Week 292 Menu

I love watching these little people. They’re even cute just eating breakfast.

This is our last week of summer! My plans? Sleep in every morning and get to the pool as much as we can!

– Leftovers

– Eat out after going to see the class lists!

– Veggie from CSA (whatever comes!)

– Quiche…this used to be one of my go-to meals, but I haven’t made it in years! We’re going to have a bunch of eggs this week from the CSA, so quiche it is!

– Pork chops…Vince on Friday Night Lights said “Let’s eat some pork chops” in the episode we watched last night, so now I’m craving them. ๐Ÿ˜‰
– These wickedly delicious creamy potatoes that my mom makes and I’ve never written about…I see a blog post in our future!

  1. Wickedly delicious creamy potatoes? Oh yeah! I wanna know.

    Sunday: Field peas, cornbread & homemade salsa on the peas
    Monday: Leftovers (or “Just less of it” night – per my 4 yo)
    Tuesday: Hawaiian Crockpot chicken (new recipe) over rice
    Wednesday: Leftovers
    Thursday: Baked potato bar (toppings: cheese, sour cream, bacon bits) with steamed broccoli
    Friday: Sloppy Joes with sweet potato fries

  2. Just finished mine. Friday is my birthday so no cooking for me lol.

    Sunday-Roast chicken, rice/gravy, butterbeans/corn, honey yeast rolls
    Monday- scratch philly steaks, baked fries, cucumbers
    Tuesday- Jalapeno chicken casserole, corn, rolls
    Wednesday- meatloaf, mashed potatoes, carrots
    Thursday- chicken parm over noodles, garlic bread

  3. S: Breakfast. I’m thinking omelettes, but it might end up being French toast.
    M: I’m trying the Meatless Monday thing here, so we’re going to go with the Eggplant, Mozzarella, Saffron and Rice Bake in this month’s Bon Appetit.
    T: Barbacoa. Against my better judgement I’m going to do this in the slow cooker.
    W: Grilled chicken.
    R: Pasta to be named later.
    F: Dinner at Elderberry Pond. Yesterday was my birthday, so my aunt is buying. Wooo hooo! Kid-free dinner. (
    S: Too early to tell.

    Somewhere along the way I’m going to do an orzotto with emmer orzo and something with a pint of roasted sugar snaps I picked up at the farmer’s market. And I’ll post the recipe for the batch of pickles I just put in the fridge to brine.

    Those are so pretty cute little ones, even just eating breakfast ๐Ÿ™‚
    Quiche is one of our go-to meals but I find I make a spinach-mushroom-cheddar one all the time (it’s our favorite). I suppose I should branch out so I’m intrigued to see what you put in yours. I can’t wait to see the potato recipe too!
    Sunday: Dill parmesan flounder, grilled zucchini, peppers, onions, and portabellos (grilling tons extra for tomorrow’s dinner too), garlic-herb bread.
    Monday: Using the extra grilled veggies to make a goat cheese & grilled veggie pasta (first cross country meet + first youth orchestra practice + dad in town = one dish meal that’s easy to reheat).
    Tuesday: Buffalo chicken sandwiches with homemade blue cheese dressing, feta & green bean salad, sweet potato tator tots.
    Wednesday: First day of school! Going out to eat.
    Thursday: Southwest egg rolls with avocado-ranch dip. Some kind of veggie. Again, an easily reheated meal since there’s another CC meet and school open house.
    Friday: Away football game and my husband and I are chaperoning the band so some of us need to eat really early so pulled pork in the crock pot with a side of crudite.
    Saturday: Cedar planked salmon with wild rice or something similar. Not completely sure yet.

    Looking forward to the long weekend and having good friends over for a rib-off โ€โ€ husbands are doing the ribs and the wives & kids are doing the sides. Looking forward to finding some new side dishes and appetizers!

    It’s my daughters 12th bday on Thursday so she picked the meal for that day

    Sun: Red beans and Rice and Cornbread (never got to it)

    Mon: Veg Head Chili Burritos

    Tues: Minestrone and yummy Crusty bread

    Wed: Burgers, Mac n Cheese, and Fries

    Thurs: Alfredo, Salad, Bread sticks and Cake

    Fri: Homemade Pizzas (or calzone which ever each person wants)

    Sat: Stirfry w. Rice

    Sun: Zoo Day for the birthday girl family day ๐Ÿ™‚

    Mon: Not a Clue yet!!

    Maui…Here we come!!! I only have 1 night for dinner and the rest of the week is sips from a coconut, tropical fish, and beautiful beaches!!! ๐Ÿ™‚

    Monday: Breakfast for Dinner–Soy Chorizo & Black Bean Scramble w/ corn tortillas, breakfast potatoes, and fruit salad.

    (I’m using the leftovers to make killer breakfast burritos for our road trip to LAX the next a.m.)

    Sat: Carnival night – eating out with friends
    Sun: Dinner at mum’s

    Sunday – Burgers, mashed potatoes, & shredded brussel sprouts (We didn’t eat this last week – went to my brother’s house instead.)
    Monday – Cheese quesadilas and Mexican rice
    Tuesday – Chilli and Cornbread
    Wednesday – Martha Stewart’s Baked Chicken Nuggets, a veggie, and macaroni & cheese
    Thursday – Mini Breakfast Quiches and Mini Grapes
    Friday – Philly Cheesesteak Sandwiches and a side
    Saturday – Out

    Tuesday: Chicken and caramelized onion panini (using leftover onions), chips, salad
    Wednesday: Salmon, buttered egg noodles, mixed veggies

    Sunday: Breakfast for dinner—blueberry and plain pancakes, berries, smoothies

    after a weevil infestation while away, we had to discard the whole pantry. I am resolving to focus on making one big thing per week so that inever experience that kind of waste again. :(. plan to piwercook to carry us through at least 5 dinners and tonight i am mking several sesame garlic chicken mozzarella rice casseroles and quinoa rice sesame balls. ๐Ÿ™‚

    Monday – CPK BBQ Chicken Pizza (recipe courtesy of the Pioneer Woman)

    Tuesday – Southwest Chopped Chicken Salad & Quesadilla Wedges

    Wednesday – Cheesy Corn Chowder, Rosemary Peasant Bread (making this a double batch and taking half over to a friend who just welcomed baby #3 to the world)

    Thursday – Leftovers

    Friday – Sour Cream Noodle Bake & Greenbeans

    Saturday – Tomato Soup & Mozarella Bites

    Love Friday night lights! We finished up the series about 6 months ago, and I find myself having so many Friday night light cravings! Such a good show!!
    Sunday-out to eat at Flat Top
    Monday-slow cooker bbq ranch country ribs and scalloped pots
    Tuesday-turkey wraps and smoothies
    Wednesday-spaghetti and meatballs
    Friday-taco salad and quesadias
    Saturday-??? We have a busy day! Probably sammies!
    Sunday-chicken and broccoli rice casserole, rolls and fruit

      we are LOVING it and we only have 6 more episodes…my friend wendy keeps saying “take it slow! once it’s over it’s over!” but it’s hard to do that, we just want to keep watching! ๐Ÿ™‚

    Well I’m on a diet so I pretty much eat salad every night, however these other people I live with still expect me to cook for them!
    Sunday- red beans and rice
    Monday- beans again
    Tuesday- roast chicken and veggies
    Wednesday- oven fried pork chops
    Thurday- beef stew
    Friday- out to eat
    Of course with issac knocking on the front door this is all pending electricity, if my power goes out, we will be eating grilled everything in my freezer or going out of town. Boo! School is already cancelled until Wednesday.

    Monday- Fish and rice
    Tuesday- Out or sushi (Iโ€™m not sure which I want and have time to do)
    Wednesday- Roommates are fending for themselves. Iโ€™ll be in KY at my parentโ€™s house.

    Monday – Green curry with CSA veggies and brown rice.
    Tuesday – Lazy chili rellenos with tortillas and homemade refried black beans.
    Wednesday – Grilled salmon and CSA veggies
    Thursday – Pizza on the grill.
    Friday – Old friend in town, dinner with our families.
    Saturday – CU game! Dinner out.

    Love your little breakfast guests … That is my favorite way to start the day, too!

    Our plans –
    Mon- grilled salmon (already marinating in yummy brown sugar, soy sauce with lots of dill and lemon), rice and steamed asparagus
    Tues- spaghetti and meatballs for kids, nice steaks for adults!
    Weds-chicken pot pie
    Fri-either Trader Joe’s yummy crispy orange chicken or pizza!

    Okay, school’s back in for a week and now we are back in the swing of meal planning – here goes:

    Sun: BBQ night with burgers, hot dogs, corn, watermelon, green salad & blackberry & peaches crisp (had parents over for the night!)
    Mon: make ahead mexican lasagna in the fridge ready to pop in the oven after work with salad and cut up veggies for girls
    Tues: grilled salmon, grilled veggies, and quinoa
    Wed: crockpot chicken cacciatore on linguine, steamed broccoli
    Thurs: back to school night, kids with parents and leftovers for us
    Fri: dinner at nana’s house for all of us

  25. It’s been so long! I’ve been unable to meal plan for almost 2 months and so happy to be back and inspired by you!

    Sunday: Crock Pot Apple BBQ Chicken, Perfect Brown Rice, and Not So Fried Okra with Spicy Scallion Dipping Sauce

    Monday: Leftover Apple BBQ Chicken

    Tuesday: Leftover something since I’m making a somewhat time consuming dessert – pumpkin bread pudding, caramel sauce, pumpkin whipped cream – for birthday celebration the next morning.

    Wednesday: Philly Cheesesteak Sloppy Joes and Crock Pot Roasted Veggies

    Thursday: Leftover Sloppy Joes & Veggies

    Friday: Lazy Spaghetti, Tomato Bread, and a tomato heavy salad that will resemble this one but with some lettuce mixed in.

    Saturday: Leftover Pasta

    Make Ahead Healthy Breakfast Sandwiches
    Pumpkin Fluff Dip & Healthy Ranch Dip for healthy snack choices

  29. First week of kindergarten in our house so a couple weeks ago I made a few dinners in advance and froze them. Now it’s one less thing to freak out over this week!

    Sunday (aka The Night Before Kindergarten): Per B’s request, easiest ever baked mac and cheese with peas and chicken apple sausage

    Monday: Kielbasa and Cabbage with pierogies

    Tuesday: Shepherd’s Pie (frozen ahead of time)

    Wednesday: Chicken & Rice Fiesta Bake (frozen ahead of time)

    Thursday: Pasta with Tuna and Tomatoes (Simply Recipes)

    Friday: Going out to celebrating surving the week!

    Tuesday: leftover chicken from Sunday
    Wednesday: Panzanella Panini I make it on a loaf of ciabatta bread and cook in olive oil, garlic powder and parmesan cheese, side of cantalope
    Thursday: Cooking club, once a year meeting where we all make something by a famous chef or a cooking magazine, this year it is cooking light and I am making the appetizer

    The weenkends are up in the air lately so I wills top here.

    Thurs – BFD! breakfast sausage, homefries, eggs, toast
    Fri – hot dogs/corn on the cob

  38. Oh my goodness!!! This is the first time in 3 years I haven’t posted my menu on a Sunday. I’ve been out of town for work. So, my husband and MIL have been holding down the fort. Here’s what’s been on the menu:

    – Pizza from their favorite place
    – Big ol’ salads
    – Build-your-own tacos and fresh fruit
    – Grilled chicken, rice and salad
    – Italian Beef in the slow cooker
    – Leftovers
    – Out

    And, of course, dessert has been Ice Cream Sundaes, Mondays, Tuesdays,……. ๐Ÿ™‚
