Good morning! We’re having wheat toast for breakfast, and everyone is pleased. Love it when the simplest thing works.
Well, it’s moving week, alone with the kids (Nate’s already working in San Diego). We’re going to have movers (woohoo!!!!!!!!!!), but I’m still feeling a little intimidated by the week. Think lots of happy thoughts for us!
MONDAY:

– Chicken cordon bleu (it’s in the freezer)

– Lulu’sΒ (Lulu is our neighbor, she’s bringing us dinner that night. We love Lulu and her food!)

– Jeffrey’s Hamburgers (the kids love this place, it’s our last Jeffrey’s hurrah!)
SATURDAY:
– We might be on the road, we might not. Who knows what we’ll be eating!
SUNDAY:
– Arriving in San Diego! Again, haven’t the foggiest idea what we’ll be eating for dinner! π
It was awesome to have so many more menus last week. I love January! Keep it coming my menu-planning friends! Can’t wait to see what you’ve got on the plan for this week. For those of you who will actually be cooking, I must admit, I’ll be feeling a little jealous of you. I can’t wait until our life calms back down a bit!

It’s not a very creative week but that’s why I come here every week and read the ideas. I’m excited to make Kim’s tropical rice and beans next week! On the list for next week is also Japanese Curry, which I just read about yesterday.

We love sriracha & we love ginger…you willing to share ginger-sriracha cicken thigh recipe?
Happily! We’re using this recipe, which makes a TON of sauce…we put some untainted sauce in a separate bowl for basting, and more sauce separately for dipping, before it ever touches the raw chicken. We probably go a little lighter with spraying oil, and we replace the Frank’s sauce with sriracha. We really like it – I’ve used it for mixed chicken parts, too…just adjust cooking time because the recipe is for small wings, not larger pieces of chicken:

Best of luck with your move! Wait–movers or packers? Or, hopefully, BOTH! My tip from moving a TON of times with both packers and movers? Go through your house with a video camera and make a video record of your belongings (it’s also very handy when making insurance claims). On moving day invite a friend or two over to be in different parts of the house to keep an eye on your belongings. ALWAYS purchase lunch for the workers (pizza is fine). They’ll be much kinder to your belongings. Best of luck!

Good luck with the move! My brother-in-law and sister-in-law just moved across the country to Portland, Oregon with a two-year-old. Needless to say it’s been near impossible for them to unpack anything. I couldn’t imagine it with three little ones!

I’ve got celiac so have to eat gluten free but i’m slowly converting recipes w/ G into GF so i loooove to get inspiration from others.
