I made more whoopie pies. I told you I was going to. I halved the recipe, so I only made 13 whoopie pies this batch. Which is what I should have done…but I am kind of wishing I had made 26. Then I could have eaten them for every meal this weekend, not just breakfast. đ

Hey! I’m back. Wow, it’s really been a while since I’ve submitted a meal plan. My husband has been out of town for the last 6 weeks on business, and it’s looking like he might be gone for the rest of the summer. I thought it was hard to cook and plan for two, but one is so much harder. I’ve had no desire to cook more than scrambled eggs and veggie burgers, but I am hoping a plan and some variety will help to make the summer go more quickly. I am trying some new recipes from a book I got for Christmas (Cooking Light: Way to Cook Vegetarian). They are in no order:
~Broccoli Casserole (I’m gonna throw in some tofu I have leftover in the fridge as well), roasted brussel sprouts, salad
~Mexican Casserole (leaving out the fake meat and doubling the beans), fresh corn on the cob, salad
~Lentil & Edamame Stew, Salad, bread of some kind

My in-laws will be here on Monday and staying thru Sunday. It is way to hot for me to try to impress my mother in law with my cooking skills. I donât want to be in a hot kitchen so here is my plan for their visit:
MondayâSub sandwiches with lots of veggies, fruit salad, cheeseball and crackers
TuesdayâOut to eat at our favorite seafood place
WednesdayâToo hot to grill outside. Ribs in the crockpot, baked beans in the smaller crockpot, cole slaw, corn o the cob. Strawberry shortcakes for dessert
ThursdayâTeriyaki Chicken in the crockpot, rice, green beans and lemon lush
Fridayâ Baked potato soup with mexican cornbread then go out for ice cream
SaturdayâRoast with potatoes, carrots and onions in the crock pot, some whole wheat honey bread in the bread machine, apple pie from the bakery and I will make some wipped cream.
Sundayâ the in laws will be gone by dinner time so we will just eat all of the leftovers from the week
