Week 320 Menu

I’m having a hard time planning a week of dinners with a tres leches cake sitting in my fridge…I can’t wait for dessert tonight!

Focus, Jane. Focus.

– Pork chops (Last week’s pork chop experiment has been moved to this week, due to having dinner at a friend’s house…so, still don’t know how the new technique will work out. Will let you know!)
– Roasted Fingerling Potatoes
– Salad

– Grilled Chicken Citrus Salad (see comment #10 on this post for recipe)

Homemade pizza

– Leftovers

Green Noodles (aka No. 3)

– Eat out

– St. Patrick’s Day Fun! Corned Beef Sandwiches with various other foods that have been turned green still tbd!

  1. It’s just me and the kids this week. So, I’m definitely looking for ease of preparation (more than usual!). And, I’ve geared the dishes more to my tastes, thank-you-very-much!

    Sunday: General Tso’s Pork, fried rice quinoa and crispy carrot fries
    Monday: Chicken, broccoli and quinoa casserole (I LOVE this casserole!!! I could eat it several times a day – even after it’s de-dairyed)
    Tuesday: Individual pizzas with homemade crust
    Wednesday: Pork, chick pea and kale enchiladas
    Thursday: Chicken Pot Pie
    Friday: Leftovers
    Saturday: Pete’s baptism!

    Oh, and thanks for the St. Pat’s reminder for next weekend! I always forget until the last minute!

    Last week the new recipes weren’t so hot, so this week we’re having some known faves.

    Sun. Chicken broccoli rice bake
    Mon. Visiting nana
    Tues. Turkey & stuffing pie (from the freezer, I work late)
    Wed. Pork tamale casserole (from cooking light)
    Thu. American chop suey (I love this stuff, dh hates it and he won’t be home for dinner 🙂
    Fri. Homemade pizza or leftovers (I work late)

    Nice easy week of guaranteed hits for us. Plus my girl and I will try Baked Blueberry Coconut Oatmeal & No Bake Granola Bars (both from two peas and their pod)

      What I grew up with as American Chop Suey is basically ground beef cooked with onion then simmered for 20 minutes or so with a smsll can of tomato sauce and a 15oz can of diced italian herb tomatoes. Then add in cooked macaroni and optional corn and eat once warmed through, or if you’re like me cook it another 10 minutes or so till the macaroni are really soft and saturated with the sauce. It’s comfort food straight out of childhood for me.

      The coconut blueberry oatmeal we just tried and it was great. The bars didn’t work as well for us but we okay. Both are from this website

    Tuesday: pretzel chicken with honey mustard sauce (found this on pinterest, first time trying this recipe)
    Wednesday: burgers and fries
    Thursday: baked cod
    Friday: French toast and bacon
    Saturday: Honey garlic chicken (another pinterest recipe-tried, tested, and approved by the family)

    Last week was a disaster for dinner all week. Just got back from whole foods and can’t wait to eat all week!
    Sunday sandwiches pasta salad
    Monday chicken casear salad
    Tues tacos rice beans
    Wed leftover taco meat on baked potatoes with corn

    Thur chicken apple sausage over pasta with broccoli
    Friday leftovers!
    Sat new oven arrives! Prob homemade pizza

    Sun: beef stew w/ carrots & potatoes, mushrooms, baguette
    Mon: Leftover beef stew
    Tues: Balsamic glazed pork chops & green beans
    Weds: Fried rice w/ veggies
    Thurs: Pasta w/ sauce from freezer
    Fri: Leftovers or frozen pizza
    Sat: St Pat party at friends – they are making a Guinness chocolate cake!

  9. Sounds like a great menu this week. The cake looks yummy I’ve never had that type of cake.

    This week my youngest (Giggle Girl) is turning 7 and she has her 1st grade musical. But all this is up in the air since she has a fever. Thinking its that weird fever flu thing that is going around.

    Sun: Chicken, Mash Potatoes, and veggie

    Mon: Spaghetti, roasted green beans and ooey gooey bread

    Tues: maybe out for a pre birthday dinner and pre school musical dinner but giggle girl is sick right now so that is up in the air???? if home who knows 🙂

    Wed: Happy 7th Birthday to my sweet little Giggle Girl: she requested grilled cheese, chips, cupcakes and adding tomato soup.

    Thurs: Red Beans and Quinoa with cornbread muffins

    Fri: Baked Potatoes and Salad

    Sat: Calzones or Individual Pizzas

    Sun: Potato Soup and Irish Soda Bread

    That tres leches cake looks AMAZING! I am definitely making that sometime this week (maybe Thursday for Friday’s dinner?).

    Sunday: Walleye and tilapia served with zucchini and cauliflower “mac” and cheese.
    Monday: French bread pizza with salads.
    Tuesday: Ham or turkey and spinach paninis with roasted broccoli and butternut squash.
    Friday: Fish fry with the family.
    Saturday: Date night at a restaurant I’ve been dying to try ”” so excited!

      Thursday: Coconut chicken and tofu with gingered carrots and snow peas. Served with naan.

    It’s going to be a busy week this week! I have volunteered to run our schools book fair, so it will be like working full time- except I won’t get paid!
    Sunday- we had a couples shower so we munched all day and I didn’t cook
    Monday- chicken tacos and beans
    Tuesday- finally going to make the flank steak I’ve had in my freezer, probably with some smothered potatoes
    Wednesday- Parmesan/ranch chicken bake
    Thursday- leftovers
    Friday- fish fry at school
    Saturday- meatballs and spaghetti

    MON-Beef Stroganoff,Noodles,petite green beans with cranberries and toasted slivered almonds.
    TUES-Tilapia w/dill sauce,roasted baby red potatoes,broccoli.
    WED-Beef Stew w/carrots,celery and peas over rice.
    THURS-Chicken fried rice with snap peas,red peppers and baby corn.
    FRI-Pizza Pasta Casserole, green salad.
    SAT-Leftovers or whatever, my 12 hour workday!

    I am glad to be back at menu planning. Figure out what we had and wanted was started to drive me nuts. A roommate heads back to work this week as well.
    In no set order, my plans for this week.
    Ravioli bake
    Tomato Steak
    Turkey Pot Pie
    Shrimp Stir fry (we had this on Sunday)
    Leftovers- 2x
    I would love to try that cake. Looks very Yummy.

    In no particular order:

    Hubby made beef stroganoff tonight (I ate Cheerios since I can’t stand that stuff, but he and the kids love it and I didn’t have to cook, so win-win)
    Baked Potato Bar
    Chicken Alfredo
    French Toast w/homemade syrup
    Taco Soup (it’s really a bean soup with taco and ranch seasonings – so easy too!)
    Parmesan Chicken
    Grilled Chicken Salad
    Possibly a hot dogs on the grill type of night

    Also going to try the biscuit recipe you posted last week, as well as a recipe for some lemon muffins.

    Mon: Bratwurst, Pioneer Woman potatoes broccoli
    Tuesday: Hubby’s birthday Thai Chicken curry, couscous, Naan bread with hummus, veggie and Pecan Pie with ice cream
    Wed: Leftover Pot Pie
    Thurs: Chili and cornbread
    Fri-Sun, no hubby…Party for me, ha ha. Actually I do have two parties to go to.

    Friday: Pizza night, salad

    Saturday: Red beans and rice, vegies

    Your site is always so very helpful for inspiration for dinner and other recipes too. I am planning to try out the green noodles for St. Patty’s Day. I think my kids will love them!
    Monday-Wheatberry chili and cornbread
    Tuesday-Apple Cinnamon Baked Oatmeal (Two Peas and Their Pod) with eggs, sausage and toast
    Wednesday-Soup, salad and sandwich (not sure what kind of soups or sandwiches yet!)
    Thursday-Taco salad
    Friday-English muffin pizzas with salad and fruit
    Sunday-Green noddles, green beans and garlic bread w/some type of mint green ice cream for dessert!

    • Yes. i am in Ruston, Louisiana, an hour east of Shreveport. I was born in New Orleans, though, and grew up just north of Covington! 🙂

    Sunday – we ate at my daughter’s They made chicken enchiladas (very good)
    Monday – I made a crockpot pot roast and a pear and blue cheese salad
    Tuesday. Cauliflower pizza. It’s a hit!
    Wednesday. Making steak for my son before he returns to university
    Thursday. Salmon with fries and asparagus
    Friday out
    Saturday. Leftovers?

    Mon – Goat Cheese/Caramelized Onion/Spinach quesadillas <– oh my heavens this was GOOD! I added some leftover chicken to them as well.

    Wed – sloppy joes, baked fries
    Thurs – orange chicken & broccoli over rice
    Fri – homemade pizza
