Week 350 Menu

We spent half the day at the beach yesterday with the kids, even though there were plenty of “to-dos” on the list waiting for our attention. I am so glad we did as Cate declared it the best day ever. Ten points for family time! We also saw a very beautiful sunset, thanks to smoke from a wildfire at nearby Camp Pendleton. My phone was dead by the time sunset rolled around, but the sky was beautiful all afternoon. Crossing fingers that the fire doesn’t cause too much trouble.

This week we’re doing something kind of crazy – we’re driving to Salt Lake City to see Stanford play the University of Utah. The only reason I went along with this plan is because our kids will see their cousins and we can also visit my grandparents. I just told my grandma we are coming to see them Friday and she said it was the best news she’d ever heard in her whole life. While I know this most certainly is not true, I do know that she will savor our visit very much. It will be a great trip!

    Back after a long fundraising season.

    S: Ham, gruyere and spinach paninis
    M-R: no assignments yet, but I have potato and chorizo tacos, Mexican chicken soup, sausage and bean pasta, and eggplant parm.
    F: I’m hoping that we have child are so The Wife and I can finally celebrate my birthday out ( it was Aug. 25)
    S: We are supposed to get together with friends or have dinner with the inlaws. Either way, I’m cooking.

  3. Sounds like an awesome trip!! We just bought “The Little Mermaid,” and our 4yo has (and consequently, WE’VE) watched it 3 times this weekend already. Ay yay yay!

    Monday: Burgers on the grill with homemade buns
    Tuesday: Soba noodles with veggies
    Wednesday: Asian lettuce cups
    Thursday: Pizza casserole
    Friday: Leftovers
    Saturday: Out?

    Sunday- cheesy potato soup and breadsticks

    Tuesday- ranch cheddar chicken and rice
    Wednesday- steak sandwiches
    Thurdsay- leftover night
    Friday- breakfast for dinner, probably waffles and berries
    Saturday- out for my birthday. All my kids are sleeping out!

    Sunday: Chicken Pamigana (even though it is 88 degrees out…whew!), pasta and steamed Swiss Chard from the garden.
    Monday: Spicy pork and green beans ( a Chinese Take out knock off I found in family fun years ago), rice, fruit
    Tuesday: Black Bean Pumpkin soup…it is supposed to cool off by Tuesday

    Wed: Leftover Chicken Parmigana on crusty bread for sandwiches, beet salad, we are still getting beets in our garden
    Thursday: Keilbasa and Pierogies, veggie
    Friday…hopefully a date night…as get as far as Thursdays lately, life too unpredictable with college kids and me being tired after a long week of work!

    oh, and I had a sample of Trader Joe’s Cheddar with bacon in it. They had made grilled cheese sandwiches on rustic bread….it was so good. I bought some, that will be my fill in meal this weekend….yummy.

    Not sure what the weekly menu is yet, but I just have to say we were also on a SD beach yesterday & had a fab day! The weather was perfect, the water was warm, the tide was low & the fire at Camp Pendleton made for a beautiful sky! I do hope the fire is contained & didn’t cause too much damage.

    It feels great to be organized for the week. Even though I’m posting on Monday, I did have the menu plan all done by Sunday morning!
    Sunday: Hoisin cedar-planked salmon, chili-lime grilled shrimp, smashed yukon golds, broccoli, and an assortment of colored carrots from our garden.
    Monday: Pierogies, turkey sausage, and sauteed red cabbage. Probably green beans too.
    Tuesday: Roasted corn and potato chowder with crusty bread.
    Wednesday: Eggplant parmesan served with pasta and roasted tomato sauce (using up the last of the cherry tomatoes from the garden). Salad too.
    Thursday: Ham, pear and cheddar paninis. Served with spaghetti squash gratin and some other veggie tbd.
    Friday: Smoked pulled pork (from the freezer) with a chopped salad.
    Saturday: Date night for husband’s birthday! Kids will be at homecoming and at friend’s houses.

    Our menu this week is a little thrown off by the fact that I will be at a convention for a few days (though making the drive home each night to delivery bottles for the baby). My MIL is coming to stay and help with the baby and meals. She usually shows up with her own ingredients and recipes. She is amazing.

    Sunday: Chicken fajitas and cilantro lime rice
    Monday: Chili (from the freezer)
    Tuesday: Spaghetti and meatballs (from the freezer)
    Wednesday: Whatever my MIL prepares (I will be at the opening night convention dinner)
    Thursday: Whatever my MIL prepares.
    Friday: Whatever my MIL prepares.
    Saturday: Roast chicken with carrots and potatoes

    Sunsets are sooo pretty this time of year! Here is my low grain, gluten free menu for the week
    Sun – Pizza Casserole – sorta like crustless pizza – sounds like it should be good but i wouldnt make it again.
    Mon – Pesto Chicken Salad
    Tues – Grilled Cheese & Veggies
    Wed – Spaghetti Squash & Sauce
    Thurs – Out…going to see Sleeping Beauty Ballet in CLE
    Fri – Grilled Chicken and Sweet Potatoes
    Sat – Wine/Cheese/Fruit/Wine 🙂

    Also this weekend is our Thanksgiving so turkey and all the fixins will be in the works.

  26. Sounds like a perfect day. Unfortunately, I think it’ll be cold and rainy while you’re in SLC. You’ll have to eat plenty of Dunford donuts to make up for the weather.     Well, I’m posting on Tuesday… Due to sickness through our house. I guess with 5 kiddos its gonna happen.

    Monday: Baked potato bar; all the fixins, I mean all of em’
    Tuesday: White beans, rice, cornbread and salad
    Wednesday: Make your own calzones..
    Thursday: Shrimp etoufee, rice and salad ( french bread of course)
    Friday: Epcot Yorkshire House Fish n chips
    Saturday: Fajitas and Empanadas
    Sunday: Cottage pie and clover rolls
    Monday: Meatloaf muffins, smashed taters, broccoli and rolls

    Veggie alternatives for us Vegetarians in the house.. X2
