Leftovers are a great way to start the week, and to save money!

Our menus for this week involve some leftovers/cook once, eat twice meals:

Sunday, Monday, Tuesday: Crustless tomato ricotta pie (Good Housekeeping Family Italian Cookbook) and oil-free roasted potatoes (Our Wandering Kitchen) or toast

Wednesday/Thursday/Friday: Some variations on pesto grilled cheese

Saturday: Hoping to make Fit Foodie Find’s salmon bites with honey chili crunch, but we’ll see.

    Have a great week!
