Week 387 Menu

Happy Sunday! Sooooo…I’m not planning a menu this week because it’s vacation time! We are headed to the northeast to visit all the grandparents and we are SO excited for our trip! Toyota will be lending us a hybrid Highlander again this year for our trip for the miles and miles and miles of driving we’ll be doing.

This is one of the few weeks of the year that I let myself take a break from meal planning. Which makes you sharing your menus even more important! We need your menus so you can get inspiration from one another! Please share your marvelous menus, no matter how fancy or plain!

  1. Have safe travels! And, may the bickering be at a minimum. 🙂

    Sunday: Homemade pizzas (pear/gorgonzola with caramelized onions) and lettuce from the garden
    Monday: Baked pasta and Asian green beans
    Tuesday: Mexican lentil (from Sarah K.) lettuce bowls
    Wednesday: Beet burgers on homemade buns
    Thursday: Black beans and rice with cornbread
    Friday: Leftovers
    Saturday: Out.

    Friday: I think I’m on my own so I’ll probably make a salad

      hi…would love your recipe for root beer pulled pork. i was just at a restaurant that served something similar but they couldn’t be sure it was gluten free so i was thinking i’m sure i can make it on my own. I saw your post and was thinking it must be fate 🙂

      Hi Tara,
      I got the recipe from My favorite part of the recipe, is how easy it is to make! Here it is:

      Crock Pot Root Beer Pulled Pork Sandwiches

      1 – 1 to 3 pound pork roast – I used a 1 1/2 lb pork sirloin tip roast
      2 – tablespoons grill mates pork rub
      2 – cups root beer
      1 – small onion, cubed
      2 – cloves garlic, chopped
      2 – teaspoons liquid smoke
      2 – tablespoons Yellow Label Syrup (Found at Walmart)
      1 – 18 oz bottle Sweet Baby Rays BBQ sauce or use your favorite

      Rinse the pork roast off with water and pat dry with a paper towel. Rub two tables spoons pork rub all over making sure to cover the whole pork roast.

      Heat a large skillet over medium high heat. Get the pan nice and hot and then add the roast.

      Sear the pork roast on all sides. Remove the roast from the pan and add to a crock pot. Add the onion, garlic, one teaspoon of liquid smoke and one cup of root beer.

      Cover the crock pot and cook on low for 5-6 hours. When done remove the roast from the crock pot and discard the liquid and onions.

      Let the roast cool and then shred the pork into pieces using two forks. Return the shredded meat to the crock pot.

      Add the remaining one cup of root beer, BBQ sauce, yellow label syrup and remaining teaspoon of liquid smoke and stir to combine.

      Cook the shredded meat an additional hour on low. Serve on hamburger buns, rolls or hoagies.

      Substitute for Yellow Label Syrup: Karo, Cane or Moonshine syrup. Molasses, brown sugar or even honey can also be used. The Yellow Label Syrup just gives the pulled pork a touch of sweetness.

      This is directly from her website, I have used other cuts of pork (boneless ribs, etc. depending what’s on sale) I use my own pork rub. Hope this works for you!

    Thu: Egg salad with green olive sandwiches
    Fri: Big salad topped with grilled fish (whatever is freshest)
    Sat: Baked potato bar

    Thursday-Date will have something easy…mac and cheese maybe

    Half of my family is out of town these days and we will join them later this week. I’ve learned that it’s actually harder than I thought to cook dinner for just me and a 9 year old and a picky 4 year old. They don’t want actual meals – just chicken nuggets and such. No thanks! Yet if I cook a full meal, there are too many leftovers. So, we are just getting by right now on whatever! Trying to be creative with what’s left in my fridge until we leave. Haha!
