Week 787 Weekly Menu

So, apparently I’m a 7-year-old because I got strep. I’m a little late getting this week up and running, but the antibiotics are kicking in and working miracles! Cate is home for spring break and made us dinner the last two nights. It was awesome!

  • Indian food night, thanks to Maya Kaimal (chicken, paneer, peas, lentils…all the good stuff!)

  • Takeout night

    Strep as an adult is awful! I hope you get back to full health soon!

    Here’s our menus for this week:

    Smoked gouda and roasted red pepper grilled cheese (Food Network)
    Asian sloppy joes (How Sweet Eats)
    More grilled cheese (Types TBD)-I am trying to work through an overabundance of cheese in the freezer!

    It’s cold this week so I’m making comfort food.
    — flatbread pizza
    — pork and green veg stir fry, leftover rice
    — beef and cheese empanadas
    — potato soup, brats
    — salmon rice bowl
    — chicken pot pie
    — chili dogs (Easter dinner, lol!)

    We are on Spring Break this week – our annual pilgrimage back to Jacksonville Beach! So I’m taking the week off from cooking.

    Wednesday: Stuffed Cabbage in Tomato Sauce, Broccoli and Crusty Bread

    Thursday: Pork Meatballs in Arrabiata Sauce, Pasta and Peas

    Friday: Manicotti Stuffed with Spinach and Ricotta and Snow Pea Salad

    Saturday: Fried Chicken Sandwiches and Pickled Vegetable Salad

    Sunday: Happy Easter–Ham and Tater Skins and Corn and Carrot Cake

    Fri: Leftover meatloaf, salad
    Sat: Garlic, parsley, chive chicken and roasted sweet potato
    Sun: Cauliflower pizza w pepperoni, salad
    Mon: Scrambled eggs and salad
    Tue: Salad with shrimp, tomatoes, & walnuts
    Wed: Basil crab linguine, salad
    Thu: Swordfish, mixed veggies
