Week 365 Menu

We’re having a few friends over today to watch football (Go Pats!) and I made a banana cake with cream cheese frosting. We can’t wait to dig into this cake!!!!

Confession: I did not make one thing on my menu last week. I think that might be a record. It was an unusually busy week and I never made it to the store, but this week should be better! I’ll only do a few repeats from last week. Maybe that menu was jinxed!

  1. By contrast, I actually made everything on my menu last week!…on the intended night, even! A veritable miracle!

    Sunday: Standing rib roast and asparagus
    Monday: Bacon, egg, and cheese sandwiches on English muffins and steamed broccoli
    Tuesday: Lettuce cups with leftover roast beef
    Wednesday: Homemade pizza: BLT pizza!!
    Thursday – Saturday: Our last Disney trip as Florida residents

    Sunday – Spaghetti with meatballs and sausage
    Monday – pork with sauerkraut and mashed potatoes
    Tuesday – chorizo stuffed peppers
    Wednesday – lentil soup (never got to this last week)
    Thursday – I’m out – son and husband are getting hoagies
    Friday – leftovers
    Saturday – making pizza!

    Sun: bbq burgers and oven fries. If it is going to act like summer here in CA, we will eat like summer
    Mon: Crock pot chile verde over rice
    Tues: Tortialla soup, salad, small plate of nachos
    Wed: leftover burgers and onion rings
    Thurs: Ok, this is so bad, but I am working full-time with extra long hours right now and tasted this at Trader Joe’s the other night, their tortellini tossed with their spinach artichoke dip. Bagged ceasar salad…oh my, my culinary skills are changing until I can catch my breath with this job
    Fri: leftover chile verde in tortillas with fruit.
    I have to cook once and eat twice now, there is simply no time.

    Not sure how this weeks menu will go since “the flu cooties” caught us on Friday and little or no appetite unless its cough drops, hot tea or water. Yuck!

    Sunday – Chicken broth with mini bowtie pasta and veggies
    Monday – Herb roasted salmon fillets, buttered garlic noodles, applesauce
    Tuesday – Cold temps back = Orzo and spinach soup
    Wednesday – Beef stew in the crockpot
    Thursday – Grilled cheese and leftover soup
    Friday – Leftover beef stew
    Saturday – Brats and baked French fries

    Wed: tortellini in pink sauce, asparagus, salad
    Thurs: homemade spinach & feta pizza, salad
    Fri: pulled pork sandwiches, broccoli slaw
    Sat: not sure yet

    Monday – Chicken & Noodles, mashed potatoes, gr. beans
    Tuesday – Ramen Noodle Steak stir fry, applesauce
    Wednesday – Leftover Chicken & Noodles
    Thursday – Chicken Enchiladas, refried beans
    Friday – Oldest Daughter home for weekend so whatever
    she requests.
    Saturday – not sure yet

    Don’t hate me – I love the East Coast – but we are die hard Broncos/Peyton Manning fanatics in this house. We are super excited they won! And, even though I grew up in Seattle, I still want the Broncos to win the Superbowl. Told ya we are die hard. 🙂

    Today – quesedillas, chips & salsa
    Monday – Breakfast burritos & buttermilk biscuits (using leftover buttermilk from my syrup)
    Tuesday – Crockpot chicken & salsa burritos
    Wednesday – Hamburger Helper. I know it’s gross, but it’s one of few things my picky 3 year old will eat and my older boys eat anything so it’s a win, win. I will probably eat Cheerios.
    Thursday – Baked Potato Bar. Gonna try cooking them in the crockpot.
    Friday – My “baby” turns 12!!! (my oldest) Can’t believe it… We will be having 14 of his friends sleep over. We are crazy! So, there will be lots of pizza, soda, junk, etc.
    Saturday – Detox from Friday. Probably lots of salad! 🙂
    Sunday – Pancakes

      haha! we are hard core andrew luck fans, but it would be kinda fun for peyton to be able to win the super bowl and say “neener neener” to the colts 🙂

      Oh, we love Andrew Luck too! It gets a little tough when some of our favorite athletes have to play against each other!

    I just realized i haven’t posted in forever ! Here’s my gluten free menu for this week
    Sun – Chicken w lentils from all recipes (it was good!)
    Mon – Toasted quinoa w pear salad
    Tue – Veggie quesadillas
    Wed – Crockpot chili
    Thu – Portabello Bun Burgers & grilled veggies
    Fri – Wine, cheese, fruit, crackers movie night
    Sat – Marsala mustard chicken w shallots and cauliflower mashed potatoes

    Sunday – pork roast, twice baked potatoes, and corn

    Monday – chicken koftas with cucumbers and yogurt (this Martha Stewart recipe and they were YUM: I didn’t have pitas so I used some extra fluffy flour tortillas and they worked great.

    Tuesday – salsa verde beef tacos

    Wednesday – cheesy taco pasta

    Thursday & Friday – out

  27. Life happened and this menu has actually changed twice since putting it together last week. I’ve learned that this is okay, that a plan needs to be flexible.
