Week 216 Menu

Okay, I promise this is the last Trader Joe’s talk for a while…but I tried the Aebleskiver/Danish PancakesΒ from the frozen section this weekend and they’re great! The girls loved them. We cooked them in the oven (not the microwave) and they were super crispy on the outside and deliciously soft on the inside. Definitely a better freezer find than the cannoli.

I can’t believe it’s time for another menu. I know I say this all the time, but where does the time go?!

    After looking over the menus shared by everyone last week, I realized that my days are off…I usually plan Sunday through Saturday. I guess it doesn’t really matter, so, anyways, here’s my week!

    Yes, I am aware I’m eating mushrooms 3X–single girl’s gotta make the most of the produce before it goes bad! πŸ™‚

  7. I’m using odds and ends from the storecupboard and freezer, plus little bits and pieces I can pick up on the way home; we’re managing without a big supermarket shop this week.

    Mon – Harissa chicken with apricots and bulghar wheat
    Tue – Lasagne (using leftover slow-cooked beef sauce)
    Wed – Kale and bacon spring pasta
    Thu – Carrot and lentil soup
    Fri – Chicken and broccoli farfalle with orange and mustard sauce
    Sat – Courgette, broad bean & bacon pasta shells with a cheese sauce
    Sun – Aubergine roulade

    With a proviso that this is all subject to change as I have a mad week in work coming up!

    Monday: Spaghetti Cacio e Pepe (Smitten Kitchen..peer pressure from menus last week!)
    Tuesday: Chickpeas with Cilantro & Paprika (Three Many Cooks)
    Wednesday: Dinner at church
    Thursday: Artwalk at the beach!…that means pizza at Joseph’s!
    Friday: Corned Beef in the slow cooker (St. Pat’s one day late!)
    Saturday: Out.

    Sigh! Is it just me or are grocery prices getting out of control? It seems like every week I try harder to plan less expensive meals and shop the sales but wind up spending more.

    Sun: Chicken enchiladas
    Mon: Blueberry pancakes
    Tues: Lentil curry
    Wed: English muffin pizzas
    Thurs: Cream of asparagus soup with homemade bread
    Fri: Leftovers or eat out
    Sat: Pulled pork sandwiches and coleslaw

    Sunday: The last quart of seafood bisque in my freezer.
    Monday: Roasted pork tenderloin quinoa blend, asparagus.
    Tuesday: Penne and broccoli.
    Wednesday: Honey-mustard turkey breast with string beans and a grain to be named later.
    Thursday: Chicken in a white wine and mushroom sauce with brown rice.
    Friday: Work event.
    Saturday: Takeout and basketball.

    Saturday: Marcella Hazan’s Roast Chicken w/2 lemons (a family favorite)

    Just had a (time consuming) kitchen flop trying to make homemade English muffins. But, I’m gonna pick myself up and look forward to a tasty week regardless!

    Sunday – veggie bagel sandwiches (cream cheese with scallions, red pepper, cucumber, sprouts, avocado and cheese)
    Monday – breakfast sandwiches and homefries
    Tuesday – cauliflower, potato and chick pea curry
    Wednesday – taking advantage of a buy one get, one free Spring break special at a local gourmet restaurant we’ve never tried
    Thursday – corned beef, potatoes and cabbage in the crock pot
    Friday – BLTs
    Saturday – Reubens on pumpernickel bagel sandwiches (we splurged on good bagels from a local shop)

      there are lots of great non-perishable items you can totally stock up on – last time my sister-in-law drove to california, she filled the car! πŸ™‚ and 45 minutes, you could even do a cooler for the freezer stuff…would be a fund trip! πŸ™‚

    Where does the time go? I feel like I just came up with my menu for last week… Well, this week is all about quick-and-easy for us. On Thursday, we’re headed out of town for a long weekend. Plus, we’re getting ready to move, so will be busy packing our apartment in addition to our bags. In short, not a ton of time to cook big elaborate meals. So we’ll be keeping it simple but yummy:

    Sunday: Tofu with Brussels Sprouts

    Monday: Pizza with Shaved Asparagus, Lemon & Pine Nuts

    Tuesday: Simple Spaghetti

    Wednesday: Sesame Noodles with Tofu, Cucumber & Arame ( Yes, I made these last week too. I just couldn’t resist making them again; they’re so good, and so easy. The only problem with these noddles is going to be resisting making them all the time…

    Thursday: Head to Utah for a long ski weekend. This surely means that plenty of meat, potatoes, and beer will be consumed! Happy St. Patrick’s Day!

    Tuesday: Slow cooker corned beef with cabbage and carrots (yes, I know — not St. Patrick’s Day yet, but it’s slow cooker night and that’s how I roll!)
    Wednesday: Tuna panini, kale chips, and fruit
    Thursday: Corned beef hash, poached eggs, and fruit cobbler (There! Corned beef for St. Patrick’s Day after all!)
    Friday: Fend night
    Saturday: Birthday celebration — I’m not cooking!

    Loved seeing aebleskiver in this week’s post! I was introduced to it by my best friend (who met a wonderful man online, fell in love, and moved to Denmark to be with him) one Christmas when she and her now husband came to visit. We actually made it in his grandma’s special pan. Last Christmas, my husband and I went to visit and we had more aebleskiver, this time from the freezer section just like you! The Danish eat them with powdered sugar just like your photo, but also dip them in jam.
