Week 149 Menu…and an Ode to the Frozen Turkey

I have to begin my post tonight with Ode to the Frozen Turkey, by Yours Truly.

How I love you, Frozen Turkey. Your ability to arrive in my kitchen pre-brined is unparalleled. Your little poppy-out-thingy informing me of the exact moment that you are perfectly cooked is a gift. You always come out just how you’re supposed to. You rule, Frozen Turkey. Okay, that Ode is BAD. But seriously, the BEST turkeys I’ve cooked have always been pre-brined and frozen, with the little poppy-outy-thingy. I’ve tried all kinds of turkey techniques. The dummy-proof frozen turkey is my favorite. This was one tasty bird, let me tell you.

I actually just finished cooking our second Thanksgiving Feast for the week. I simply wanted more leftovers…and an excuse to make more Sweet Potato Souffle, by far my favorite dish from our menu (thanks for sharing the recipe, Mindy!).  Enough Thanksgiving chatter…on to the menu with leftovers galore!

    We ate at someone else’s, but fortunately she sent us home with turkey and I had prepared what my mom used to call “leftunders” – mashed potatoes and cranberry sauce on Tuesday night. We have only one tiny bag of turkey, but I made a giant pot of bean soup tonight.
    Monday – bean soup, quesadillas
    Tuesday – turkey burgers and broccoli
    Wednesday – broccoli souffle (guess what the only vegetable my kids will eat is?)
    Thursday – mom is gone, so grandpa will feed ’em, in&out or grilled cheese
    Friday – soy baked chiken legs and rice
    Saturday – go out or leftovers
    Sunday – date night with Richard Thompson, woohoo!

    monday – layered cabbage casserole
    tuesday – cioppino with salad
    wednesday – chicken and butternut squash tagine, salad
    thursday – smothered pork cutlets, veggie & salad
    friday – leftovers
    saturday – out
    had thanksgiving at someone else’s house -stayed for a couple of days, ate the leftovers before we left!

    M – salad and chicken w/ honey mustard dressing. The dressing was yucky, so I’m on the lookout for a good honey Dijon recipe!

    F – shepherds pie

    S & S a la husband. He needs suggestions though. I’m going to steal others menu ideas.

    Jane..try the fresh turkeys from Trader Joe’s. Pre-brined + never been frozen = Pretty darn good! I’m really trying to be better about this so here is a menu..

    Sun-Turkey Soup
    Mon-Country Style ribs w/lemon and onion bbq sauce, mashed potatoes, salad, green beans
    Tue-Creamy Lemon Chicken Soup, wheat bread
    Wed-Pork loin, maple baked onions, mashed potatoes, vegie
    Thu-Teriyaki Chicken, rice, broccoli, fruit
    Fri-pre-race pasta
    Sat-leftovers or pizza
    My family complained they didn’t get enough mashed potatoes at Thanksgiving so we’ll have them twice this week. They will love me.

    -Baked Penne

    -Black Bean Quesadillas

    -Chili-roasted Sweet Potato Wedges

    -Soup & Grilled Cheese

    We had Thanksgiving at our house, so we have lots of leftovers! I made the most awesome Turkey Tortilla Soup with some of the leftover bird (I usually use shredded chicken). It turned out great!

    Monday- Baked Turkey Chimichangas
    Tuesday- Hubby is on his own, I have dinner out w/ colleagues
    Wednesday- Hubby’s b-day- potato cheese soup (his request)
    Thursday- Club Sandwich Paninis w/ Avocado
    Friday- Pizza
    Sat- Holiday parties
    Sun- Out to celebrate both of our birthdays!

    I wish we had leftovers. Oh well, the downside of enjoying Thanksgiving at someone else’s house 🙂

    Tuesday – Marinated herb flank steak
    Wednesday – Grilled cheese & tomato soup
    Thursday – Chicken & sausage pasta
    Friday – Order Pizza

    Thursday: Take out of some kind (I will be making crockpot Wassail for an outing with friend that night)
    Friday: Crockpot BBQ Beef sandwiches with corn and fries
    Saturday: Bear Creek chicken Noodle Soup
    Sunday: Penne Rosa with something

    I have had this honey mustard vinagrette recipe for awhile, I don’t know where I got it, but it’s delicious!
    1 garlic clove, minced
    2 T. rice wine vinegar
    3 t. dijon mustard
    1 1/4 t. honey
    2/3 c. oil (I use 1/2 EVOO 1/2 canola)
    salt & pepper to taste

    Place all ingredients in blender, slowly add oil.

    Monday: Crock Pot Chicken Cordon Bleu, Creamed Spinach and Rolls
    Tuesday: Crock Pot Lentils and Chicken and Peas
    Wednesday: Out To Eat
    Thursday: Garlic and Rosemary Tilapia and Potatoes and Broccoli and Carrots
    Friday: Baked Chicken and Corn
    Saturday: Chicken Noodle Soup
    Sunday: Left Overs
