Week 781 Weekly Menu

Before I jump into this week’s menu, a quick plug for this recipe: Crispy Rosemary Roast Potatoes. I hadn’t made them in years but we whipped up a batch last night. I remembered that they were good, but every time we eat them we’re like, “Oh yeah, these are SO good.” Okay, on to this week…

    Welcome back to meal planning! Your menu looks delicious!

    I am trying to do a better job of using up what I have (and have started my own blog series about it), which is making for looser meal planning on my side. I made some rotini with chicken and pea mint pesto yesterday, and once that is gone, I plan to pull frozen soup out of the freezer to hopefully get us by until the weekend when we can cook more.

    Monday: Thai Lemon Beef, Coconut Rice, and Roast Broccoli and Carrots

    Tuesday: Ribs, Oven Fries, and Corn

    Wednesday: Big Mac CopyCat Burgers and Citrus Celery Salad

    Thursday: Crockpot Beef Cheddar Ranch Potatoes and Roast Cauliflower

    Friday: My oldest is turning 18! He chose for his food–Cranberry Orange Muffins, Pollo con Arroz, and Chicken Marsala with Mashed Potatoes for Dinner and Cranberry Date Cake

    Saturday: Crockpot Sausage and Lentil Soup with Cheddar Bay Biscuits

    Sunday: Marsala and Mushroom Pasta Bake and Shaved Brussels Sprouts Salad

  3. Sunday: Something quick after dance competition & soccer game (whew!!!)

    Monday: Twice-Baked Potatoes

    Tuesday: Taco night!

    Wednesday: Rolled Spinach Omelet

    Thursday: Turkey Nachos

    Friday: Pizza night!

    Saturday: Out!
