Week 779 Dinner Menu

Hello! Not only is Owen, my 12-year-old, excited to cook with me now, he actually popped right out of his room when I asked if he wanted to come plan a menu. He is such a great motivator for me these days!

Week 779 weekly dinner menu plan

MONDAY:

  • Leftovers

SATURDAY:

  • Eat out night

SUNDAY:

  • Smoked short rib, roasted potatoes and salad

    Sun: Lemony shrimp and bean stew, eggplant parm
    Mon: Chicken enichiladas suizas
    Tues: London Broil, potato pancakes with applesauce, tossed green salad
    Wed: leftovers
    Thurs: leftovers
    Fri: Grilled salmon, green beans in vinaigrette
    Sat: Gnocchi with marinara

  2. Sunday: Choir concert! Something quick afterward

    Monday: Crispy Oven Pulled Pork with roasted cauliflower

    Tuesday: Parmesan Chicken cutlets and Sesame Asparagus and Carrot Chop (“Smitten Kitchen,” p46)

    Wednesday: Leftovers

    Thursday: Chicken Pot Pie (ATK ‘One Pan,’ p46)

    Friday: Pizza night!

    Saturday: Out!

    How nice to see you back! And Owen is meal-planning and cooking for the fam- Fantastic!

    I started making my menus on a Wed and shopping on Thu. Not sure why. Life just morphed that way and it works for us. I’ve found we have leftovers that often carry us a couple of days (especially now that it’s “soup season”) so this week my menu started on Saturday:

    Sat: Salmon and tomato soup
    Sun: Fish meatballs, green beans
    Mon: BBQ chicken, corn
    Tue: Sweet potato chowder
    Wed: Maple balsamic pomegranate scallops, salad

    I am late to the party, but there must be some meal prep vibes going, as we have been having carnitas on repeat. I made curried chicken salad and chicken pot pie soup for our lunches!

    I love cooking with my son. He’s now 15 but it’s still really fun.

    M: black bean & sweet potato enchiladas w/ salad

    Tu: Happy Halloween! Ribs, corn on the cob, Mac & cheese, jalapeño poppers

    W: pesto chicken & Alfredo sauce w/ spaghetti squash or pasta

    Th: coconut curry shrimp w/ rice & vegs

    F: Stromboli (using up l/o ingredients) & salad

    Sa: pork chops, cheesy cauliflower mash, green beans

    Su: friend’s birthday party

    It was very cold this week. Did not really make a plan, just a list of 8-10 things I could make with what is on hand. So far:

    — chili with cornbread
    — hamburgers and fries
    — baked trout and glazed carrots
    — local Mexican place
    — truffle mac, garden salad (last of the tomatoes)
    — baked chicken with herbed orzo
    — leftovers

    Thinking of biscuits and gravy for Sunday breakfast.

    Monday: Spaghetti with meatballs, salad and garlic bread
    Tuesday: Carnitas tacos, you guys talked me into it 🙂
    Wednesday: Chicken Tortellini Soup and Salad
    Thursday: Meatball subs w/ leftover meatballs
    Friday: Chicken Cordon Bleu Casserole (Pioneer Woman)
    Saturday: Having friends over so need to think about it.
