Week 68 Menu & HAPPY MOTHER’S DAY!

Happy Mother’s Day to all you mamas out there! I hope your day was filled with flowers, chocolate, clean dishes and, most importantly, necklaces made out of plastic wrap and Starburst candy!


I’ve got lots and lots of carry-over from last week’s menu. Honestly, what are we eating around here? All I know is I didn’t have to cook tonight because of this great holiday (I can’t change that diaper, it’s Mother’s Day! I can’t do dishes, it’s Mother’s Day!), so that’s one carry-over item. There’s no way I’m cooking on Mother’s Day!

ANYHOW…SHARE YOUR MENUS! Seriously, it does NOT need to be fancy!!!! Of course it CAN be, but I like ’em when they’re not, too! 🙂

MONDAY:
Orange Chicken (great recipe – click through!)
– Rice
Carrots (click & scroll to the bottom for a “recipe”)

TUESDAY:
– Hawaiian Pizza on Trader Joe’s pizza crust (you can find it in the reefer section, yeah you heard right. I overheard the TJ’s guys talking about the “reefer” over and over one day…it was so funny. They realized I heard them and explained it was the “refrigerated” section, which is not nearly as interesting)

WEDNESDAY:
Chicken Tostadas (see Chicken Tostada Goop recipe)

THURSDAY:
– Leftovers

FRIDAY:
– Grill night…hamburgers? chicken? we shall see…

SATURDAY:
– Eat out

SUNDAY:
– no idea…give me a break, it’s mother’s day…I’ll do some planning later. 🙂

    I feel the exact same way about my menu last week. How did we not eat what was planned?! What did we eat?!

    Monday: Eating at an end of the school year BBQ. I’m bringing an appetizer.

    Tuesday: Cheesy Mex Rigatoni

    Wednesday: Pretzel Crusted Chicken and Mac and Cheese from the freezer

    Thursday: Leafy Green Lasagna Bake

    Friday: TBD but maybe meatballs and noodles

    Saturday: Eat out for a friend’s going away party

    I am new to this blog and so excited- menu planning is one of my least favorite things to do- I am not a cook and struggle, struggle, struggle to keep yummy and healthy food on the table- this is going to be my motivation. My menu this week has a few things that I found when browsing this blog- yeah!!

    Monday- Kitchen Sink Quesadillas

    Tuesday- Grill night- chicken for us and the hot dogs the girls have been begging for :), salad

    Wednesday- Trader Joe’s Pizza

    Thursday- Left overs (I’m out!)

    Friday- Trader Joe’s Caccitore sauce with chicken over pasta

    Saturday- out

    Sunday- I don’t know!

    Have you ever used Tader Joe’s pineapple salsa (which is amazing with their veggie chips) as the sauce for your hawaiian pizza? It is delicious!

    I have not tried that TJs salsa…sounds delish and I will definitely try it on hawaiian pizza…

    I wore my stunning necklace all over san francisco yesterday – it was awesome. 🙂

    -Tomato Sauce w/ Onion and Butter over Spaghetti
    -Salad
    -Garlic Bread

    Tuesday:
    -Black Bean & Corn Stew
    -Salad
    -Cornbread

    Wednesday:
    -Balsamic Tuna Salad
    -Potato Skillet Salad

    Thursday:
    -Minestrone w/ White Beans and Collard Greens
    -Salad
    -Toast? Grilled Cheese? Hmmm.

    Friday:
    -Friends over (rescheduled from last week) for chips, queso, guacamole, salsa, taquitos and sweets.

    Saturday:
    -Homemade Pizza? Hot dogs? Eat out at Grapefest after Rock school show? Who knows…

    I have been so delinquent the past few weeks in meal planning and my eating habits and grocery bill have seriously reflected in it.

    Mon: Steak fajitas
    Tuesday: eat out
    Wed: spaghetti
    Thurs: stovetop mac n cheese, salad
    Friday: taco salad (leftovers)
    Sat: chicken tikka, mango lassi
    Sun: picnic day (subs, potato salad, etc)

    So, we’re in the final stages of moving out of our house, so menu is basically use-up-the-freezer-foods

    Monday–Cheese Ravioli w/ red sauce and frozen veges and salad

    Tuesday–pizza from The Pie (our favorite in SLC)

    Wed–eat out

    Thurs–Salad with steak, beans, corn, whatever else I can find

    Fri–Maybe taco salad (too many salads, but I bought a thing of lettuce from Costco, so need to use it up)

    Sat–eat out

    Sun–whatever is left in the house

    M: Scrambled eggs, toast, veggies (I know how boring! And my toddlers threw most of the veggies on the floor)

    T: Chicken breasts-I haven’t figured out how I’m preparing yet/Salad

    Th: Ravioli with cream sauce/salad

    Monday:
    ~BBQ Chicken Sandwiches with Fruit

    Tuesday:
    ~Black Bean and Tuna Burritos
    ~Chips and Salsa

    Wednesday:
    ~Strawberry-Citrus Chicken Salad
    ~Cornbread muffins

    Thursday:
    ~Lemon and Dill Salmon
    ~Salad and Biscuits

    Friday:
    ~Southwestern Salsa Chicken Bake
    ~Strawberries (cause they are soooo delicious and in season right now!)

    Saturday:
    ~Dinner at church
    I am bringing a dessert :o)

    Sunday:
    ~whatever we find in the house!

    late planner too, but part of me feels like i get more credit if i put the things i make up on your blog. aaron get’s credit too.

    sunday: aaron made me citrus bagna cauda tilapia with couscous (and did the dishes), cuz i’m a mom

    monday: leftovers

    tuesday: malayasian coconut braised beef, rice

    wednesday: pad thai

    thursday: burritos (with braised pork if i have the time)

    friday/saturday: chicken skewers with peanut sauce
    (big asian food week–i went a little nuts at ranch 99)
