Week 231 Menu

So far, this summer feels like summer. The weather’s been warm, we’ve gone to the pool almost every day since the last day of school, and it’s just been plain fun. Oh, and we’ve eaten a lot of these.

I can’t believe it’s menu time again! This morning I was laying in bed thinking, “Ugh. I don’t want to plan a menu.” But then I realized no matter how much I don’t want to, we still have to eat, so I might as well. And that’s when I stopped hitting snooze. Good thing, I think it was my 7th snooze.

There are quite a few carry-over’s from last week. When you have guests in town, schedules tend to change pretty rapidly!

– Orange chicken (the frozen kind from Costco) and rice
– Baby Broccoli

Stuffed Shells (didn’t make these last week)

– BBQ night – Vegetarian Chickpea Burgers and Hot Dogs
– Watermelon, baked beans and more!

Moosewood Pasta Primavera

– My sister’s last day in town…I think we have to eat out for the occasion!

– Leftovers

– Breakfast for dinner! I think Swedish Pancakes, if the weather isn’t too hot…Cate LOVES them and I actually haven’t written about them yet, so maybe it’s time!

    How do you cook your baby broccoli?

      so, I get a big sautee pan with a lid – put the baby brocolli in there with like 2 Tbsp. of water and steam on medium-high heat until they are bright green – then I dump off any water that is still in the pan, splash some olive oil over the broccoli, then sautee with the oil and salt and pepper for just a little bit. it’s scrumptious!

  3. So…pasta primavera…I make a similar recipe, but roast the vegtables in the oven (425) with olive oil, kosher salt, and italian seasoning. Toss the roasted veggies with the bowtie pasta and add 1 cup of Parm. It’s so, so good!

    Tuesday: Hot Dogs on homemade hotdog buns, chips and fruit salad
    Wednesday: Homemade Pizza
    Thursday: Leftovers
    Friday: Spaghetti with tomato sauce (didn’t get to it last week)
    Saturday: Steak and roasted potatoes
    Sunday: at the inlaws

    • We do. Had that last week. A customer of mine requested it. I thought it was a bit odd for summer, but I like to comply with requests so we had it and it was soooooo good. Enjoy.

    I seem to be in a spicy mood this week.
    Sunday-Grilled Santa Fe Burgers (Pennies on a Platter) and Sweet Potato Fries
    Monday- Spicy Chicken Salad (Food Network Mag. J/A issue) with Creamy Jalapeno Ranch (Confections of a Foodie Bride)
    Tuesday- Stir Fry
    Wednesday- Spicy Beef and Black Bean Soft Tacos with Cucumber, Tomato and Lime Salsa (Kalyn’s Kitchen)
    Thursday- Portabella, Sausage and Garlic Pizza
    Friday- Chili Mac
    Saturday- TBD…leftovers most likely

    It started feeling like summer here when we picked up our CSA box this week. This ‘summer abundance’ they’ve been talking about for so long is finally here!

    Saturday – salad, rosemary roast potatoes and mahi mahi
    Sunday – we’re bringing egg salad sandwiches, brownies and chips to help family move
    Monday – chickpea patties and a tzatziki sauce inspired coleslaw
    Tuesday – Pearled couscous salad (grilled veggies with a miso yogurt sauce)
    Wednesday – pesto pasta with summer squash
    Thursday – leftovers
    Friday – olive oil, rosemary, new potato and goat cheese flatbread

    Sunday: Turkey burgers & steamed green beans. I’m going to use this recipe, it’s new for me.
    Monday: Oriental Chicken Salads
    Tuesday: Stuffed Shells w/ asparagus. I’m going to use Jane’s recipe.
    Wednesday: Mexican Stew
    Thursday: Breakfast for dinner… I’m thinking a scramble & bagels w/ cream cheese.
    Friday: Fajitas
    Saturday: Date night

    I made the chocolate chip pretzel bars this week for a dinner I went to–everyone loved them! And you were totally right about needing time to cool… I rushed that a little bit. I wouldn’t make that mistake again!

    Sunday: Son’s Birthday. His choice.
    Monday: Cousin’s Wedding/ 4th of July

    Monday: Cincinnati Three Way Chili Spaghetti made with lentil chili and veggies
    Tuesday: Chickpea tacos and kale chips
    Wednesday: Salt and vinegar potato thins with green beans and homemade baked beans
    Thursday: Vegan black bean sloppy joes and sweet potato fries
    Friday: Zesty white bean burgers with corn on the cob
    Saturday: Black bean enchiladas with roasted veggies

    Tues: Stir fry with noodles and tofu
    Wed: Turkey basmati rice pilaf with cucumber raita

    Not sure what order I’m gonna make all this this week, but here goes:

    Sunday: Penne w/ tomato sauce w/ground chicken sausage, mushrooms and peppers. Bread.
    Monday: Barbeque chicken and black bean burritos.
    Tuesday: Date night. Something the kids can eat with the sitter.
    Wednesday: Enchilada pizza
    Thursday: husband works late – Trader Joe’s or Costco frozen dinner
    Friday: ditto to Thursday, or leftovers
    Saturday: out, or bbq

  18. I’m out of town for work this week. When discussing meals for the week, my husband shrugged and said, “How hard can making a menu be.” Oh no he didn’t!! Husband and kiddo are on their own!!!

    This week is gonna be crazy. I’ve got a plan, but it’s just barely a plan. So here’s the game plan in no particular order:

    Mini turkey meatloaves, mashed potatoes, greenbeans
    Swedish (turkey) meatballs, egg noodles, salad
    Italian veggie pie (tofu), broccoli, salad
    Slow cooked BBQ chicken sandwiches, pasta salad, sweet and sour coleslaw, strawberry lemonade icebox pie w/ fresh whipped cream

    Monday – More pizza, using the leftover dough

    Oh, Swedish Pancakes! I haven’t made those in AGES. They’re perfect for summer, though, with lovely fresh berries to squish over the top. Thanks for reminding me!

    Monday: Parmesan chicken cutlets, caprese salad (yay for local tomatoes!), wilted spinach
    Tuesday: Beet and corn panzanella, fresh fruit
    Wednesday: “frog slime” meatballs (turkey and spinach), garlic-herb noodles, salad
    Thursday: BLT pitas and assorted farmer’s market salad creations
    Friday: Fend night
    Saturday: Dinner with the folks!

    Another week, and another new recipe!! I’ve always heard people talk about cincinatti chili, but chili over spaghetti noodles kinda creeped me out. Not sure what happened, but I came across a recipe and decided I just had to try it. Pretty dang good – even having leftovers for lunch today!

    Sun – Cincinatti Chili
    Mon – Hoisin Flank Steak w/ cucumber salad
    Tue – Chicken Tacos w/ Mexican Rice
    Wed – Homemade Pizza or Calzones
    Thu – Vietnamese-spiced Pork Chops w/ rice
    Fri – Dinner from the freezer

  28. We are having the Costco orange chicken on Thursday. My whole family can agree on that meal! We are also having:

    *Taco Salad with Cilantro Dressing and Warm Tortillas
    *Homemade Buttermilk Chicken Tenders with Crash Hot Potatoes and Steamed Veggies
    *Sausage and Pepper Sandwiches (peppers from our garden) with chips and carrot sticks.

  30. This week is full of recipes that can be thrown together before baseball practice, before church, and after music lessons. Each and every day seem full in the evenings. Making it a priority to have dinner together seems difficult but it’s important to our family.
    Mon: mini italian meatloaves, with steamed green beans, and fresh wheat bread
    Tue: sandwiches & soup
    Wed: Ham & Cheese quiche with a spinach salad
    Thur: grilled veggie pasta
    Fri: Chirken Salad sandwiches on croissants with fruit salad on the side
    Sat: out of town baby shower celebration
    Sun: Eat out or eat leftovers.

    I’m new to cooking, so Jane’s advice and website is extremely helpful! I made Jane’s Lentil Soup recipe last week and my husband loved it!

    I’m planning this week and part of next week all at once, because we leave for vacation next Wednesday (yay!):
    Monday: Mesquite pork loin, baked potatoes, squash fritters
    Tuesday: Broiled wahoo with bruschetta topping, pasta with zucchini and pesto
    Wednesday: Turkey breast, wild rice, roasted broccoli, mushroom gravy
    Thursday: Chicken with artichokes and angel hair pasta, caprese salad
    Friday: Breakfast for dinner (or maybe quiche Lorraine?), fruit salad
    Saturday: Whatever looks yummy at the farmer’s market that morning
    Sunday: Bowtie lasagna, salad, garlic toast
    Monday: Barbecue chicken, potato salad, coleslaw, cornbread
    Tuesday: Pizza

      not silly at all! yes, it’s in the freezer section. the same company that makes the orange chicken also makes teriyaki chicken and I think another flavor, too. should be pretty easy to find! 🙂
