Cilantro Pesto

Recipe type: Side Dish
- 2 cups fresh cilantro leaves
- 1 cup fresh parsley leaves
- ¼ peanuts ”” or pine nuts
- ¼ fresh lime juice
- 2 cloves garlic
- ½ cup olive oil
- salt to taste
- Process all ingredients in a food processor except the olive oil until minced. Add the olive oil, blend until smooth.

good question! I’ll see if adrianne, my friend who shared the recipe with me, knows…I’m thinking you’re probably safe 1-2 weeks…but I’ll see if I can get more info!

This dish is quite picky about the eater, but once you get used to it, it becomes addictive.
