Week 325 Menu

After two weeks of Spring Break fun (Anna one week, Cate the next) and throwing caution (or at least responsibility) to the wind, it’s back to real life this week. Perhaps that means I’ll actually make more than one or two items on the menu plan! But, really, who cares about meal plans when there are zoos to be visited, beaches to play on, and flower fields to gaze upon?

– Chicken and Bok Choy Stir Fry (from Real Simple’s Easy, Delicious Meals)
– Rice and dumplings

– Island Pork with Sticky Coconut Rice
– Green Veggie

– White Chicken Chili (from America’s Test Kitchen Quick Family Cookbook)

– Leftovers

– Breakfast for dinner

– Takeout

– Roast chicken with mashed potatoes and glazed carrots

Crossing fingers I actually cook this week! 😉 As usual, I can’t wait to see what your menu plan is for the week! Remember, we don’t care how fancy or un-fancy your menu is, and feel free to share any day of the week!

    I’m back to a 5 day work week this week (got a new job, yay!) after a couple years of having Mondays off… So my meal planning is even more important now! I’ll be getting home a little later than normal, so having a plan really makes it much easier to prepare some ahead of time.

    Sat – chicken soup in the crock (because I got my preschoolers death cold)
    Sun – orange chicken with pea pods over rice
    Mon – quiche Lorraine (make ahead) with green salad
    Tues – kabobs on the grill, potatoes
    Wed – spinach tortelloni w/ vegs
    Thurs – burgers, broccoli salad
    Fri – homemade pizza

    Tomorrow is shopping day and this is what I’m thinking

    Sun (today): Spaghetti (wolfgang pucks sauce was on sale it is so yummy wish it was always the sale price) , whole wheat garlic bread(homemade) and roasted broccoli.

    Mon: Pineapple Fried Rice and egg rolls

    Tues: For hubby: Salmon, Garlicky Kale, and Wild Rice. For Me: Garlicky Kale, Wild Rice and 3 beans (red, chickpea, and black) it sounds weird but taste so good mixed together. For the Girls: Homemade Pizza Lunchables: whole wheat sandwich thin, turkey pepperoni, shred mozz.

    Wed: Burritos, Beans, and Spanish Rice

    Thurs: Homemade Calzones and Salad

    Fri: Giant Bake Sweet Potatoes and Salad

    Sat: Sandwiches, Chips, Veggies and Dip

    Fri/ Sat: LAfor the weekend. We’re taking our 3yr old for “A Day with Thomas.” He is obsessed! And I can’t wait to see his face when he first sees the trains!

    S: In DC. Dinner at Founding Farmers with a friend

  6. We had to put our dog down yesterday 🙁 so I’m not much in the mood to cook this week. Everything is going to be from the freezer or take out.

    Sunday-Take Out

    Monday-Friday-Freezer Food in no particular order or predetermined use…I have Orange Chicken, Manicotti, Pizza, Chili, and Meatballs. Probably do rice and green beans with the chicken, salad with the manicotti, and Cornbread with the chili.

    We ate at Phil’s yesterday. I thought of you, Jane! 🙂 My 4 year old requested it. She’ll eat a whole rib and corn on the cob and a side of fries.

      So sorry for your loss… We lost our dachshund not too long ago. It’s like a tiny piece of your heart is lost too. Hope you can focus on the wonderful times you had with your fur baby. Big dog hugs to you.

    • So sorry about your dog! 🙁 Our sweet cat, Kali or Meow Meow to our 5 yr old, is quite old & won’t be with us much longer. I’m dreading the day she’s gone, especially for my 5 yr old. 🙁

  7. Last week’s menu was a big, fat goose egg. We started out with a (horrible!!) stomach bug and never really got our appetites back until the end of the week. A lot of ginger ale, rice cakes and brown rice for us. We’re all ready for the some good food this week!

    Sunday: Grilled shrimp, carrot fries, “fried” quinoa
    Monday: Burgers on the grill
    Tuesday: Asian lettuce cups
    Wednesday: Homemade, baked chicken nuggets
    Thursday: Leftovers.
    Friday: Pasta with pesto (from freezer) and asparagus
    Saturday: Out

    Chicken soup in the crockpot – recipe, please?

    Sunday – turkey breast, au gratin potatoes, veggies
    Monday – Ravioli’s, texas toast
    Tuesday – Pork Chops, noodles, veggie
    Wednesday – out
    Thursday – Grilled Chicken Breast …sandwiches, chips
    Friday – birthday dinner at friends house
    Saturday – pizza

      I was super sick, so I sort of winged it. Tossed in 2 wings, 2 thighs, 2 drumsticks. 6 c. Chicken stock. 1 c. Water. 2 stalks celery, chopped. 1/2 lg onion, chopped. 2 carrots, chopped. Lots of seasoning! Marjoram, thyme, salt, pepper. 2 cloves garlic (for my cold!) bay leaf. Parsley if you have it. Set on low for 6 hrs. Scoop chicken out, debone. Remove bay leaf. Put chicken back in. Add cooked noodles if you want (we skipped noodles, had fresh bread instead) Season more if it needs it. I have zero sense of smell or taste right now, so use your best judgement! Tip: remove skin from chicken first.

    I saw the White Chicken Chili recipe in the Test Kitchen cookbook and wanted to try it! I would be curious on how it turned out!

    Here is my menu for the week:
    Monday: Bowtie Salmon Pasta Toss, asparagus, bread
    Tuesday: Root Beer Pulled Pork, fries, fruit or veggie?
    Wednesday: Chicken Santa Fe with rice
    Thursday: Meatloaf, baked potatoes, carrots
    Friday: Pizza

    Sunday: Broiled chicken, pasta, garlic bread
    Monday: Steak teriyaki, spring rolls
    Tuesday: Salmon and asparagus, salad
    Wednesday: out or pizza
    Thursday: Burgers and oven fries
    Friday: Grilled chicken sandwiches, salad, pickles
    Saturday: Shrimp, steamed veggies

    Hopefully there will not be any sick kids this week so my menu can actually be used!

    Tuesday”” Fish Tacos and I am making Chuy’s Creamy Jalapeno Dip to put on them
    Wednesday”” My mom will be visiting so we will let her choose
    Thursday– Chimichurri Casserole
    Friday”” Corn Dogs and chips 
    Saturday”” Crawfish Boil to celebrate my SIL’s birthday. I am bringing the rest of the Chuy’s dip and maybe another appetizer like Casa Ole Green Sauce

    I don’t plan for a particular day; just plan five meals and pick what I want to make that day. I work until 6pm so what I make has to be able to be put in the oven or re-heated when people get home before me.

    Taco soup
    Salisbury steak in crockpot (didn’t make it last week)

    Tuesday: Ground lamb and pepper stew with orzo
    Wednesday: Dinner out after seeing the school musical
    Thursday: Salisbury steaks and cheesy mashed potatoes
    Friday: Pasta and sauce
    Saturday: Baked potatoes and fixings

    Monday – Vegetarian Stir Fry – First time I have been able to convince my husband for a meat free meal so we will see how it goes!
    Tuesday – Potatoes Au Gratin and Kassler (Swedish smoked ham)
    Wednesday – Something with the hunk of pork in the freezer
    Thursday – Pasta Bake
    Friday – Lamb Patty Melts

    Our late April snow is getting to be annoying! I miss looking at fields of flowers!

    Wednesday: Hubby cooks. BFD: eggs, hashbrowns, berries, toast

    Thursday: Hubby cooks. Hotdish, mixed vegies

    Saturday: Greek roast chicken, roast potatoes, carrots

    We are also battling some major crazy funky stuff! I’ve been the clean-up crew and member of “The Great Vomitting Bandits” to have 5 of 7 family members throwing up at the same time….Yikes! My stock has gone up in bleach, lysol and laundry soap! Since Tuesday and continuing….we’re fighting this beast and now I hear congestion and snuffles! So, this menu is very loose…..

    Mon- Matzoh Soup and french bread
    Tues- Chicken and Dumplings and cornbread
    Wed- Chicken and rice ( either soup or a meal, depending on wellness) PW The Bread in his words.
    Thurs- Loaded Potato soup and yeast rolls
    Fri- Hopefully…..everyone will be well and we’ll do Chinese take-out
    Sat- One of our many annual Crawfish festivals….YEAH!
    Sun- I have no Clue! I’m hoping the house will be fully recovered!

    I love the Carlsbad Flower Fields! I have great pics from there when my now-5-year-old was 2 weeks old! Great memories! 🙂

    Oh you had a fun week — I remember taking my eldest to the flower fields when she was 2yo (11 years ago – gasp!) – before there was a fence. I have some gorgeous photos from those days – thanks for the nostalgia ;o)

    I’m also dealing with a declining pet, our 18 year old cat is fading fast, and I’m not in the mood to cook or plan to cook this week.
    Glad I don’t have wee ones that NEED to be fed.

    I have some tortellini in the pantry, and some black beans in the freezer, so they will be go to’s if anyone is in the mood to eat.

  32. We’re getting our first bin of local meat and dairy delivered to our house on Friday (it’s kinda like a CSA). I am so excited!

    Grilled Gozlemes
    Couscous Salad

    Day 5:
    Spicy Orecchiette & Sausage
