Happy Father’s Day! Sadly Nate had to go to a conference early this morning and missed out on pancakes in bed. But we have a special dinner planned for him to make up for it!

Now on to my menu:
Trying out a new CSA and picked up our first bag. This CSA includes Organic Meats, Cheeses, Milk, Honey (although I’m allergic so we will trade that for a different item when we get that), Breads, Fruit and Veggies. Plus other stuff. We picked up our first bag and it included: 4 Giant Beefsteak Organic Tomatoes, 1/2 gallon Milk, 4 Organic Beef Patties, 2 loaves of Sourdough bread, 1lb of Organic Chedder Cheese, and Bread and Butter Pickles (for $25 bucks) So we are going to use that for tonights dinner.
today (sun): Organic Beef: Hamburgers, with chedder cheese, tomatoes on sourdough bread and bread and butter pickles on the side. (for me veggie burger and the rest)
Sides: big salad and homemade fries (regular and sweet potato).
monday: spaghetti (with sausage for hubby), toasted sourdough bread made into garlic bread, big salad.
tuesday: Tacos (beef for them, black beans for me), Spanish Rice, Crockpot pinto beans
wednesday: Chicken, Mash Potato, Veggie (I’ll have morning star veggie “chicken” pattie)
thursday: Very Veggie Red Beans and Rice with Cornbread
friday: Pizza Night! Salad, and Cookies
saturday: Tomato Soup and Grilled Cheese

I managed to survive my opening day trip to Trader Joe’s this past Friday. I can’t wait until things settle down a bit and I can really take my time wandering through and getting a good look at everything.

Susan- Our new TJ’s is about 10-15 minutes from our house and amazingly on the route we frequent to do our grocery shopping. It’ll be even more convenient when the city finally finishes the new bridge they are building right by it. The construction did not help with the opening day traffic, ha.
time to wander the aisles is a good thing – I find even though I’ve lived near one for YEARS there are still so many items I have no idea about b/c I run in and out so fast. enjoy it!!!

Thanks for the comment about the CSA. I know I can’t believe everything is farm fresh and organic for that price!
Shannon, I just kind of make it up each time I do it. I generally chop up whatever veggies I have on hand (zuchini, mushrooms, onions, and red peppers all work well). I saute the veggies in a little oil for a few minutes and then add a box of wagon wheel pasta coating the pasta with oil. I then begin to gradually add warm veggie or chicken broth stirring often. As the pasta absorbs the broth, I add more. It takes about 20 minutes to get the pasta done, but you end up with a creamy pasta with no cream! I then add some chopped herbs such as basil and salt and pepper. That’s it! I love that it’s all done in one pot.

I love sweet potato fries but they never turn out great just ok.
Got any hints or tips for me?
I’m not sure what’s the key either Shannon ββ sometimes they are great, sometimes fine. I always use parchment paper on my trays and olive oil. I have a convention oven and find that tends to work better at a high temp (425). And I always use coarse sea salt ββ give the potatoes a better flavor. Good luck!

The Firecracker pork sounds great! Do you grill or roast?
Either way is fine- right now it’s raining, so if it’s still raining later tonight, we’ll be roasting! If I roast it, I can put the sauce on a little earlier (halfway through cooking time) than grilling. With all the sugars in the sauce, I wait until the end when grilling to put the sauce on so it doesn’t completely burn off! A little char is ok, but a big black log? Not so much!
It is so good- one of my favorite ways to have pork tenderloin! Sometimes I substitute orange marmalade if that’s all I have!

We got a couple to try, and Jim (who LOVES PF Changs) would give them a 5 out of 10. He said they’re good to have in the freezer for a quick meal, but not something he would crave or seek out…
