Week 282 Menu

Happy Father’s Day! Sadly Nate had to go to a conference early this morning and missed out on pancakes in bed. But we have a special dinner planned for him to make up for it!

Cate has been excited all week about helping me plan this week’s menu. Let’s see what she came up with!

MONDAY:
Cream of Mushroom soup

TUESDAY:
Homemade pizza – mushroom and cheese

WEDNESDAY:
Rachel sandwiches

THURSDAY:
– Leftovers

FRIDAY:
Enchiladas

SATURDAY:
– Eat out

SUNDAY:
PaninisΒ (turkey with honey mustard)

I think Cate did a good job picking out a yummy menu for the week! πŸ™‚

    she did a great job, I’m going to let my girls pick 2 days each next week to plan. what fun! on a side note my youngest ankle is doing wonderful and she won’t be laid up all summer long with the hairline fracture! can I get a yippee πŸ™‚

    Now on to my menu:

    Trying out a new CSA and picked up our first bag. This CSA includes Organic Meats, Cheeses, Milk, Honey (although I’m allergic so we will trade that for a different item when we get that), Breads, Fruit and Veggies. Plus other stuff. We picked up our first bag and it included: 4 Giant Beefsteak Organic Tomatoes, 1/2 gallon Milk, 4 Organic Beef Patties, 2 loaves of Sourdough bread, 1lb of Organic Chedder Cheese, and Bread and Butter Pickles (for $25 bucks) So we are going to use that for tonights dinner.

    today (sun): Organic Beef: Hamburgers, with chedder cheese, tomatoes on sourdough bread and bread and butter pickles on the side. (for me veggie burger and the rest)

    Sides: big salad and homemade fries (regular and sweet potato).

    monday: spaghetti (with sausage for hubby), toasted sourdough bread made into garlic bread, big salad.

    tuesday: Tacos (beef for them, black beans for me), Spanish Rice, Crockpot pinto beans

    wednesday: Chicken, Mash Potato, Veggie (I’ll have morning star veggie “chicken” pattie)

    thursday: Very Veggie Red Beans and Rice with Cornbread

    friday: Pizza Night! Salad, and Cookies

    saturday: Tomato Soup and Grilled Cheese

  2. Happy Father’s Day! The big Father’s Day present at our house (for both parents) was the kids sleeping in!!! Hooray!

    Sunday: Father’s Day BBQ at a friend’s house; I’m bringing crescent rolls and SweeTart Quinoa Salad
    Monday: Strawberry Orange Ginger Kale Salad with chicken
    Tuesday: BBQ Cranberry Chickpea Wraps
    Wednesday: Dinner at church
    Thursday: Butternut and Sweet Potato Soup (with CSA veggies!) and homemade rustic bread
    Friday: Burgers on the grill with homemade hamburger buns – the family needed a meat entree after a veggie-heavy week! πŸ™‚
    Saturday: Out.

  3. I managed to survive my opening day trip to Trader Joe’s this past Friday. I can’t wait until things settle down a bit and I can really take my time wandering through and getting a good look at everything.

    Tonight: Pizza (on TJ’s Garlic & Herb dough!)
    Monday: Black bean nachos
    Tuesday: TJ’s Mandarin Orange Chicken (finally!) w/ brown rice and sauteed broccoli & bok choy
    Wednesday: Turkey burgers w/ sweet potato wedges
    Thursday: Black eyed pea tacos w/ cilantro-lime rice

      I need to make a road trip…once things calm down at the new Woodlands TJ’s!!
      You are so lucky if you live close by! I can’t wait for the Studemont location to open later this year!

    • Susan- Our new TJ’s is about 10-15 minutes from our house and amazingly on the route we frequent to do our grocery shopping. It’ll be even more convenient when the city finally finishes the new bridge they are building right by it. The construction did not help with the opening day traffic, ha.

      time to wander the aisles is a good thing – I find even though I’ve lived near one for YEARS there are still so many items I have no idea about b/c I run in and out so fast. enjoy it!!!

      Thanks for the comment about the CSA. I know I can’t believe everything is farm fresh and organic for that price!

    • Shannon, I just kind of make it up each time I do it. I generally chop up whatever veggies I have on hand (zuchini, mushrooms, onions, and red peppers all work well). I saute the veggies in a little oil for a few minutes and then add a box of wagon wheel pasta coating the pasta with oil. I then begin to gradually add warm veggie or chicken broth stirring often. As the pasta absorbs the broth, I add more. It takes about 20 minutes to get the pasta done, but you end up with a creamy pasta with no cream! I then add some chopped herbs such as basil and salt and pepper. That’s it! I love that it’s all done in one pot.

    Sunday-Lamb on the grill for the hubs’s Fathers Day, with garden eggplant and corn on the cob.
    Monday-beef stroganoff, noodles, and broccoli
    Tuesday-grilled chicken breast, over salad greens with garden tomatoes and Olive Garden(yeah Sam’s Club)dressing, and OG copycat nomads breadsticks
    Wednesday-tacos with home made pico de gallo, guac and mexican rice
    Thursday-Shrimp etouffe, rice, corn on the cob.
    Friday-scrounge(every man for himself) because I’m helping with preparations for my grandsons 2nd birthday party on Saturday

    She did a great job with the menu! I love when the kids are excited about cooking.

    Sunday: Saturday’s BBQ leftovers at husband’s request.
    Monday: Chicken quesadillas with avocado, radish & corn salad (using the leftover smoked chicken from Saturday).
    Tuesday: Turkey and pesto paninis with baked sweet potato fries and roasted broccoli.
    Wednesday: Chicken rice bowls.
    Thursday: Curry tofu with spiced zucchini and naan.
    Friday: All alone so probably cereal or leftovers (two kids are at a book club pizza party so husband and oldest are going out for some guy time).
    Saturday: Anniversary dinner out!!

      I love sweet potato fries but they never turn out great just ok.
      Got any hints or tips for me?

      I’m not sure what’s the key either Shannon ”” sometimes they are great, sometimes fine. I always use parchment paper on my trays and olive oil. I have a convention oven and find that tends to work better at a high temp (425). And I always use coarse sea salt ”” give the potatoes a better flavor. Good luck!

      she was so proud of herself…and of course we diverged from the plan today to use up leftovers from yesterday and she totally remembered what had been planned and was not happy about it! so cute

    S: out of town for our first wedding anniversary! We’re going to Williamsburg, so I’m sure we will find some exciting restaurant there to try for dinner.

    Here is what I have ingredients for, for the next 2 weeks, not assigned to any particular day. Then we’re leaving town!

    Steak dinner (on the grill)
    Quesedilla night (we have these at least once a week, I swear!)
    Breakfast for dinner

    Lentil Soup
    Pizza night
    BBQ hamburgers
    Roast and potatoes
    Egg Salad sandwiches (for one of those nights where it’s too hot to cook)

    Side dishes, to be used however we feel like, include:

    cold pasta salad, 2 different types
    Trader Joe’s baked beans
    baked homemade french fries (SO easy and delish! they have romano cheese – yum!)

    variety of veggies
    cheetos (for the kids… hee hee!)

    Thursday: Lunch: fish sticks, fries and vegies
    Dinner: Hubby cooks. Tacos, grapes, chips and salsa

    Friday: Lunch: grilled cheese and tomato soup
    Dinner: Friday Night Pizza Night, salad

    Saturday: Lunch: Kids Choice

      The Firecracker pork sounds great! Do you grill or roast?

      Either way is fine- right now it’s raining, so if it’s still raining later tonight, we’ll be roasting! If I roast it, I can put the sauce on a little earlier (halfway through cooking time) than grilling. With all the sugars in the sauce, I wait until the end when grilling to put the sauce on so it doesn’t completely burn off! A little char is ok, but a big black log? Not so much!

      It is so good- one of my favorite ways to have pork tenderloin! Sometimes I substitute orange marmalade if that’s all I have!

  20. It’s the week before we leave for vacation so we’re trying to use up a lot of stuff in the house so we don’t need to go grocery shopping (which in our case, for some reason meant a lot of ground turkey, carrots, and frozen spinach).
    Monday: Spinach Stuffed Ground Turkey roll with mashed potatoes
    Tuesday: Indian-Style Sloppy Joes
    Wednesday: 20 Min. Skinny Sesame Chicken with Roasted Broccoli and rice
    Thursday: Braised Chicken with olives, carrots, and chick peas over rice
    Friday: Crockpot Turkey Meatball subs, oven fries, and some sort of green vegetable that has yet to be determined πŸ™‚

      We got a couple to try, and Jim (who LOVES PF Changs) would give them a 5 out of 10. He said they’re good to have in the freezer for a quick meal, but not something he would crave or seek out…

    Just got back from lazy weekend at lake cabin, & I’m still in that mind set so it’s easy & fast dishes all week. πŸ™‚

    Mon: Roasted Red Pepper-Tomato Soup w/ grilled cheese sandiwches (never got to this last week)

    Tues: Shrimp Tacos w/ guacamole & green rice

    Wed: Leftovers for boys…book club for me! (I just finished reading Tina Fey’s Bossypants. It had me laughnig out loud!)

    Th: Pasta w/ marinara & turkey meatballs and salad (I make huge batches of meatballs & freeze them on energetic days so I can use them on lazy days) πŸ˜‰

    Fri: Crock-Pot Pulled Pork Sandwiches w/ horseradish coleslaw & corn on the cob (also having Slip n Slide playdate this day…serving cream cheese & jam sandwiches; bacon, pea, & corn pasta salad; berry-yogurt popsicles)

    Sat: Grilled BBQ chicken, cucumber-tomato salad, & backed potatoes w/ Greek yogurt & scallions

    Sun: Storm Baseball Game, so it’s hot dogs, nachos, cracker jacks, & beer…yay! πŸ™‚
