyros with homemade cucumber yogurt sauce, Rice Pilaf, Greek Salad
    Thursday-Teriyaki Chicken (actually, TJs Island Soyaki Chicken)Rice bowls. (Includes Chicken, Pineapple, Cilantro Rice, and Stir Fry Veggies)
    Friday-Sausage and Pepper Pizza, Green Salad

      wow that is a awesome deal on ricotta!!! I’ve been wanting to make Lasagna rolls might have to add that to the menu plan for the following week.

    Sun: Burgers (beef and homemade black bean), Beans, Fries and Carrots with Ranch

    Mon: Stuffed Peppers (some w. ground bison, some with diced portabella mushrooms), Fruit Salad

    Tues: Stir fry w. Rice

    Wed: Burritos, Homemade Pinto Beans, and Spanish Rice

    Thurs: Red Beans and Barley (I different take of red beans and rice) with cornbread muffins

    Fri: Pizza and Salad

    Sat: Cheese Steak Sand (both with steak and one using portabella mushrooms, Potato Salad, and Fruit

    Sun: not sure yet????

    I’ve been using Ree’s recipefor chicken fried steak for a while now. Its awesome and should turn out perfectly for you.

    Monday – Warm Bowtie Pesto Pasta
    Tuesday – Grilled Salmon, Japanese cucumber salad, and Rice Pilaf
    Wednesday – Baked and breaded chicken strips, steamed broccoli, and stuffing (I didn’t get to make stuffing last week, so back onto the menu it goes.)
    Thursday – Spaghetti Squash w/meat sauce, Sourdough Toast
    Friday – Out
    Saturday – Crispy Beef Tacos

  7. I really like Cook’s Illustrated chicken fried steak recipe, as well as Ree’s.
    Monday: Parmesan Crusted Tilapia and Bacon Cheddar and Chive Scones and Broccoli
    Tuesday: Chicken Tenderloins with Cranberry Mustard Sauce and Salad
    Wednesday: Chicken and Rice and Corn
    Thursday: Out to Eat
    Friday: Oven Pizza and Fresh Fruit and Frozen Hot Chocolate
    Saturday: Bracchiole and Roasted Corn Salad
    Sunday: Breakfast for Dinner

    Monday: Personal chicken pot pies
    Tuesday: Marinated skirt steak, mashed potatoes, veggies
    Wednesday: Chicken Teriyaki with rice and stir fried veggies
    Thursday: Pasta with light pesto sauce, salad
    Friday: Grilled Chicken pita with tomato, onion, and lemon dressing
    Saturday: Sesame noodles and fruit salad

    Yay, finally managed a menu at the beginning of the week!

    Sun: ravioli, salad and herbed cheese biscuits
    Mon: leftovers
    Tues: puffy oven pancake with sliced fruit
    Wed: middle east vegetable wraps, roasted beets and feta
    Thurs: leftovers
    Fri: Fishtsticks (requested by the two year old) with cauliflower and green beans
    Sat: Eat out

    Definitely use Ree’s recipe!! It is the best!

    Sunday – Quick Cajun Chicken Penne, Salad
    Monday – Oven beef tacos, refried beans
    Tuesday – Oven fried pork chops, baby dilled potatoes
    Wednesday – Baked salmon with basil and garlic, buttered garlic noodles
    Thursday – Granddaughter’s 2nd birthday party. They grow so fast
    Friday – Pasta with red sauce, garlic toast, salad
    Saturday – Leftovers

    back from a week of vacationing! Youngest son’s last week at home before back to university
    Sunday – fend –
    Monday – zucchini parmesan and spaghetti with salad
    Tuesday – Salmon on the grill, potatoes, and salad
    Wednesday – burgers on the grill
    Thursday – chicken stir fry with pot stickers
    Friday – Steak on the grill, potatoes and salad
    Saturday – taking son back to university – he’s moving into his first apartment!

    Such a nice easy week for me, which is nice for a change!
    Sunday: We dined on leftover smoked turkey and smoked brisket that we smoked yesterday. Plus baked mac & cheese, corn on the cob, green beans, and roasted broccoli. Peach bars for dessert with vanilla ice cream.
    Monday: Leftover smoked turkey BLTs (mine with avocado too). Whatever other leftovers we need to finish.
    Tuesday: Oldest son is at band camp and we’re helping serve dinner that dinner so we’re eating there. I have no idea what we’ll be eating, but I’m not cooking so that’s great.
    Wednesday: Chicken rice bowls with roasted broccoli.
    Thursday: Mushroom and spinach quiche with side salads.
    Friday: A variety of chicken and turkey sausages on the grill (the spinach-feta is my favorite) probably with some grilled fish as well. Grilled yellow zucchini, red peppers, and red onions as well.
    Saturday: Off to my niece and nephew’s birthday party (2 and 4 years!). I’m bringing cake pops to go along with the big cake. I did a test batch this weekend, and while they were a little soft to stay on the stick, they were delicious!

    dinner: hubby cooks. crockpot orange chicken with stirfry vegies, rice, eggrolls

    dinner: hubby cooks. steak, potatoes, salad

    friday: lunch: sandwiches, chips, vegies

    dinner: pizza night, salad

    saturday: lunch: kids’ choice

    dinner: pasta with white ragu, garlic bread, salad

    I grew up on Chicken Fried Elk Steak, and Ree’s got a pretty good recipe – very close to my granddad’s. Awww, nostalgia…

    Mon – It’s Hatch green chile season at Central Market, so we’re having green chile cheeseburgers!!
    Tue – Meatball Subs
    Wed – Wings – Asian Zing and Honey Sesame w/ corn on the cob

    Fri – Breakfast for dinner – breakfast bread bowls

    Since it’s 100 degrees here every day this week (AND my kids go back to school on Wednesday, in the heat, cruel world!) I am utilizing my microwave and outdoor grill! In random order:

    BBQ cheeseburgers with cold pasta salad
    BBQ hot dogs (nitrate free) and chips
    Swedish meatballs with berry sauce (super easy, made from scratch, in the micro. yum!)
    Taco in a pan (also from scratch and microwavable)
    Hawaiian Haystacks (just gotta boil chicken then micro the sauce)
    Chili from Costco with nachos (microwave again!)
    Quesedillas (made on my foreman grill)
    French Toast

    Hoping we don’t melt! 😛

    It must be frosted flakes season, as I have been Jonesing for some also and kept putting it off saying I don’t need the brand cereals, I need to keep with my Kashi….until my 4 year old asked in the store, “mommy can we puh-lease buy frosted flakes? I really want them.”
    I wasted not a second more.
    I have been MIA for awhile and really missing this site, but life has been quite stressful and emotional these last months, so I had to put stuff like this (aka free time) on hold.

    Cereal is great at any time of the day…it was my staple when I was pregnant! My son’s anytime meal is oatmeal. 🙂

    Th: Turkey, Bacon, & Swiss Sandwiches w/ chips & fruit salad

    Fri: Prepping for BBQ Luau on Saturday! (I’ll be taste testing all day so I’ll either be full for dinner or order pizza.) 🙂

    Sat: BBQ Luau Party!!! Having friends & family over to send us off to our Maui vacation the following week…yay! Menu is Oven Kalua Pork, Teriyaki Chicken Skewers, Pineapple Fried Rice, Macaroni Salad, Hawaiiain Fruit Platter, Hawaiian Rolls, Pineapple Upside Down Cupcakes, & Coconut Rice Pudding.

    Sun: Luau Leftovers! 🙂

    the good thing about planning meals on wednesday is that it makes a short and easy plan. 🙂 so that’s my optimistic outlook for being so late!

    chicken thighs, mashed potatoes, and peas
    pork chops w/ chips and cowboy caviar
