Week 389 Menu

Happy belated Fourth of July! On Friday night my parent’s neighbors shot off a bunch of totally awesome {most definitely illegal} fireworks at their house, so we enjoyed a show right from my parents’ porch. Then on Saturday night we went to Vernon Township, New Jersey for their show put on by the local fire department. I’ve been going to big city fireworks shows for so many years that I forgot how wonderful a small town show is. It was perfect in so many ways.

I have a kinda-sorta-menu this week! I’m not going to get all fancy with a PDF and stuff because it’s not a particularly helpful menu for anyone, but at least it’s on paper, right? 😉

– Fondue night! (We’re going to try making fondue with the kids, I’ll be sure to let you know how it goes!)

– Taco night

– Chicken and hot dogs on the grill
– Corn on the cob and fresh fruit

– Eat out

– Leftovers

– Driving back up to New England that evening, eating on the road

– Not even sure what town we’ll be in that night, so playing it by ear!

    Monday- Shrimp Spring Rolls w/ peanut dipping sauce
    Tuesday- Pesto Salmon, rice, veggie
    Wednesday- Carnitas Enchiladas, Spanish Rice, Corn
    Thursday- Coconut shrimp & Fishsticks, tatortots & a veggie
    Friday- Not Your Mama’s Meatloaf (Udi’s recipe), mashed potatoes, veggie
    Saturday- Potroast w/ veg/potatoes in it, salad
    Sunday- Apple & Onion Brats over rice , salad

    Sunday – out for husband’s birthday
    Monday- chicken on the grill with grilled corn. On the cob
    Tuesday – leftovers from Saturday’s cookout
    Wednesday – fend
    Thursday – hoagies
    Friday- cookout with lots of family celebrating sil birthday!
    Saturday – party for my mil 80th birthday celebration!

    Monday – Chicken Stroganoff and Rice
    Tuesday – Sweet and Sour Pork with Spaghetti Noodles
    Wednesday – Korean Beef with Rice
    Thursday -Capricciosa Calzone
    Friday – Tortellini with Bacon and Peas
    Saturday – Smashed Black Beans with Tortilla Chips and Seasoned Meat

    Thursday — dinner party for recently married friends: chicken Marbella, rice salad, minty cucumber salad, devilled eggs, challah, berries in puff pastry shells with zabaglione
    Friday — leftovers, challah
    Saturday — eat out
    Sunday — nachos
    Monday — fake burgers

    Sat – Grilled Burgers with all of the fixin’s, Potato Salad, 3-Bean Salad, Strawberries
    Sun – Birthday dinner for my 15 year old.

    We are leaving next Saturday for our vacation, so easy dinners this week!

    Goulash, corn, carrots
    Oven fried chimichangas, salad
    honey mustard chicken, broccoli
    hamburgers, fries, cole slaw
    Texas Hash, veggies (leftover from last week)

    Monday – Chipped ham bbq’s on toasted buns, fries
    Tuesday -Salmon, baked potatoes, green beans
    Wednesday – BFD – Egg, ham & cheese tortillas, blueberry frozen yogurt
    Thursday – Pizza, salad
    Friday – Ranch chicken quarters (in the crockpot), garlic noodles, peas
    Saturday – Leftover chicken and veggies with pasta, garlic bread

  8. I barely cooked at all last week, so this week I’m sticking to the plan…

    burgers and broccoli
    shredded chicken loaded nachos and potatoes
    shrimp tacos
    blackberry bourbon chicken and mashed potatoes and sauteed carrots
    roasted tomato and garlic pasta

    M: fish in coconut-curry sauce/stir-fry vegs/steamed rice

    Tu: Cobb salad/garlic cheese toast

    W: grilled chicken with mole sauce/ranch beans/rice

    Th: leftover makeover–chicken mole enchiladas/leftover beans/salad

    F: picnic @the park for moonlight movie to watch Frozen…turkey-bacon-avocado wraps/potato salad/fruit salad/popcorn for snacking & brownies for dessert

    Sa: BBQ & firework show at friends…bringing appetizer but not sure what yet

    Wed & Thu: Business travel
    Fri & Sat: Hubby traveling….I will probably eat big salads each night.

    Trying a new CSA this year, and we got a ridiculous amount of mizuna.

    Fri — out
    Sat — out
    Sun — chicken, roasted potatoes with mizuna, corn on the cob
    Mon — quiche with sausage & mizuna, bagels, fruit salad
    Tues — chicken salad pitas (with mizuna), baked fries
    Wed — pizza Wednesday! (probably mizuna pizza, lol)
    Thurs — shrimp risotto with mizuna

    Sun: turkey spinach tacos, corn
    Mon: bagel sandwiches with turkey, chive cream cheese & spinach, raw vegetables
    Tues: grilled salmon, new potatoes, green beans
    Wed: pesto tortellini, salad
    Thurs: breakfast for dinner- eggs, toast, fruit
    Fri: grilled pork tenderloin, applesauce, salad

    Sun: Shrimp Po-Boys, Fries and Hush puppies. Swimming in the Bayou!

    Mon: Red beans and rice with sausage, salad and piboy bread

    Tues: Eggplant pirogue, salad and bread

    Wed: Stuffed Pork chops, cornbread stuffing, green beans, corn and rosemary/garlic taters.

    Thurs: Homemade Greek Gyros, cottage fries and Greek salad

    Fri: Homemade Pizzas

    Sat: Ribs/whole chicken (Tuna for me) smoked on the pit, all the sides

    Sun: Crockpot chicken , rice and gravy, corn and green beans and Hawaiian rolls

    Do tell how the Fondue Party came out! I love, love Fondue!

    Tuesday: Lime-honey salmon (from this site) and rice w/ corn
    Wednesday: BBQ chicken sandwiches and corn on the cob
    Thursday: Salmon pasta salad (balsamic)
    Friday: Lemon-dill-basil pasta with shrimp
    Saturday: Huevos rancheros with black beans

  17. Not much of a menu this week–trying to eat out of the fridge and pantry as much as possible…and since we got some nice zucchini and carrots and green beans and fresh fruit from the garden, I wanted to work with that too.

    Fruit for lunches and breakfasts, and most of the veggies are going into soup.

    Sunday-Grilled Burgers, Fries, Fruit

    Monday-Spaghetti and Sausage, French Bread

    Tuesday-Garden Vegetable Minestrone Soup, Sourdough Bread

    Wednesday-Red Beans and Rice, Cornbread (The red beans and rice recipe from the ATK Family Cookbook. One of my favorite meals.)

    Thursday-Date Night. Family watching the kids and they’ll probably have pizza.

    Friday-Leftovers (Minestrone and Red Beans and Rice–take your pick)


  18. We just got back from vacation on Sunday, so this week is pretty uninspiring and late 🙂

    Monday: Chili Dogs and Corn

    Tuesday: Beef Stew and Biscuits

    Wednesday: TV Dinners

    Thursday: Crock Pot Chicken Parmesan and Green Beans

    Friday: Cheesy Chicken Bacon Broccoli and Rice

    Saturday: Out To Eat

    Sunday: Left Overs
