Week 284 Menu

I made more whoopie pies. I told you I was going to. I halved the recipe, so I only made 13 whoopie pies this batch. Which is what I should have done…but I am kind of wishing I had made 26. Then I could have eaten them for every meal this weekend, not just breakfast. 😉

I’m impressed with all of you…even though it’s the lazy, hazy days of summer, you’re still bringing out the menus every week and keeping me on my game!

– Homemade Macaroni and Cheese (Anna’s request…will be using this Martha Stewart recipe, but there are a bunch of reader-submitted recipes here if you want to browse through them)
– Salad

Chicken Tostadas

– A night on the grill (hot dogs, hamburgers)
– Corn on the cob, watermelon

– Leftovers

Sausage, Pepper & Onion Hoagies
– Fresh fruit

– Eat out

– Breakfast for dinner…TBD!

  1. Blah blah. It’s hot. Blah blah. No big news since we’re all in the same boat! Looking forward to some pool/beach time!

    Sunday: Grilled chicken sandwiches on homemade rolls and sweet potato fries (family request!)
    Monday: Black bean burgers on homemade rolls
    Tuesday: Meatball subs on homemade hoagie rolls (1 batch of rolls, three dinners! Ha!)
    Wednesday: Hopefully a BBQ with friends!!
    Thursday: Chicken, sweet potato and black bean wraps
    Friday: Leftovers
    Saturday: Out.

    Hey! I’m back. Wow, it’s really been a while since I’ve submitted a meal plan. My husband has been out of town for the last 6 weeks on business, and it’s looking like he might be gone for the rest of the summer. I thought it was hard to cook and plan for two, but one is so much harder. I’ve had no desire to cook more than scrambled eggs and veggie burgers, but I am hoping a plan and some variety will help to make the summer go more quickly. I am trying some new recipes from a book I got for Christmas (Cooking Light: Way to Cook Vegetarian). They are in no order:

    ~Broccoli Casserole (I’m gonna throw in some tofu I have leftover in the fridge as well), roasted brussel sprouts, salad
    ~Mexican Casserole (leaving out the fake meat and doubling the beans), fresh corn on the cob, salad
    ~Lentil & Edamame Stew, Salad, bread of some kind

    My in-laws will be here on Monday and staying thru Sunday. It is way to hot for me to try to impress my mother in law with my cooking skills. I don’t want to be in a hot kitchen so here is my plan for their visit:

    Monday–Sub sandwiches with lots of veggies, fruit salad, cheeseball and crackers

    Tuesday–Out to eat at our favorite seafood place

    Wednesday–Too hot to grill outside. Ribs in the crockpot, baked beans in the smaller crockpot, cole slaw, corn o the cob. Strawberry shortcakes for dessert

    Thursday–Teriyaki Chicken in the crockpot, rice, green beans and lemon lush

    Friday– Baked potato soup with mexican cornbread then go out for ice cream

    Saturday–Roast with potatoes, carrots and onions in the crock pot, some whole wheat honey bread in the bread machine, apple pie from the bakery and I will make some wipped cream.

    Sunday– the in laws will be gone by dinner time so we will just eat all of the leftovers from the week

    Thats the problem with whoopie pies. No one can eat just one! 🙂 Hope everyone has a great 4th of July.

    Monday – Ham slices with sweet potato casserole
    Tuesday – Pizza w/cheese, pepperoni, mushrooms and onions
    Wednesday – BBQ day with family. Steaks and corn on the cob on the grill and lots of fresh fruit and smores. Yummy
    Thursday – Hot sausage sandwiches and potato salad
    Friday – Scrod, brown rice and vegetable medley
    Saturday – Leftovers

    Sunday – homemade pizza topped with taco meat
    monday – leftover tacos from Saturday
    Tuesday – chicken breasts with zucchini
    Wednesday – sausage on the grill with potato salad
    Thursday – salmon on the grill
    Friday – hamburgers and lamb burgers on the grill to celebrate my husband’s birthday
    Saturday – leftovers or out

    I am hoping to try a few new recipes because my work is closed this week. I never got to try the blintz casserole, so it’s back for the 3rd time. The order will probably change. I want to try a ginger and cinnamon chic chip cookie and apricot scones too.

    Lots of family in town this week, and our towns centennial celebration, so our menu for the end of the week is up in the air as I think we’ll be spending a lot of time across the street at the parents house with the cousins. 🙂

    Daughter #2 and son in law will be here so this menu is flexible as we’ll be sharing time at daughter #1’s house with the grandkids.
    Sunday- fried catfish, spinach and corn on the cob
    Monday-split pea soup, home made yeast rolls
    Tuesday-pork roast, oven potatoes, green beans
    Wednesday- chicken fajitas,home made tortillas with onions and garden peppers, grilled veggie kabobs(zucchini,mushrooms,cherry tomatoes and onions, watermelon
    Thursday-beans and rice, smoked sausage, salad
    Friday-out for daughter #2’s birthday
    Saturday-open for leftovers or dinner @ daughter#1’s house.

    No menu to share since we are leaving town shortly, but I just had to say that I’m so glad you are making whoopie pies so frequently and that you like them! I really don’t understand what all the hate for whoopie pies is about (not just yours, but some of the commenters). I will be trying your recipe when we return! I will also be trying at least one of the homemade mac & cheese recipes. So far, I am a homemade mac & cheese maker failure, but I would love to find one that likes me. 🙂

  27. This week should be interesting meal-wise. My husband was laid off at the end of last week from his job which means he will now be home for breakfast and lunch as well as dinner. Hmm, we’ll see how it goes. =)

    Highlights for this week are pot roast and shredded pork sandwiches. The rest of the week is a little less determined.

    The beans go in a crockpot w/ salt pork, herbs, garlic, and tomatoes.

    Going to a pool party & contributing triple-berry trifle with blue sprinkled, white chocolate-dipped strawberries.

    Steaming brown rice to have w/ beans, shrimp, and sausage

    Fri: Rosemary Potato & Smoked Gouda Grilled Pizza w/ green salad
