Okay, I promise this is the last Trader Joe’s talk for a while…but I tried the Aebleskiver/Danish PancakesΒ from the frozen section this weekend and they’re great! The girls loved them. We cooked them in the oven (not the microwave) and they were super crispy on the outside and deliciously soft on the inside. Definitely a better freezer find than the cannoli.
I can’t believe it’s time for another menu. I know I say this all the time, but where does the time go?!

Where does the time go? I feel like I just came up with my menu for last week… Well, this week is all about quick-and-easy for us. On Thursday, we’re headed out of town for a long weekend. Plus, we’re getting ready to move, so will be busy packing our apartment in addition to our bags. In short, not a ton of time to cook big elaborate meals. So we’ll be keeping it simple but yummy:

Loved seeing aebleskiver in this week’s post! I was introduced to it by my best friend (who met a wonderful man online, fell in love, and moved to Denmark to be with him) one Christmas when she and her now husband came to visit. We actually made it in his grandma’s special pan. Last Christmas, my husband and I went to visit and we had more aebleskiver, this time from the freezer section just like you! The Danish eat them with powdered sugar just like your photo, but also dip them in jam.
how fun! π and, even though it’s not in the picture, those little aebleskiver you see in that photo were dipped in copious amounts of peach freezer jam π yum!
