Week 328 Menu

THIS is what my house smells like right now.

Now accepting bets on how fast our family of five can eat both loaves. Odds aren’t great as it’s pretty much guaranteed to be less than 24 hours. You probably could have made more money on the Kentucky Derby.

Another week, another menu!

– Omelettes with tomato, cheese, avocado and salsa
– Fruit

Waffles (Anna is freaking out this morning because I won’t make waffles, so I promised we’d have them for dinner this week)
– Scrambled eggs and/or fruit

– Leftover pulled pork sandwiches from last week (it’s Mom’s night at Anna’s school at 6:30, so I need simple dinner prep!)

– Loaded baked potatoes (idea from Jess’s menu last week, good idea!)

Homemade pizza (mushroom for the kids, honey goat cheese carmelized onion for us)

– Take out!

– Mother’s Day…gonna let Nate figure it out!

Back to business. PLEASE share your menu for the week! Whether it’s fancy or not or if you’ve shared before or not, we want to see what you have planned!


  1. Over 6″ of rain in the last 48hrs and today we finally have some sunshine!! Hallelujah!

    Have you posted your recipe for bread? I’m in between sandwich bread recipes and am always collecting new ones for my repertoire. πŸ™‚

    Sunday: Cinco de Mayo feast with friends – DIY tacos (guac, olives, tomatoes, cheese, onion, cilantro) and chips/salsa
    Monday: Homemade calzones (didn’t get to them last week)
    Tuesday: Taco salad with leftover taco fixins
    Wednesday: Pasta with pesto and chicken
    Thursday: Cheesy crab melts on a bagel (or bagel pizzas, for those of that persuasion)
    Friday: Leftovers
    Saturday: Date night! Pizza for the kids and reservations at Black Sheep Restaurant for us!

    Grill Roasted Turkey Breast
    Oven Roasted Carrots
    Mashed Potatoes
    Cranberry Relish
    Oak Leaf Pinot Grigio


  3. I can’t bake bread. There’s far, far too much patience involved, though the Celiac diagnosis for my daughter might change things.

    S: Brie, bacon, blue and basil paninis
    Meatless Monday: Quinoa pasta with avocado
    T: Chicken and pasta in beurre blanc
    W: Chicken risotto with lemon, asparagus and peas
    R: Proscuitto, tomato and spinach panini (need something quick since this is a long day at work for me) and the new grill gets delivered
    F: Takeout
    S: Too early to tell. Probably something on the new grill. Let’s say fish for right now.

      making the actual bread is no biggie, but I do find I need to time it right since it’s like a three hour process, which is sort of annoying. sorry about your daughter’s celiac diagnosis – lucky for her she has a great cook for a dad!

    There is nothing like the smell of fresh home baked bread!

    Sun-Crock pot rotissere chicken new potatoes with dill, roasted asparagus.
    Mon-Hamburger-mushroom stroganoff noodles, zucchini-thyme saute.
    Tues-5-C taquitos(chicken,cheese,chile,corn and cilantro with leftover chicken from Monday) Gina’s latin yellow rice, marinated cucumbers and tomatoes.
    Wed-Goulash, green salad.
    Thurs-Sauteed tilapia, zucchini “fries”, oil free vinegar slaw.
    Fri- The hubs and I will be out for our 28th anniversary!

    Sunday – Rib steaks, baked potatoes, garlic rolls
    Monday – Kluski noodle soup, salad
    Tuesday – Baked chicken chimichangas with sour cream and salsa
    Wednesday – Spaghetti and meatballs, salad, garlic rolls
    Thursday – Steak with gravy over noodles, peas
    Friday – Baked perch, pierogies, carrots
    Saturday – Leftovers

    Last week I made many large soup recipes. I only cook for one, so this week I have tons of leftover soup in the freezer.

    Sunday: Pizza & beer night
    Monday: Chicken Caesar wraps
    Tuesday: Leftovers
    Wednesdays: Turkey Collard Wraps with leftover soup
    Thursday: Leftovers
    Friday: Fish & Chips
    Saturday: …Leftovers.

    I’m trying to get back into meal planning. I’ve been going through a medical situation the last few months, so it’s not been easy, but my family still needs to eat! I’m thankful for the great ideas found here!

    Sunday – Orange Chicken, friend rice, broccoli and wonton soup.
    Monday – Zuppa Tuscana soup and breadsticks
    Tuesday – Chicken Alfredo (homemade sauce!) and asparagus.
    Wednesday – Paninis – Turkey, Artichoke, red peppers, etc.
    Thursday – New recipe night: Roasted garlic and chicken pizza
    Friday – Friends birthday party for hubby and I, so probably spaghetti for the kids.
    Saturday – Not sure yet, maybe burgers out.

    This week’s menu is pretty simple. I’m FINALLY graduating from college and have my last week of student teaching ahead! Plus, I need a little break from cooking.

    Sun: Frozen Pizza

    Mon: (BF cooks) Steak, Balsamic Grilled Asparagus, Grilled Romaine with Date Vinegar (My friend brought me this vinegar from France and it is wonderful!)

    Tues: Out

    Wed: BLT, Pantry Pasta Soup

    Thurs. Spaghetti with Italian Sausage (from the freezer), Salad with Blue Cheese

    Fri: Out

    Sat – Sun: I’ll be in Austin celebrating my graduation with good friends and food instead of walking across the stage. It sounded way more fun πŸ™‚

    Nothing like homemade bread! My girl and I are making some this week too. An Italian loaf. She loves getting her little hands in that dough.

    Sun. Blackened chicken burrito bowls
    Mon. Pasta w/marinara &roasted veg
    Tue. Creamy chicken taquitos (new one for us, from Annie’s Eats)
    Wed. Steak soft tacos
    Thu. Red lentil soup w/bread
    Fri. Homemade pizza

    Sunday- tacos refried beans and strawberries
    Monday- crockpot roast beef poboys and probably the rest of the strawberries
    Tuesday- honey chicken and jasmin rice with broccoli
    Wednesday- leftover roast
    Thursday- grilled stuffed burritos
    Friday- pizza
    Saturday- don’t know yet

    I am doing a three day cleanse beginning Tuesday so wish me luck. I won’t get to eat any of this.

    Yum! Nothing better than the smell of homemade bread! I make it almost weekly. We have ducks, so we have a regular supply of eggs to use up — they’re perfect for breads! I usually make braided loaves, like challah.

    Sat- hot dogs, homemade onion rings
    Sun – quiche
    Mon – whole chicken in the crock, asparagus
    Tues – spaghetti
    Wed – steak fajitas (crock), rice
    Thurs – grilled chicken salad
    Fri – homemade pizza

    I am finally in town and had time to plan this week!

    Monday – turkey lasagna, salad
    Tuesday – loaded baked potatoes (this is a coincidence! Was looking for a meatless idea too), Broccolini
    Wednesday – meatball sandwiches and salad
    Thursday – caprese salad with fettuccine and a fresh tomato sauce
    Friday – we have a big school festival, hot dogs and ice cream!
    Saturday – cod or tilapia, spinach, crusty bread
    Sunday – same, my husband will figure it out for Mothers Day πŸ™‚

    Jane I’d love if you could share the bread recipe! It looks delish!

    I’m still settling into my new place and was on rounding call this weekend so not I had zero time to plan this weekend so TWFD is nothing super exciting but here’s my menu anyway :-P.

    Sun: Vegan Veg. stirfry, rice noodles & garlic sesame Tempeh
    Mon: Frozen Pizza, baked french fries, & fresh fruit
    Tues: Nigerian brown beans porridge & fried plantains
    Wed: Humpday: leftovers
    Thurs: Vegetable lentils, brown rice pilaf & grilled corn
    Friday: Tuna Fish, Pita bread, fresh cucumbers and tomatoes
    Saturday: Potluck with a special someone :-).

  18. I’m sorry you had a rough week last week. I hope this week is better. But, I really enjoyed the perspective you gave in the last post. It’s so easy to think that everyone else has it so together, and that we’re missing something because our life doesn’t feel like the inside of a Pottery Barn catalog.

    I’ve been so stressed lately, with Junior’s constant therapies and dr’s appointments, and my daughter’s sports and activities and trying to keep the house clean and everyone fed and putting on a happy face for my husband when he gets home from work. Sometimes it’s not pretty, and I wonder what I’m doing wrong. So, thanks for keeping it real. It was definitely an encouraging word for me right now. Some seasons we are more capable than others, and the rest of the time we need to chill out and stop trying to do it all.

    Speaking of which, we had two birthday parties, a soccer game, and a baseball game this weekend. I’m still in denial that tomorrow is Monday, so my menu is less than completed. I’m starting P90X this week, so I’m going to try and eat a little healthier. We’ll see, though, because I’ve really been craving the Spinach and Mushroom Lasagna in the ATK Family Cookbook πŸ™‚

    Sunday-Chicken Salad Sandwiches, Fruit (Costco chicken salad–quite good actually)

    Monday-Friday (in no particular order)
    -Spinach and Mushroom Lasagna, Green Salad
    -“Dinner Out” at a school function
    -Roasted Tomato Basil Soup, Green Salad
    -Veggie Omelets, Fruit Salad (thanks for the idea, Jane!)
    -Tacos, Steamed Carrots, Slow Cooker Refried Beans

    This week I decided I didn’t want to go to the store, and we’re going to “fend for ourselves” all week with what we have in the fridge & pantry…
    Sun – leftover chicken fajitas & spanish rice
    Mon – turkey burgers w/ sweet potato fries
    Tue – “toasted” raviolis
    Wed – baked penne
    Thu – tamales
    Fri – steak w/ potatoes & green beans

    Not too bad for scavenging the freezer!

  20. Lunch:

    Visiting Family
    PB&J, chips, carrot sticks
    Sweet-and-Tangy Roasted Pork Tenderloin, fried potatoes
    Turkey Chili/Black Bean Chili, corn bread muffins
    Breaded Pork Chops, mac-n-cheese, peas
    Ribs, potato salad, steamed carrots


    Eat out (traveling)
    Tangy Black Bean Soup
    Baked chicken nuggets, tator tots, carrot slices, apple slices
    Salami sandwiches, grilled onions, sliced tomatoes
    Tomato soup, croutons

    We have been gone all weekend visiting family. I’m glad to be home and back to the our menu plan. I like having a plan and knowing what it is. πŸ™‚

    We are also having waffles for breakfast one day this week. There is pancake mix in the pantry that we need to use and I don’t feel like pancakes. Waffles will be a nice change.

    Sunday – took the girls to the ballet and we grabbed dinner afterward
    Monday – whole roast chicken, probably some carrots and potaotes to go with it or whatever I have in the fridge for veggies. I haven’t looked yet.
    Tuesday – homeade pizza (well, “semi-homeade” if you will), I recently found some great pizza crusts at Target, so I start with those and then try different toppings. This week I think I’ll try a chicken alfredo version.
    Wednesday – enchiladas
    Thursday – not sure yet – maybe leftovers? I’ll be out of town so something easy for the babysitter
    Friday – out
    Saturday – we’re grilling for my dad’s birthday / a mother’s day celebration

      why so many tomatoes and cheese from the wedding? interesting leftover ingredients!

    • Lots of leftover tomatoes because we forgot them at home for the caprese salad & had to pick up 30 more to use at wedding. The gourmet cheese is because I bought enough for 62 guests but only 40 arrived. We sent leftovers w/ everyone & I kept the cheeses. πŸ™‚

    Yummo… I love love homemade bread, as does my family! My hubby surprised me and the kids with a trip to visit my parents in Texas. The first time in a year, so my last week menu went right out the window. So, I’m just going to copy and paste! Maybe a couple of tweaks….but not much.

    Mon- Meatless Monday…except there was meat! My mom sent us home with a large frozen hickory smoked turkey. We had the turkey dinner spread.
    Tues- Shrimp pasta primavera, salad and bread
    Wed- World Cuisine Wed.( Poland)”¦ Homemade Pierogies,Kielbasa and Polish Apple cake
    Thurs- Homemade Korean Spring rolls and Bahn mi sandwiches
    Fri- Family out for Iron Man 3… plans
    Sat- Gyros, cotttage fries and bakalava
    Sun- PoBoys”¦

    I know it’s already mid week – but my meal planning has changed from Sun-Sat to Thurs-Weds (the joys of grocery shopping during the week with all 3 kids in school — woohoo!)

    So, just to be different…

    Th: Tuna Melts on English Muffins with Tomato Soup
    F: Personal Pizzas with Salad
    Sa: Breakfast for dinner – Corned Beef Hash with Poached Eggs and Sourdough Toast
    Su: Mother’s Day, baby — sweet hubby will need to work it out
    M: Oven baked BBQ chicken thighs with roasted potatoes and broccoli
    T: Shrimp Pad Thai with Green Beans (spicy for the peeps that like spicy)
    W: Leftovers/Frozen/Sandwiches – whatever you can find
