Week 285 Menu

We made Grammy’s blueberry muffins this weekend. Yay for blueberry season, muffins galore!

So, this week’s menu has a lot of repeats from last week. I ended up being super busy with work last week, so, yeah, I never made it to the store except to grab stuff for the Fourth. Those weeks happen, I suppose!

– Homemade Macaroni and Cheese (Anna’s request”¦will be using this Martha Stewart recipe, but there are a bunch of reader-submitted recipes here if you want to browse through them)

  1. I’ve been on a smoothie tear lately – so we’ll probably add them to several dinners. Mangoes, bananas, and strawberries (and even a little spinach….bwahaha!)! I also have a couple days off work so I plan to cook up a storm to fill up the freezer again! I have a very ambitious plan……

    Sunday: Eli’s Asian salmon and rice (the three-year old’s request!)
    Monday: Roasted whole chicken with cranberry sauce and roasted zucchini
    Tuesday: Homemade BBQ chicken pizza
    Wednesday: Dinner at church
    Thursday: BBQ Thanksgiving Dinner wraps (I fell in love with the cranberry/BBQ sauce combo!)
    Friday: Grandparents in town! Steak and roasted potatoes
    Saturday: Out with Babas?

    R: TBA. I haven’t thought this far ahead in the week.

    S: We’re heading southbound to friends in Pennsylvania on the first leg of our annual trip. We used to go to North Carolina’s Outer Banks, but a group of carsick children means that we have to shorten up to Rehoboth Beach, Del. Dinner will likely be something grilled or pizza.

    This is a short week for us, we’re off to my SIL’s wedding reception and then off to Grandma’s in Washington, I still have to come up with some freezer meals for my hubbs while the little guy and I are gone all next week… Any ideas?
    Sunday: Salmon, Veggies
    Monday: Moroccan Beef Skewers, Couscous
    Tuesday: Latin Crock Pot Chicken
    Wednesday: Slow Cooker Meatloaf
    Thursday: Hopefully Sushi since we live in a TINY town and that doesn’t exist in NE MT.
    Friday: Family dinner out
    Saturday: At Grandma’s
    Sunday: At Grandma’s!

    It’s eat out of the pantry week. We have lots of food and great CSA bags this week: this weeks bag: patty pan squash, zucchini, heirloom tomatoes, steak, 1 gallon milk, 8 grain bread, cantaloupe, and blackberries

    We always have cut up fruit and veggies to eat for snacks, and add to the meals.

    sun: stroganoff w. noodles and green beans (for me everything but the meat part of stroganoff)

    mon: black bean and corn burritos, spanish rice, and beans

    tues: 1 meal 2 ways: Burgers for the girls, made into salsibury steak for hubby, Potatoes(roasted), veggies. (for me: leftover black bean and corn burritos.)

    wed: spaghetti, garlic toast, roasted zucchini

    thurs: red beans and rice, cornbread

    fri: meatball sub (both regular and veggie “meatballs”), chips, veggies and dip

    sat: Pizza and Salad

    First off, heres the recipe I use for chicken marsala: . It’s amazing and I’ll be making it tonight. The recipe is even better when I add a tiny splash of cream just before it’s done.

    Sunday: chicken marsala over spaghetti
    Monday: Chipotle
    Tuesday: pasta salad with olive oil, garlic, cherry tomatoes, and basil
    Wednesday: grilled filet mignon, salad
    Thursday: breakfast for dinner (mini waffles, berries, nutella)
    Friday: Sliders and toppings, pickles
    Saturday: out

    Baking: blueberry muffins (thanks for the recipe) and funfetti cupcakes with pink icing for a camp bakesale

    I am having total menu block lately- I blame the heat. It was a struggle to come up with this week’s menu.

    Sunday- leftovers
    Monday- grilled salmon and grilled asparagus
    Tuesday- turkey burgers, corn on the cob, 3 bean salad
    Wednesday- summer spaghetti (grilled tomatoes and onions tossed with pasta, basil and some olive oil)
    Thursday- grilled sandwiches and salad
    Friday- out
    Saturday- out

      I am so there with you Meg ”” I had a plan last week, but I think it changed every day and I ended up running to the store too many times last week. It’s all the heat’s fault!

    We moved two weeks ago and I’m just now feeling back up to making dinner every night. I’m having to completely revamp my cooking style/menus since its full-blown summer here in SoCal but it was still basically winter when we left the Pacific Northwest. Excited to try out some new summer recipes this week.

    Monday ~ Soba Noodles with Sweet Ginger Scallion sauce from Simply Reem), tofu and veggies (trying out meatless Mondays)

    Tuesday ~ Turkey burgers, grilled corn, green beans or tomato/mozzarella salad (we’ll also grill the corn and chicken for the BBQ Chicken salad we’ll eat later in the week)

    Wednesday ~ BBQ Chicken Salad (loosely adapted from The Cheesecake Factory )

    Thursday ~ Almond crusted Tilapia (from Taste for Adventure), zucchini and onions. couscous

    Friday ~ Grilled Cilantro-Lime Chicken (pinterest), quinoa, something green

    Saturday ~ Grilled chicken-apple sausages, crunchy parmesan pasta (found through DailyBuzzMoms), broccoli

    Sunday ~ family date night out

    One week before vacation and my husband will be working (flying two nights) and then going on a motorcycle trip, so the kids and I will probably be eating up what we’ve got and going out.

    Wednesday: Crock-pot french dip sandwiches
    Thursday: Out, maybe Smashburger

    The heat made it difficult to stick to my menu last week but since there’s cooler temps, I hope this week will be better:

    Sunday: Homemade turkey sausage and ricotta ravioli with homemade sauce, salads and pears.
    Monday: Spaghetti and turkey meatballs per father-in-law’s request for his birthday. Salads and garlic bread. Pineapple upside down cake for dessert (I’m not fond of it, but the things we do for those we love).
    Tuesday: Leftovers.
    Wednesday: Grilled veggies (zucchini, yellow squash, portabellos, red peppers) with couscous.
    Thursday: Crispy potato tacos with black beans and rice. Probably broccoli too.
    Friday: Calzones with a chopped veggie salad.
    Saturday: Hopefully family in town so we’ll play it by ear.

    My husband and I are trying to eat more veggies, so I put our favorites in, even if they don’t really seem to “go” with the entree.

    Sunday- Corn dog muffins with leftover July 4th hot dogs
    Monday- Chicken and Sausage Jambalaya with Rice and Sauteed Zucchini
    Tuesday- BBQ Meatballs in the crock pot, white rice and steamed broccoli
    Wednesday- out for something quick (we have meetings most of the night)
    Thursday- Grilled Hawaiian chicken with bowties, grilled pineapple and grilled zucchini
    Friday- pizza
    Saturday- cookout at a friend’s house

    Sunday lunch: Cafe 7 (eat out)
    Sunday evening: Broiled all beef hot dogs, Skinnytaste macaroni and cheese and broccoli casserole (prepared beforehand)

    Monday: Skinnytaste Crockpot Pork Carnitas (this is an OMG! recipe) tacos with fresh toppings, fruit salad, chips and homemade garden salsa, leftover casserole

    Tuesday: Verde pork enchiladas (from the carnitas leftovers), latin rice, watermelon

    Wednesday: Skinnytaste Spaghetti and Meatball soup, salad, broiled ciabatta bread

    Thursday: if there’s still pork leftover, I’ll make pork and bean burritos with fajita veggies. If there’s not, I’ll do grilled chicken fajitas with veggies and black beans.

    Friday breakfast: Crescent Roll Breakfast Ring (every Friday, the guys that my husband works with take turns bringing breakfast… it’s his turn!)
    Friday: probably out, depends on how much cash we have left at the end of the week! 🙂

    Snacks: Healthy Chocolate PB Fudge, baggies of pan-popped popcorn, celery with PB, fresh fruit

    Just now getting around to posting this week’s menu. Our air conditioning went out yesterday, which left us all in a tizzy. I couldn’t bear to think about cooking! 🙂 Fortunately, we’re back up and running today!

    I DO have a chicken marsala recipe I love, I learned it at a cooking class at Stonewall Kitchen, from Chef Bill Collins. It’s got a bit of pumpkin in the sauce though, so I tend to cook it more in the fall. If you want it though, i’d be happy to dig it out & send it along.

    Ok so I came across this site while looking for some inspiration for some meals this week, and there are some solid ideas, and some great reminders of forgotten favorites (like Salisbury steak thank you whoever you were lol) and I thought I’d comment because you were looking for a good Marsala recipe (Italian food is a bit of a specialty for me) now I have seen that several people have posted links to some solid Marsala recipes so you have your hands full trying those (mine would be better but some of these others are a solid starting recipe for Marsala) so I thought I’d post you up something original and one of my all time favorite recipes that still has the Marsala sweetness and depth of flavor while still being something completely different. So here you go…honestly worth a shot.

    First off, a super simple recipe for fresh Alfredo for a sauce base.

    1pint of heavy cream
    1/2 stick of butter
    6 oz block of fresh parmasan cheese (freshly grated)

    Stir all ingredients together in a small saucepan over medium low heat until butter melts and everything comes together salt and pepper to taste (should taste like liquid parmesan cheese more or less)

    Ok with that out of the way…

    Boneless skinless chicken breast cut into cubes rubbed with salt, pepper, and oregano, cooked in a sautee pan with olive oil. Then remove and set aside

    For each plate follow these steps…

    Over med/high heat in a large sautee pan add 1tbsp of olive oil, half of a breast of chicken (previously prepared) 1/8 c diced white onion, 1 tbsp fresh chopped garlic, 1/4c sliced button mushrooms…sautee until onions become translucent and mushrooms soften at that point add 1/2-3/4 cup of Marsala wine (may briefly flare up while the alcohol burns off) simmer until liquid reduces by about half. Stir in 3/4 cup of your Alfredo base sauce and add in 2tbsp of fresh chopped basil. Toss with your cooked pasta of choice (I prefer fettuccine but anything is fine) simmer until sauce is desired thickness…season with salt and pepper to taste.
