On Friday, my friend Natalee had us over so we could do a lemonade stand. Cate looked forward to it all week and wasย over-the-moon excited when the day actually came. It was one of those magical moments as a parent, watching her live the dream, so to speak. I never did a lemonade stand as a kid, so my 7-year-old self got to live vicariously through Cate. And it was as much fun as I always imagined it would be.
I seriously can’t believe summer is almost over. Just two more weeks of sleeping in and hitting the pool when we can! And, because it’s summer, I didn’t really get to a lot of items from last week’s menu. We’ll see how this week goes!

Takes me back MANY years…to my own efforts and then my kids (who are now grown). Kids in our neighborhood do them but gotta tell ya…their mom’s really should supervise better. Horrible warm dry mix lemonade? Still…I give them a buck and you would think I was Santa. ๐
The luxury of kids being grown…no menu planning. When I make a main course dish I’ll sometimes have the same thing several nights in a row…and I’m OK with that!!

Cate and her friends “did build that business”! I never had a lemonade stand when I was a kid (too rural of an area…..no foot traffic and very few cars drove by on a daily basis), but my husband and I always stop whenever we see a lemonade stand when we are out and about. We love to see how happy the kids as they carefully pour 2 cups of lemonade, handle the sale, and say “thank you” while their parents are watching from close by but trying not to be seen.

This is a family favorite at my house. http://www.epicurious.com/recipes/food/views/Corn-Scallion-and-Potato-Frittata-103719 I don’t always have scallions, but I always have some type of onion and just chop up whatever sweet onion I have hanging around. Simple, delicious, forgiving and if you like a little heat/sweet…try a few drops of sriracha.
My family’s favorite frittata is Pasta Frittata. I just use leftover spaghettie or pasta from the night before, saute it back up (including sauce) in olive oil in a large non-stick pan. I then add 8 eggs beaten with cream & cook on medium until bottom sets and starts slipping freely around pan, top with parmesan cheese, and throw in a 350-degree oven until it has cooked through…about 15 min.

I am using a deconstructed, whole, roasted chicken for our chicken dishes this week. We’re only buying organic meat (to try to consume less meat overall), so using the most economical method (i.e. whole chicken) seems to be helping!

hi elle! the recipe is from everyday food. i couldn’t find it on their website but by googling i found it on this blog: http://resurrectingdinner.blogspot.com/2010/03/ham-spinach-rice-casserole.html. i haven’t made it yet but was going to use brown rice instead of white, skim instead of whole milk, use an italian blend of cheese instead of Gruyere, and use chicken broth instead of wine. if i like it i’ll blog about it & come back with the link. ๐

I’m so behind with everything this week, including posting this week’s menu! School orientations, getting prepped for school, getting prepped for all three of the kids to have bonfire parties this weekend (high school band one Friday night after the first football game and junior high one Saturday), and then work is crazy busy for me this week! So easy dinners it is.
Sunday: Grilled steak and chicken over avocado, radish, jalapeno, and fresh corn salad with a cilantro-lime vinaigrette and roasted fingerling potatoes.
Monday: Giada’s baked farro with roasted broccoli and cantaloupe.
Tuesday: Turkey meatball subs (using the extra frozen meatballs I made a few weeks ago) with roasted asparagus and watermelon.
Wednesday: Take-out! Chipotle burrito bowls.
Thursday: Grandparents in town for marching band preview show so I’m making mushroom and spinach quiches with salads and fresh peaches.
Friday: Off to a friend’s 40th birthday celebration โโย a Cuban pig roast and then hot dogs and sausages on the grill for the band kids later in the evening.
Saturday: Buffalo chicken sandwiches with homemade blue cheese dressing and a chopped salad.

sorry I’m just replying now! I do not have a recipe I follow for this. It’s more of a throw whatever I have on hand together and hope for the best. here’s a rough version of what I did…
1/3 c. honey
2-3 tbsp low sodium soy sauce
fresh grated ginger to taste
2 cloves fresh garlic – minced
some finely chopped onion
a dash of hot chili flakes
4 center cut pork chops
cabbage (red, green, bok choy, whatever you got)
place pork chops in a baking dish. top with some of the sauce. bake till done. (350, 20-25 min)
slice the cabbage thin, stir fry w/ remaining sauce, slice pork, top a mound of cabbage with it, sprinkle toasted sesame seeds on top, and serve w/ rice.
We got green cabbage again in our CSA this week, and I’m sick to death of cole slaw.
