Nate has been buying mangoes atΒ CostcoΒ lately and they have been so tasty, we can’t get enough. I just wish it didn’t take five minutes to cut up one mango! But, I must admit, it is worth the effort.
I am absolutely loving reading about all of your pregnancy cravings. I knew we’d get some good comments, it’s cracking me up…and making me feel much better about myself! And I can’t believe how many of us have craved McDonald’s cheeseburgers! What in the world?!
I soooo blew it on last week’s menu. I’m not even entirely sure what we ate. But it would have been yummy if I stuck to it, so I think I need to put a few of those items on for this week. I apologize for the repeats!

Thur: Picnic in the park~ veggie empanadas and fruit salad
Fri: Taco night! Grilled chicken, spanish rice, guacamole

Sunday – Farmer’s Market Summer Pasta, bread and salad, berry cobbler w/fro yo (family over for dinner).
Monday – Leftover pasta, or make a spaghetti sauce w/ leftover veggies (if we are pasta’d out I could also do a stir-fry w/ leftover veggies).

Weds – Trader Joe’s since husband works late.
Thurs – “fancy” mac n cheese (packed w/ veggies)

Ok Janers, mango cutting lesson #1
Cut off ends. then, with your paring knife, cut a grid through the meat of the mango, but not through the skin. Then, scoop that goodness out with a SPOON beginning at the edge and working your way in throughout the grid. Lovely bite-size pieces in seconds!
Now you can eat about 5xs as many mangoes in as many minutes.
my mind is blown. why have I never thought of this approach before? it’s how we cut avocados, for heaven’s sake. trying this next time!!!!
I do the same thing for avocado. π
I do this too! And when the sides are gone, I’m a usual culprit for attacking the pit with a paring knife…or my teeth! It is somewhat unfortunate that this method makes mangoes disappear so quickly!
My favorite way to cut an avocado is to cut it in half, use the blade of my knife to remove the pit, and then cut the halves in half. These avocado quarters peel quite nicely if the fruit is ripe…no wasted pieces of mush stuck inside the leathery skin!
I don’t get it, but it sounds like the way my mom does it! And my husband taught me how to cut an avocado the same way as Emily. My two favorites – wish I could have them both right now!!

Hi Bonnie! I made this last night for dinner tonight and tasted it. I really enjoyed the taste! We put in a cucumber because we’re swimming in them and used cherry tomatoes instead. I used a recipe from Cook’s Illustrated that you can find here.

We write our menu on a mini white board that’s stuck to the side of the fridge. This week my daughter says to me “didn’t we have grilled chicken last week?” The summer is like that for us, we take advantage of being able to grill when we can. Plus it’s too hot to cook inside.

This week we’re working on clearing out the freezer. Not exactly sure what we’re going to have – but it’s all going to be freezer meals. I love that there’s a week I really don’t have to plan anything – just open the fridge and pull something out to thaw! It’s a nice break from slaving away in the kitchen when it’s 100+ degrees outside.
On top of starting my second summer class this week, our oven decided to nearly catch fire after one of the heating elements shorted out. So it is totally a sandwiches, soups, and frozen Amy’s enchiladas kind of week in our house until we have more time and decide what we want to do about the oven. Blerg.
I’ve heard those frozen Amy’s enchiladas are pretty darn good…

I don’t have a menu, but I will say that I love using frozen mangoes in my smoothies. When I used them fresh I felt like the drink turned out a little pulpy and unappetizing. When they’re frozen they blend up nice and smooth and delicious. This morning it was straw-peach-mango, and I want another one now.

Those mangoes look so juicy and delicious! A good healthy pregnancy craving. My last pregnancy all I wanted was pineapple and watermelon. I could not get enough of it.
