I’m going to pulling up the slow cooker and using it on the days I have classes @ the college campus. It’s just easier to know dinner is cooking when your a mom and college student. College at 42 is hard. My brain just has too much going on 🙂
Costco had 5 lbs of ricotta for $6, so I’m making two BIG lasagnas. One for dinner and lunches this week and one to freeze. I also need to use up some frozen Ono, so I’ll be grilling that for two meals. Greek Chicken Gyros are one of my easiest and most delicious meals…I make a simple yogurt sauce and serve inside Trader Joe’s Mediterranean flat bread. I only have to buy a few ingredients since I’m trying to clean out the pantry and freezer, but it should be a tasty week!

Sunday: We dined on leftover smoked turkey and smoked brisket that we smoked yesterday. Plus baked mac & cheese, corn on the cob, green beans, and roasted broccoli. Peach bars for dessert with vanilla ice cream.
Monday: Leftover smoked turkey BLTs (mine with avocado too). Whatever other leftovers we need to finish.
Tuesday: Oldest son is at band camp and we’re helping serve dinner that dinner so we’re eating there. I have no idea what we’ll be eating, but I’m not cooking so that’s great.
Wednesday: Chicken rice bowls with roasted broccoli.
Thursday: Mushroom and spinach quiche with side salads.
Friday: A variety of chicken and turkey sausages on the grill (the spinach-feta is my favorite) probably with some grilled fish as well. Grilled yellow zucchini, red peppers, and red onions as well.
Saturday: Off to my niece and nephew’s birthday party (2 and 4 years!). I’m bringing cake pops to go along with the big cake. I did a test batch this weekend, and while they were a little soft to stay on the stick, they were delicious!

Since it’s 100 degrees here every day this week (AND my kids go back to school on Wednesday, in the heat, cruel world!) I am utilizing my microwave and outdoor grill! In random order:

BBQ hot dogs (nitrate free) and chips
Swedish meatballs with berry sauce (super easy, made from scratch, in the micro. yum!)
Taco in a pan (also from scratch and microwavable)
Hawaiian Haystacks (just gotta boil chicken then micro the sauce)
Chili from Costco with nachos (microwave again!)
Quesedillas (made on my foreman grill)
French Toast
Hoping we don’t melt! 😛
