Week 767 Weekly Dinner Menu

Hey, everyone! I am currently listening to the book Lessons in Chemistry and it’s lovely. It also motivated me to make dinner last night instead of ordering takeout! Speaking of cooking, here is this week’s menu!

Week 767 Weekly Dinner Menu


  • Paneer with peas tikka masala
  • Coconut korma chicken
  • (Lest you think I’m fancy, I’m using Maya Kaimal simmer sauces)




  • Homemade hamburgers


  • Leftovers


  • Takeout night


  • Easter brunch (menu TBD)

    Sunday, Monday, Wednesday: Pigs in a blanket and baked beans
    Tuesday, Thursday: Black bean and sweet potato burritos
    Friday: Chicken and paella
    Saturday: Fresh spring salad

    Happy Easter week!

    M: Veggie Pad Thai w/ edamame, mushrooms, bell peppers, carrots, green onions

    Tu: Visiting my mom and she’s making us a homemade tamale dinner

    W: B4D…eggs, bacon, toast, fruit

    Th: Teaching a kids cooking class so I’ll be using up leftover ingredients to make dinner…pretzel chicken nuggets & salad w/ pesto ranch

    F: Turkey meatballs in mushroom gravy, mashed potatoes, roasted carrots

    Sa: Working…guys will have leftovers

    Su: Easter Brunch…honey mustard ham and spring vegetable & goat cheese frittata (asparagus, spinach, basil, leeks). Guests are bringing the rest…hashbrown casserole, pastry platter, fruit tray, bacon-jalapeno-egg cresecnt rolls, kale salad, cake pops, fruity pebble rice krispy treats, and more…

    Sunday – Alison Roman’s Chicken Pot Pie, roasted potatoes, salad
    Monday- salmon on top of salad
    Tuesday – leftover pot pie
    Wednesday- spring break date night! Zahav reservations!
    Thursday- last of the pot pie with salad and freshly baked bread
    Friday – pizza
    Saturday – Ham, Mac and cheese and salad ( gkids sleepover!)
    Sunday – chicken enchiladas and salad

    Feels like summer here, trying for some lighter meals.

    — nicoise salad
    — salmon and asparagus
    — chicken stir fry
    — lentil soup (meatless)
    — flank steak tacos
    — chicken wings, red beans and rice (bumped from last week)
    — HM pizza or BLTs

    We’re home from Spring Break vacation and back to real life. Siiiiiiiiiiiiigh.

    Sunday: Orange chicken with broccoli and rice
    Monday: Carrot Enchilada Bake with tortilla chips (Inspiralized, p127)
    Tuesday: Easy Beef & Barley Soup (ATK Instant Pot, p24)
    Wednesday: Frittata with veggies & potatoes
    Thursday: Southern-Style Smothered Pork Chops (ATK Instant Pot, p82)
    Friday: Homemade pizza night!
    Saturday: Out

    Friday: Chili and Spiced Popcorn and Fresh Veggies

    Saturday: Arroz con Pollo and Tostones

    Sunday: Easter–Ham, Asparagus, Sugar Snap Peas, Orange Raisin Rolls, Mashed Potatoes and Cadbury Eggs Pie

    Mon: Take-out (can’t be bothered to cook tonight with my Aztecs playing for the national championship!)

    Tues: Chicken meatballs (Pinch of Yum recipe), sautéed chard, pasta with marinara

    Wed: leftovers

    Thurs: Beef stew, salad

    Fri: Snow peas (from the garden) stir-fried with fish

    Sat: leftovers
