I’ve been on a smoothie tear lately – so we’ll probably add them to several dinners. Mangoes, bananas, and strawberries (and even a little spinach….bwahaha!)! I also have a couple days off work so I plan to cook up a storm to fill up the freezer again! I have a very ambitious plan……

I always keep meatballs, chicken pot pie, stuffed shells, pizza dough, mac and cheese, and enchiladas frozen in 2-serving portions for just such occasions!
It’s eat out of the pantry week. We have lots of food and great CSA bags this week: this weeks bag: patty pan squash, zucchini, heirloom tomatoes, steak, 1 gallon milk, 8 grain bread, cantaloupe, and blackberries
We always have cut up fruit and veggies to eat for snacks, and add to the meals.
sun: stroganoff w. noodles and green beans (for me everything but the meat part of stroganoff)
mon: black bean and corn burritos, spanish rice, and beans
tues: 1 meal 2 ways: Burgers for the girls, made into salsibury steak for hubby, Potatoes(roasted), veggies. (for me: leftover black bean and corn burritos.)
wed: spaghetti, garlic toast, roasted zucchini
thurs: red beans and rice, cornbread
fri: meatball sub (both regular and veggie “meatballs”), chips, veggies and dip

We moved two weeks ago and I’m just now feeling back up to making dinner every night. I’m having to completely revamp my cooking style/menus since its full-blown summer here in SoCal but it was still basically winter when we left the Pacific Northwest. Excited to try out some new summer recipes this week.

Thursday: if there’s still pork leftover, I’ll make pork and bean burritos with fajita veggies. If there’s not, I’ll do grilled chicken fajitas with veggies and black beans.
Friday breakfast: Crescent Roll Breakfast Ring (every Friday, the guys that my husband works with take turns bringing breakfast… it’s his turn!)

I DO have a chicken marsala recipe I love, I learned it at a cooking class at Stonewall Kitchen, from Chef Bill Collins. It’s got a bit of pumpkin in the sauce though, so I tend to cook it more in the fall. If you want it though, i’d be happy to dig it out & send it along.

Ok so I came across this site while looking for some inspiration for some meals this week, and there are some solid ideas, and some great reminders of forgotten favorites (like Salisbury steak thank you whoever you were lol) and I thought I’d comment because you were looking for a good Marsala recipe (Italian food is a bit of a specialty for me) now I have seen that several people have posted links to some solid Marsala recipes so you have your hands full trying those (mine would be better but some of these others are a solid starting recipe for Marsala) so I thought I’d post you up something original and one of my all time favorite recipes that still has the Marsala sweetness and depth of flavor while still being something completely different. So here you go…honestly worth a shot.
First off, a super simple recipe for fresh Alfredo for a sauce base.
1pint of heavy cream
1/2 stick of butter
6 oz block of fresh parmasan cheese (freshly grated)
Stir all ingredients together in a small saucepan over medium low heat until butter melts and everything comes together salt and pepper to taste (should taste like liquid parmesan cheese more or less)
Ok with that out of the way…
Boneless skinless chicken breast cut into cubes rubbed with salt, pepper, and oregano, cooked in a sautee pan with olive oil. Then remove and set aside
For each plate follow these steps…
Over med/high heat in a large sautee pan add 1tbsp of olive oil, half of a breast of chicken (previously prepared) 1/8 c diced white onion, 1 tbsp fresh chopped garlic, 1/4c sliced button mushrooms…sautee until onions become translucent and mushrooms soften at that point add 1/2-3/4 cup of Marsala wine (may briefly flare up while the alcohol burns off) simmer until liquid reduces by about half. Stir in 3/4 cup of your Alfredo base sauce and add in 2tbsp of fresh chopped basil. Toss with your cooked pasta of choice (I prefer fettuccine but anything is fine) simmer until sauce is desired thickness…season with salt and pepper to taste.
