Week 186 Menu

Good morning! Here, have a fresh blueberry muffin.

It’s looking like all is calm on the blogging front. Sorry for all the malware fire drills the last two weeks. Nate said I should give another update and explain what happened. Basically, because I’m on a shared server, I was hacked. Both times it happened, we caught it right away, so no damage was done. Except Google blacklisting me, which was a pain. Everything is fine now, the site is totally safe. Phew! I am probably going to shell out some cash and start paying for a dedicated server, to minimize the risk. Although…my developer said he’s never seen one site get hacked so much in such a short period of time, so I think there was simply a lot of bad luck at play, too. Thanks for trusting me and coming back!

On to business…

Oriental Chicken Salad

Chili (sorry for anyone living with heat and humidity right now…it’s downright chilly where we are, I’m ready to whip out the Halloween decorations!)

    Here’s the plan…
    Mon — out to eat
    Tues — Polenta with Meat Sauce and Grilled Zucchini
    Weds — Mac and Cheese, broccoli
    Thurs — Caramelized Onion and Parmesan Panini, side salad
    Fri — Kasha Varnishkes topped with egg, sauteed spinach
    Sat — out
    Sun — pantry!

  7. No menu for us this week. driving from Texas to Wyoming with stops in Dallas and Colorado.
    The Jelly Belly Factory is so fun!! Make sure to take pics with the sweet “hats” you “get” to wear 🙂

  9. I’m from one of those places with both heat and humidity. But, we’re still having hot comfort food. Can’t let the weather get in the way of great food!

    Sunday: Turkey tenderloin, rosemary potatoes, & green beans
    Monday: Out for a final night with Grandma & Grandpa.
    Tuesday: Stuffed Peppers from the freezer stash (This Week for Dinner)
    Wednesday: Chicken Pot Pies from freezer
    Thursday: Chickpea Burgers (from This Week for Dinner) with homemade buns….these are a big hit! Friday: Leftovers
    Saturday: Hopefully we’ll have some friends over for dinner

    The weeks when I plan out my menu my life is SO much easier!!

    Monday- Next-Mex Tostadas

    Tuesday- Turkey burgers, corn on the cob, and hopefully a healthy potato salad if I can find one!

    Wednesday- Seared Chicken with Apricot sauce, Rice/noodles and Roasted Broccoli

    Thursday- Lamb tagine with rice

    Friday- Leftovers or Pizza probably!

    Saturday- Up in the air….could be leftovers or something amazing that I decide to whip up on Saturday afternoon! 🙂

    Apparently we’re having an Asian week!
    Sunday: Korean Beef Stir fry, rice, Kohlrabi-apple slaw with asian dressing.
    Monday: Shrimp lo-mein, egg rolls
    Tuesday: Grilled Chicken, eggplant gratin, salad/CSA vegies
    Wednesday: Hubby cooks. Pork chop and mushroom skillet, CSA vegies, rice
    Thursday: Hubby cooks. Tator tot hotdish, CSA vegies, watermelon
    Friday: Golf outing with friends. Kids get pizza,
    Saturday: Lettuce wraps, watermelon

    M: Southwestern shrimp tacos and Stuffed jalepeno peppers(I have ton I need to use from my garden!)
    T: Slow cooker pulled pork sandwiches with broccoli slaw
    W: Zucchini frittata (mom’s recipe I’ll post later) and caprese salad
    Th: Leftovers with a fresh garden salad
    F: Out to dinner
    S: Picnic dinner in the park – cheese plate, tomato mozzarella salad, homemade fried chicken? Any good picnic ideas?

    We’re also still planning menus for hot and humid, but SCHOOL just started (don’t they know its a sin to start before Labor Day?!) so I’m wishing it was cooler because I suddenly feel like fall food.

    Sunday–Gniocchi (freezer section at TJ’s)
    Monday–Taco Salad, Chips and Salsa, Going out for Blizzards to celebrate 1st day of school
    Tuesday–Grilled chicken legs, potato salad, veggie tray
    Wednesday–Chicken Enchiladas (freezer stash), salad
    Thursday–Beans and Rice, veggie
    Friday–Weekend getaway–dinner out

    W-Chili (wrong time of year but it was grab all you wanted hot peppers at the CSA)
    T-Herbed Chicken skewers, creamed kale
    F-Steak (wagyu, won it in a raffle) and CSA goodies

    There’s nothing like a nice bowl of mac n cheese!

    Monday- whole wheat quesadillas
    Tuesday- mac n cheese w/ tuna, broccoli
    Wednesday- turkey tenderloin, rice, salad
    Thursday- hot dogs (bonfire with the in laws)
    Friday- chipotle bread pudding
    Saturday- stir fry
    Sunday- dinner at a friend’s house

    Mon.- Shrimp Stir Fry
    Tues.- BBQ or Baked split chicken breasts, cooked carrots or carrot salad (depends on weather)
    Wed.- Grilled Pork Chops, green salad
    Thurs.-Fend For Yourself?
    Fri.-Sun- My mom is coming for a visit so menu is up in the air

    I am so sad I haven’t been able to post here for a while! New job, moving, going through storage, blah blah blah. Hopefully we’ll get back in the swing of things soon! I feel like there’s a void 😉

    Red Beans and Rice (easy version…)

    2 packages skinless turkey smoked sausage
    2 cans red beans DRAINED
    1 package frozen trinity (green peppers, onions, celery)
    Cajun seasoning to taste

    Add all (water up to top of other ingredients) to crock pot. Cook for 24 hours (yes, 24 hours). Stir randomly, add water if needed.

    Serve over rice (we use brown)…

    Late I know… taking my oldest to college, so we’ve let him pick where he wanted to go for the next few days..
    Sun – ate out
    Mon – ate out
    Tues – ate out
    Weds – easy garlic & lime chicken
    Thursday -spaghetti bolognese
    Friday – hamburgers & grilled corn on the cob
    Saturday – Broncos game…
    Sunday – sweet jalepeno ribs & beans

    I’m late, late, late but have at least stuck to the menu so far:

    sun – carne asada
    mon – ham & cheese omelettes
    tue – turkey meatballs & spaghetti
    wed – couscous with veggies and rotisserie chicken
    thu – stir fry with leftovers from wed
    fri – quesadillas with steamed broccoli inside, because I’m sneaky
    sat – OUT!

    I did make my menu–I did! I did! I’ve actually done pretty well with the planning this summer, even though I havn’t been posting. 🙂

    Sun–Chicken burgers, bruschetta salad
    Mon–Honey Spice Pork chops, zucchini torta
    Tues–Butter Chicken (costco), brown rice, garlic-ginger glazed carrots
    Weds–Pork and peanut sauce noodle salad
    Thurs–Flank steak & gorgonzola salad
    Fri–Oven Fried Chicken, roasted potatoes, veg

  26. With the school year starting I’m getting better about writing this down (we do it, but we haven’t been good about writing it down this summer.)

    M- Salmon & spinach/cheese ravioli (Costco) w/artichokes
    T- Mediterranean Meatballs (Weight Watchers, crock pot)& zucchini
    W- Artichoke & Feta Sausage w/ quinoa & broccoli
    Th-Taco Soup (Crockpot) & salad
    F- Leftovers or Eat out!
    Sa-Chicken Marsala, white rice & corn on the cob

    Here is what I have planned for this week…

    Tuesday- fish sticks, homemade Mac & cheese, corn on the cob ( husband goes directly to school and since this is the day that I shop I pick up a sushi marina plate for him to take to class) this is the kid’s request night

    Monday- chicken spagetti, garlic bread, tossed salad

    Tuesday- shrimp stir fry with garlic and Ginger

    Wednesday- roasted pork tenderloin, roasted red potatoes and asparagus

    Thursday- mushroom pork chops, mashed potatoes, sauteed zucchini and squash

    Friday- lasagna, tomato balsamic salad, bread sticks

    Saturday- roasted potatoes, eggs, pancakes, fried ham and fruit parfait

    Sunday- slow cooker beef stew


  28. We were too hot tonight, and even though we could’ve cooked on the BBQ, we decided to have breakfast for dinner; girls had waffles & fruit, I had cereal & fruit & Daddy had a sandwich. 🙂 AND it was AWESOME!
