So far, this summer feels like summer. The weather’s been warm, we’ve gone to the pool almost every day since the last day of school, and it’s just been plain fun. Oh, and we’ve eaten a lot of these.
I can’t believe it’s menu time again! This morning I was laying in bed thinking, “Ugh. I don’t want to plan a menu.” But then I realized no matter how much I don’t want to, we still have to eat, so I might as well. And that’s when I stopped hitting snooze. Good thing, I think it was my 7th snooze.
There are quite a few carry-over’s from last week. When you have guests in town, schedules tend to change pretty rapidly!
MONDAY:
– Orange chicken (the frozen kind from Costco) and rice
– Baby Broccoli
TUESDAY:
– Stuffed Shells (didn’t make these last week)
WEDNESDAY:
– BBQ night – Vegetarian Chickpea Burgers and Hot Dogs
– Watermelon, baked beans and more!

– Moosewood Pasta Primavera
FRIDAY:
– My sister’s last day in town…I think we have to eat out for the occasion!

– Breakfast for dinner! I think Swedish Pancakes, if the weather isn’t too hot…Cate LOVES them and I actually haven’t written about them yet, so maybe it’s time!

How do you cook your baby broccoli?
so, I get a big sautee pan with a lid – put the baby brocolli in there with like 2 Tbsp. of water and steam on medium-high heat until they are bright green – then I dump off any water that is still in the pan, splash some olive oil over the broccoli, then sautee with the oil and salt and pepper for just a little bit. it’s scrumptious!
So…pasta primavera…I make a similar recipe, but roast the vegtables in the oven (425) with olive oil, kosher salt, and italian seasoning. Toss the roasted veggies with the bowtie pasta and add 1 cup of Parm. It’s so, so good!

It started feeling like summer here when we picked up our CSA box this week. This ‘summer abundance’ they’ve been talking about for so long is finally here!

Monday – chickpea patties and a tzatziki sauce inspired coleslaw
Tuesday – Pearled couscous salad (grilled veggies with a miso yogurt sauce)

I made the chocolate chip pretzel bars this week for a dinner I went to–everyone loved them! And you were totally right about needing time to cool… I rushed that a little bit. I wouldn’t make that mistake again!

Another week, and another new recipe!! I’ve always heard people talk about cincinatti chili, but chili over spaghetti noodles kinda creeped me out. Not sure what happened, but I came across a recipe and decided I just had to try it. Pretty dang good – even having leftovers for lunch today!

I love that you tried it – and actually liked it! I must admit, I’m hesitant myself. congrats for being adventurous!
It wasn’t like a Texas chili, which is what has always made me hesitant to try it. I believe it was a greek immigrant that originally created it – so there are some other great spices in the “chili”, like allspice, cocoa, and cinnamon. We had it “four-way”, with the spaghetti, cheese, onions and oyster crackers. Even the leftovers were good!

This week is full of recipes that can be thrown together before baseball practice, before church, and after music lessons. Each and every day seem full in the evenings. Making it a priority to have dinner together seems difficult but it’s important to our family.

not silly at all! yes, it’s in the freezer section. the same company that makes the orange chicken also makes teriyaki chicken and I think another flavor, too. should be pretty easy to find! 🙂
