Week 296 Menu

Yesterday we hosted Owen’s 1st birthday party! It was so much fun and he was in heaven, crawling around in the dirt and eating equal parts cake and sand. I cannot believe he is 1 already, but at the same time it seems about 100 years since he was born. He and I share the same birthday this week…he truly was the best birthday present I could have ever dreamed of!

On to the menu!

Chili (didn’t get to it last week)

– Honestly, probably eating out again because I’ll be packing up for our trip the next day! Or maybe something quick and simple like soup with grilled cheese.

– Driving to Anaheim for a quick family vacation! (More on that to come…but a quick shout out to the Anaheim Tourism Bureau for helping us plan a quick yet action-packed trip!)

As always, reading through your menus each week when I sit down to plan is such a help and inspiration! Thank you! Can’t wait to see what you all have planned this week!

    Sunday: Roasted chicken and orange-glazed carrots
    Monday: Individual frittatas with various veggies
    Tuesday: Chicken enchiladas
    Wednesday: Burgers on the grill with homemade buns
    Thursday: Big salads with chicken breast, craisins and balsamic
    Friday: Homemade calzones using my favorite pizza dough
    Saturday: Out

    Additional goodies:
    – Chicken stock to be made from the Sunday chicken carcass
    Oatmeal bars for breakfast
    – White bean hummus for some healthy snacking!
    – More adventures in baby food production (we’ve gotten the green light for sweet potatoes, squash & bananas so far!); peas are up next!

    Sunday: The cilantro sour cream enchiladas you posted a few weeks ago with homemade tortillas (just recently made them for the first time and I’m amazed at how easy they are). With calabacitas.
    Monday: Tortellini in a pumpkin-sage sauce with green & wax beans and fresh peaches.
    Tuesday: Mushroom and spinach quiche with side salads and pears.
    Wednesday: Leftovers.
    Thursday: Turkey burgers with roasted broccoli and sweet potato fries.
    Friday: Turkey chili with cornbread before the football game.
    Saturday: Leftover chili for lunch and dinner at the college football game.

    Happy Birthday to you and Owen! It is my daughter’s 10 year birthday Monday. We went out to dinner tonite to celebrate with Dad because he will be away for work this week.

    Monday: 10 yr. old birthday – Chicken Parmesan with angel hair pasta, crusty italian bread and salad, Chocolate cake with peanut butter cups in the middle for filling with chocolate frosting
    Tuesday: Ham steaks with mashed potatoes and green beans
    Wednesday: Leftovers from Monday night
    Thursday: Turkey Burgers with salad
    Friday: Pizza Party at Oasis for 10 year old (end of week long celebration… Love my daughter!!))

  14. If you’re heading to Disneyland, have fun. I hope it won’t be as hot for you as it was today for us. We might be going back later this week with the Grandparents. If your hotel has a pool, bring swimsuits! Also, if hot in the park, there are fountains/sprinklers in Bugs Land at California Adventure to get wet and play in (and all the indoor rides are nice and cool….can you tell we boiled today?).

    S – (last night) Made a roast. YES the baby only ate the chicken and potatoes, but the boyfriend loved it and even did the dishes afterwards!
    M – Creamy Pig. Diced pork, smokey bacon and lots of mushrooms in a dry cider and cream reduction, served with rice. Yuuuuummmmmmm!
    T – Boyf is working so Squash and Chickpea casserole for baby and me.
    W – Cheats dinner, frozen pie and chips because I’m wokring late.
    T – Homemade chicken nuggets (my second attempt), potato wedges and corn on the cob.
    F – Spag’ and homemade meatballs (just because it’s sooooo funny to watch the baby slurp long wiggly bits of spaghetti!)
    S – Chilli. They boyf’s turn to make dinner!

    Happy Birthday! What a beautiful photo of you and Owen! My menu’s a bit potato heavy this week since I got a huge bag-full in our veggie box.

    Mon: Breakfast for dinner
    Tue: Gnocchi with duck ragu, salad
    Wed: Cabbage, bacon and potato bake, runner beans
    Thur: Baked potatoes with goat’s cheese and pesto
    Fri: Homemade chicken nuggets, fries, corn
    Sat: Harissa lamb, hummus, pita breads and confetti salad.
    Sun: Dinner at mum’s, taking chestnut and whisky cake.

  24. Happy birthday to you both! And Yay for fellow Libras!
    We are just back from our family vacation to the OBX and I am totally unthrilled at being back to work/daily grind so we are keeping it easy this week. All tried-but-true recipes so I won’t have to deal with complaints from the little ones either. Looking forward to trying out some new recipes in a couple of weeks when I’m back in the swing of things!

    Monday: Greek shrimp scampi with linguine
    Tuesday: 20 minute skinny sesame chicken with roasted broccoli and rice
    Wednesday: Light chicken piccata with roasted cauliflower
    Thursday: we are out of the house so who knows!
    Friday: Slow Cooker moussaka with rice

    Mon – Tilapia, Brown Rice and Spinach foil pockets (my boys who are 5 & 7 loved to help make these)
    Tues – Chicken, Fusilli, Peppers & Onions in Alfredo Sauce w/Caesar Salad
    Wed – Chicken, Carrot and Onion simmer w/Brown rice – side of steamed Broccoli & Cauliflower
    Thurs – Pork Quesadillas on the BBQ w/spanish rice
    Fri – Rice Flice (ground beef, spaghetti sauce, rice and peas served on a bed of lettuce – it’s from Grade 10 home economics class and still a fave!)
    Sat – eat out at the Markham Fair (it won’t be healthy)
    Sun – at my Dad’s for Sunday dinner

    Tuesday – salmon with a dijon, brown sugar glaze, salad, and leftover pink potato salad (beets added to it)

    Thursday – steak, mashed cauliflower “faux-mashed potatos”, and green beans
    Fri, Sat, Sun working but hopefully eating well…
