Week 778 Weekly Menu…and Hello Again!

Hello everyone! It’s been a while. Probably the longest while of me disappearing from the blog, meal planning, cooking…all of it! It has been a crazy couple of months, with Cate heading off to college in the midst of it all. I truly have been barely cooking dinner at all, let alone planning ahead. I’m okay with that. We all go through seasons. And I’ve gotten more disciplined in other parts of my life, so just chalking it all up to balance and figuring out what that balance is.

Owen, who is now in sixth grade, has been really cute cooking with me when we have gotten around to making dinner. So I’m going to get him a little more involved with the planning and cooking. So, here’s our first menu in a long while! And here’s to keeping it up going forward!


  • Breakfast for dinner: Pancakes and eggs


  • Chicken Enchiladas Verde



  • Eat out after Owen’s first middle school orchestra concert!

    Sun: Mustard-crusted rack of lamb, bean and okra stew, roasted potatoes
    Mon: Chicken souvlaki on pita with tzatziki
    Tues: Potato leek soup
    Wed: leftovers
    Thurs: Grilled pork ribs, corn on the cob
    Fri: leftovers
    Sat: leftovers

    It’s great to have you back! I kept checking the blog hoping I hadn’t missed your return.

    I am unenthused about our meal plan for the week, but we have food, and for that I am grateful!

    Sunday/Monday/Wednesday: Sunday pot roast with carrots, onions, parnsips, and potatoes
    Tuesday: Chicken burritos and roasted cauliflower
    Thursday: Broccoli and cheddar soup grilled cheese
    Friday: Pork carnitas
    Saturday: Grilled pizza (This hack really elevates a cheap frozen pizza!)

    Sunday – beef stroganoff
    Monday – shredded pork on onion rolls
    Tuesday – country style ribs + crockpot mac & cheese and a veg
    Wednesday – out/leftovers
    Thursday – eat at basketball game
    Friday – breakfast sandwiches for dinner

    Sunday: Take out Mexican for Shelby’s 15th(!!) birthday!

    Monday: Italian beef in the slow cooker with roasted cauliflower

    Tuesday: Parmesan Chicken cutlets and Sesame Asparagus and Carrot Chop (“Smitten Kitchen,” p46)

    Wednesday: Twice-Baked Potatoes and roasted broccoli

    Thursday: Pork chops and Two-Bean Salad with Basil Vinaigrette (“Smitten Kitchen,” p50)

    Friday: Pizza night!

    Saturday: Out!

    Missed all the weekly posts and ideas to help clear out the freezer. It’s still warm here so I haven’t gotten out the crock pot yet.

    — lentil cauliflower soup
    — grilled chicken, slaw
    — orange chicken, vegs, rice
