Week 368 Menu

Hello everyone! I hope you’re all having a great weekend! Let’s just get down to business, shall we?

Only one carry-over from last week’s menu, mostly because I made our leftovers drag out for many, many nights. Amazingly the kids didn’t protest!

– Butternut squash soup
– Grilled cheese sandwiches

Easy Apricot Chicken (Owen grabbed a jar of apricot preserves at the store, which I didn’t discover until we got home. We haven’t had this recipe in ages, so going to see if the kids like it!)
– Rice and veggie

Pasta with simple cream sauce, chicken and broccoli
– Garlic bread

– Leftovers

– Eat out

– Nachos with Mexican 7-layer dip

Alrighty, your turn! Please share your menu for the week. As always, reading through your menus from last week was such a great help as I sat down this morning to plan, so, thank you!


  1. Monday- chicken and dumplings (it’s so rainy here so this will be a perfect comfort food for us)
    Tuesday- lasagna with broccoli and Caesar salad
    Wednesday- BBQ @ a friends house (hopefully the weather lets up a bit)
    Thursday- date night for Valentine’s day!
    Friday- Vavo over for dinner (eat out most likely)
    Saturday- leftovers
    Sunday- homemade fried rice and potstickers.

    I have finally gotten back into meal planning after having our baby girl in August. Now when I plan meals I try to include foods that baby girl can eat too. We are trying out baby led weaning. Wish us luck. Thank you again for your inspiration!

      that first year with baby is a doozie! 😉 welcome back to meal planning – and that’s exciting she’s starting to eat with you (although, honestly, that’s my least favorite part of parenting – feeding kids!) anyway, GOOD LUCK! 😉

  2. I’m in the midst of making my menu right now…I think I’ve got it. Junior has a bunch of appts this week (as usual) and Stinker has started t-ball, so we have practice one evening a week. Add homeschooling to the mix, and I have roughly 17 minutes to prepare dinner on any given night. Here’s the easy peasy menu:

    Sunday-Mexican Lasagna, Spanish Rice

    Monday-Beef Stroganoff

    Tuesday-Pasta w Pesto Cream Sauce, Broccoli, Bread

    Wednesday-Tomato Soup and Grilled Cheese

    Thursday-BLTs with Avocado, Baked Fries, Fruit Salad

    Friday-Heart Shaped Homemade Pizzas, Breadsticks, Salad

    My husband hates meat and fruit, thus no apricot chicken until he travels 🙂 Crazy week again here so meal planning has been my savior. I’ve already gone to the grocery even!

    Sunday: Buffalo chicken french breads ( with sweet potato fries and chopped salads.
    Monday: Ahi tuna steaks with roasted asparagus and garlic roasted fingerling potatoes.
    Tuesday: Pizza and leftovers ”” two different groups of us will eat pizza at our various events and husband will eat leftovers.
    Wednesday: Cheesy Greek-style baked quinoa (
    Thursday: Roasted potatoes, sweet potatoes, sausage and peppers.
    Friday: I was going to doing meatloaf with smashed redskins and brussel sprouts but I forgot it was valentine’s day so I may switch it up or at least add in a sweet dessert.
    Saturday: Dinner out of town!

    Monday: Creamy Chicken Spaghetti Bake and Broccoli
    Tuesday: Peanut Butter and Jelly Skillet Monkey Bread and Fresh Fruit and Scrambled Eggs
    Wednesday: Tilapia Tacos with Cilantro Cream Sauce and Avocado and Tomatoes
    Thursday: Baby Bacon Cheese Burgers with Special Sauce from Picky Palate and Tater Tots and Salad
    Friday: Green Chili Pork Tacos with Beans and Guacamole and Tomatoes
    Saturday: Seared Shrimp and Cheese Crisps and Fresh Veggies
    Sunday: Prime Rib, Yorkshire Pudding, Roasted Potatoes, and Sticky Cherry Cake from Pioneer Woman and Salad

      Hi Vicki,

      I would love to know more about the Creamy Chicken Spaghetti Bake you have on your menu and also the Cilantro Cream Sauce you are having with the Tilapia Tacos.

    • Thanks for asking! The creamy chicken spaghetti bake and the tilapia tacos were from Picky Palate’s cookbook, the spaghetti bake turned out to be more a chicken parmesan bake, chopped chicken sauteed with onion, garlic and seasonings, then add in the tomatoes, some cheese, mix in cooked spaghetti, top with lots of cheese, and bake for about 20 minutes. The cilantro cream sauce was 1/2 c sour cream, 1/2-1 t lime juice, 1/2 c cilantro chopped, salt, and tobasco sauce to taste, then mix and serve with the tacos. We all really liked both of those recipes. The spaghetti bake was different then the recipe in the cookbook

    Sat: Kitchen sink quesadillas (first time I’m making these. For a couple of years I’ve been seeing these on posted menus and I always thought it meant quesadillas made with whatever you had leftover at the end of the week”¦.like “everything but the kitchen sink quesadillas”. LOL!).

    Saturday – Broccoli cheese soup, grilled cheese sandwiches

    monday – leftover soup and whatever else is leftover in the fridge
    tuesday- goat cheese stuffed chicken breast, asparagus and baked potatoes
    wednesday – fend night I’m out
    thursday – salmon with salad and baked fries
    friday – special valentine’s day dinner! rack of lamb, salad, cheese fondue, dessert!
    saturday – pizza

    Creamy Chicken, Quinoa and Broccoli Casserole

    Sweet and Sour Chicken and Rice
    Broccoli Cheese Soup and Buns w/ Meat and Cheese
    French Toast, Cinnamon Muffins, Bacon and Fruit Salad (Valentine’s Day morning)

    Your Apricot Chicken sounds great – Might have to try it next week! Have a good one 🙂

    We are STILL eating out of our freezer. I can’t believe the food has lasted this long. Just goes to show that we had more in there than I thought and that it really needed to be used up. Turns out to have been a great time to do this, as there haven’t been any good sales these past few weeks.

    Starting Week #3 on the road. I’ve prepped all the meals for husband/kids so they don’t starve. 🙂 One week left until we finally move!

    Sunday: Collard greens, black-eyed peas and cornbread
    Monday: Meatball subs
    Tuesday: Chicken breast with sweet potato fries
    Wednesday: Pasta with meatballs
    Thursday: Homemade pizzas
    Friday: Leftovers
    Saturday: Date night!!!

    Monday- Alfredo pasta with sauteed spinach (and rolls)
    Tuesday- Pork Chops with carrots and potatoes

    Thursday- Eggs/bacon/waffles/hashbrowns/etc
    Friday-Probably out. There’s a good crepe place right around the corner we tried last weekend.

    Monday – Burritos stuffed with taco seasoned beef, Mexican flavored rice with mexicorn, salsa, sour cream, and cheese lots of cheese
    Tuesday – Chicken Alfredo, peas, and garlic bread
    Wednesday – Chunky Chili with pigs in a blanket to dip and shredded cheese
    Thursday – Italian breaded pork chops, garlic buttered rice and green beans
    Friday – Happy Valentine’s Day to me, being taken out to dinner by my son and his fiancé
