Week 291 Menu

On Friday, my friend Natalee had us over so we could do a lemonade stand. Cate looked forward to it all week and wasย over-the-moon excited when the day actually came. It was one of those magical moments as a parent, watching her live the dream, so to speak. I never did a lemonade stand as a kid, so my 7-year-old self got to live vicariously through Cate. And it was as much fun as I always imagined it would be.

I seriously can’t believe summer is almost over. Just two more weeks of sleeping in and hitting the pool when we can! And, because it’s summer, I didn’t really get to a lot of items from last week’s menu. We’ll see how this week goes!

MONDAY:
Spinach and Pancetta Stuffed Shells
– Salad

TUESDAY:
– Leftovers

WEDNESDAY:
– Chicken Pot Pie (still have a recipe I want to try)

THURSDAY:
– Leftovers

FRIDAY:
– Grill night…hot dogs, hamburgers
– Watermelon, baked beans

SATURDAY:
– Eat out

SUNDAY:
– Breakfast for dinner, probably waffles

    S: Pizzas. As of now, we’re looking at salami+mozzarella and figs+gorgonzola. That could changes.
    M: Quinoa+black bean burrito bowls
    T: Salt-cured roasted chicken (a la Bon Appetit) with an orzotto.
    W: Chorizo burgers that I didn’t make two weeks ago.
    R: TBD.
    F: Takeout. Kitchen is closed on Fridays.
    S: Sushi. I’m letting The Wife take me out on the occasion of my 35th birthday.

    Plus we’ll have the rotating sides of string bean salad and a roasted tomato and chickpea salad.

  2. Takes me back MANY years…to my own efforts and then my kids (who are now grown). Kids in our neighborhood do them but gotta tell ya…their mom’s really should supervise better. Horrible warm dry mix lemonade? Still…I give them a buck and you would think I was Santa. ๐Ÿ™‚

    The luxury of kids being grown…no menu planning. When I make a main course dish I’ll sometimes have the same thing several nights in a row…and I’m OK with that!!

      we made lemonade from scratch! it was everything I could do to not drink it all myself! ๐Ÿ™‚ I do love how excited the kids get…it’s soooo sweet.

    Monday: Grilled Chicken and lemon orzo
    Tuesday: Linguini with garlic cream sauce, steamed broccoli
    Wednesday: Cobb Salad with leftover chicken, garlic bread
    Thursday: Meatballs with garlic and oil, penne
    Friday: out/takeout/pizza
    Saturday: Coq au Vin
    Sunday: BBQ (burgers, chips, pickles, watermelon)

    I’ll also be baking and stocking up my freezer before summer ends. On thursday i’ll be baking chocolate chip cookies and a berry tart. I’ll also prep and freeze 2 rolls of cookie dough, 4 sheets of pie crust, creamy chicken and mushrooms, and garlic meatballs.

    Cate and her friends “did build that business”! I never had a lemonade stand when I was a kid (too rural of an area…..no foot traffic and very few cars drove by on a daily basis), but my husband and I always stop whenever we see a lemonade stand when we are out and about. We love to see how happy the kids as they carefully pour 2 cups of lemonade, handle the sale, and say “thank you” while their parents are watching from close by but trying not to be seen.

    Tues: baked cod, baked potatoes, broccoli
    Wed: Lasagna, salad

  7. My 4 year old is very excited to do a “cookie stand” at the next garage sale. Me? When selling candy bars for school, I would start sobbing at the first person who would say no, so my parents always ended up buying the whole box. Needless to say, I never did a lemonade stand ๐Ÿ™‚

    I need to go through the freezer, FoodSaver a few things, and use up a few things, but here is the tentative menu.

    Sunday-Grilled Tri Tip, Pasta Salad w veggies, Rolls
    Monday-Enchiladas and Green Salad (Enchiladas I made a couple weeks ago and froze)
    Tuesday-Stuffed Shells, Bread, Green Salad
    Wednesday-Ancho Chile Sauce Grilled Chicken, Cilantro Rice, Black Beans
    Thursday-Grilled Teriyaki Hake, Rice, Broccoli
    Friday-Pizza and Salad
    Saturday-Leftovers

    Thursday – Frittata (would love a good recipe if someone has one to share!) and salad. (Might make quiche is frittata research doesn’t happen.)

  9. I am using a deconstructed, whole, roasted chicken for our chicken dishes this week. We’re only buying organic meat (to try to consume less meat overall), so using the most economical method (i.e. whole chicken) seems to be helping!

    Sunday: Asian salmon and a fancy potato galette
    Monday: Chicken & white bean enchiladas and red sauce
    Tuesday: Pumpkin pancakes with peach/mango/spinach smoothies
    Wednesday: Spinach salad with chicken
    Thursday: Noodles with spinach pesto
    Friday: Individual, homemade pizzas
    Saturday: Out with Grandma!

    I also made potato/leek/mushroom soup, roasted red pepper soup, white bean hummus and a few batches of baked oatmeal bars for breakfasts/snacks.

    My oldest went back to college yesterday and the other two start their senior and junior years of high school Tuesday, so we will be back in a more normal routine.

    Sunday: Grilled ribeyes, corn on the cob, sliced tomatoes w/bleu cheese dressing
    Monday: Out, last day before school
    Tuesday: Waffles
    Wednesday: Grilled cheeseburgers
    Thursday: Chicken caesar salad and/or for those who prefer, chicken wraps
    Friday: I think I’m going to start a night of “eating up what’s left from the week”
    Saturday: Something on the grill

    Our school started this past week, so now getting back into our groove at dinnertime! Loved the lemonade stand story and pics.

    Our plans:
    Mon – leftovers, we made homemade marinara sauce from our garden tomatoes this weekend, and grilled up some tasty sausages! Time for take 2 with crusty bread.
    Tues – daddy at a baseball game, so it’s Mac and cheese for the girls and salad for me
    Weds – crockpot recipe for Thai style pork ribs, steamed broccoli
    Thurs – spaghetti and meatballs, salad
    Fri – pizza night

    Sun: Lemon orzo with chicken cold salad. The adults get the addition of goat cheese, olives, and roasted tomatoes.
    Mon: Flatbread night! fig & goat cheese for adults; sausage and tomato for the kids.
    Tues: Soccer practice night means taco filling in the crockpot (we eat in shifts)
    Weds: gumbo, made with Alton Brown’s roux-in-the-oven recipe as a base
    Thurs: quiche, side of veggies from whatever’s in the CSA
    Fri: salmon (see above)
    Sat: leftovers, scrounge around.

      Whitney, your menu looks awesome! We make a lot of PW food too. And Jane, do try the chicken spaghetti! It is so good I keep it in our freezer all the time so we can have it anytime! Even my toddler loves it!

  28. My kids did a lemonade/cookie stand last summer & loved it & made a good amount of $$. They keep asking when I’ll do a garage sale again so they have a stand.

    I’m so behind with everything this week, including posting this week’s menu! School orientations, getting prepped for school, getting prepped for all three of the kids to have bonfire parties this weekend (high school band one Friday night after the first football game and junior high one Saturday), and then work is crazy busy for me this week! So easy dinners it is.
    Sunday: Grilled steak and chicken over avocado, radish, jalapeno, and fresh corn salad with a cilantro-lime vinaigrette and roasted fingerling potatoes.
    Monday: Giada’s baked farro with roasted broccoli and cantaloupe.
    Tuesday: Turkey meatball subs (using the extra frozen meatballs I made a few weeks ago) with roasted asparagus and watermelon.
    Wednesday: Take-out! Chipotle burrito bowls.
    Thursday: Grandparents in town for marching band preview show so I’m making mushroom and spinach quiches with salads and fresh peaches.
    Friday: Off to a friend’s 40th birthday celebration โ€โ€ย a Cuban pig roast and then hot dogs and sausages on the grill for the band kids later in the evening.
    Saturday: Buffalo chicken sandwiches with homemade blue cheese dressing and a chopped salad.

      sorry I’m just replying now! I do not have a recipe I follow for this. It’s more of a throw whatever I have on hand together and hope for the best. here’s a rough version of what I did…

      1/3 c. honey
      2-3 tbsp low sodium soy sauce
      fresh grated ginger to taste
      2 cloves fresh garlic – minced
      some finely chopped onion
      a dash of hot chili flakes

      4 center cut pork chops
      cabbage (red, green, bok choy, whatever you got)

      place pork chops in a baking dish. top with some of the sauce. bake till done. (350, 20-25 min)

      slice the cabbage thin, stir fry w/ remaining sauce, slice pork, top a mound of cabbage with it, sprinkle toasted sesame seeds on top, and serve w/ rice.

      We got green cabbage again in our CSA this week, and I’m sick to death of cole slaw.
