Week 786 Weekly Dinner Menu

Happy Belated St. Patrick’s Day! I tried cooking corned beef in the slow cooker for the first time and…after 8 hours on low it was still nowhere near done. Apparently for corned beef you should cook it on HIGH for 8 hours. That is a resilient cut of meat. Anyway, I think I’ll just go back to boiling it in the future. As for las night, we ended up with two hour delay for dinner but filled our time with games, fun and Guinness. It was great!

MONDAY:

  • Roasted chicken and root vegetables

TUESDAY:

  • Bistro chicken with mashed potatoes (making double for Tuesday and Wednesday dinners)

WEDNESDAY:

THURSDAY:

  • Eat out after Owen’s middle school orchestra concert

FRIDAY:

SATURDAY:

  • Leftovers

SUNDAY:

  • Homemade hamburgers (didn’t get to this one last week)

    Sun: Corned beef and cabbage, mashed potatoes
    Mon: Oven-fried chicken wings, sautéed snow peas with garlic
    Tues: Cabbage roll casserole
    Wed: leftovers
    Thurs: leftovers

    Sat: Japanese curry over rice, grilled shishito peppers

    We’re having reuben casserole and lots of grilled cheese varieties this week. Yeah for comfort food!

    I did our corned beef in an instant pot for the first time this year. It was fork tender in 90 minutes while DH and strolled the local botanic gardens. You can do it in a crock pot, but put it on high.

    — grilled chicken, asparagus
    — reuben sandwiches, salad
    — out ?? (have a visitation and memorial service that evening, not sure what the plan is)
