Being 32 weeks pregnant, I’m taking help from my good friend Trader Joe’s whenever I can!
From last week: Fish tacos (with TJ’s battered MahiMahi) with black beans and Spanish rice, grilled chicken burritos with leftover black beans and Spanish rice, crockpot Butternut squash, spinach and garbanzo bean ‘stew’ with couscous, TJ’s fettucine alfredo with added broccoli.
This week: Red lentil dal with TJ’s frozen naan + green beans, Veggie Calzones, Tofu scramble with potatoes maybe?, TJ’s mushroom fettuccine with TJ’s breaded chicken.
How do you fix your butternut squash in the crockpot? I’m overrun with them and looking for new and different recipes. Thanks.

I was kinda disorganized while making it, but it turned out great. I had decided to make it in the morning and pop it in the fridge for later that night, so I started off sweating onions and garlic on the stove top and got too hot and transferred it to the crockpot. I added butternut squash cut into 1 inch pieces with canned tomatoes and water to cover. Then I checked on it every hour or so since I was home that day. They were close to fork tender at about 3 hours. I added canned garbanzo beans and frozen spinach at this point and let it cook for another 2 hours. Everything melded nicely and the butternut squash kept its shape but was very tender. I have one of those small crockpots with only one setting, so I think it only runs on low. Good luck!

My husband and I are reversing roles this week ”” I’m business traveling (Atlanta ”” not that fun) and he’s staying home with the kids so he did a meal plan so we’ll see how it goes.
Sunday: Turkey sausages with peppers and onions on buns with huge salads.
Monday: Husband is making a chicken stew in the crock pot (to serve the multiple meal times they will have). Side of broccoli and possible some crusty bread.
Tuesday: He’s making some kind of baked or grilled tofu with a zucchini and garbanzo curry and naan.
Wednesday: Leftovers.
Thursday: Takeout.
Friday: I’ll make chili before the football game.
Saturday: ??
My girls are off of school on Friday so we are taking a fun hike to check out the pretty fall colors!

Could you share the Alfredo ravioli lasagna recipe? That sounds amazing!
Just something I threw together – no real recipe.
**frozen ravioi – 1 jar light alfredo sauce – cooked/shredded chicken – mozzarella**
In a 9×9 glass baking dish, I spread some alfredo sauce, topped with a layer of ravioli, some chicken, more alfredo & mozz. Repeated the layers and topped with a sprinkling of shredded parm. Baked covered with foil in the oven at 350 degrees for approx 45 minutes, then took the foil off baked for an additional 15 minutes to brown the cheese on top. It was a rich dish, but I did what I could to cut down on calories with light alfredo, red fat mozz, etc. Delish!

MONDAY – Was MEANT to do a chilli but forgot to defrost the mince, d’oh!! So we had Homemade chicken nuggets, homemade wedges and corn on the cobb. Scrummmmmmm!!! Always wish there was more!
TUESDAY – Chilli tonight, the boyfriend’s turn to cook 🙂
WEDNESDAY – Frozen stuff with chips and baked beans…working late!
THURSDAY – Jacket potatoes with tuna mayo and salad/baked beans and cheese for the more fussy among us.
FRIDAY – Beef stew done in the slow cooker. Love being able to just chuck it all in in the morning and having a delicious meal bubbling and ready by dinnertime. No fuss!
SATURDAY – YOUR butternut squash, cauliflower and leek soup with hot crusty, buttery rolls for dipping and mopping 🙂 Your recipie sounded LUSH so I thought I had to try it! Wish me luck…xx
